So I’ve been hit with a little bit of the funk. I think my immune system was down from traveling -and I somehow managed to stay healthy while Tom and Liv were sick a couple of weeks ago- and it finally got me. I woke up yesterday feeling like I had a golf ball in my throat, and had two classes to teach. During the classes I felt GREAT (from the sweat + endorphins), but have been laying low over here for the most part. Nothing like being sick to unleash the inner hypochondriac. During spin, I was thinking, “OMG a red blur is clouding my vision!”

It was my mic ball (the red fuzzy ball covering the end of the microphone) in my peripheral vision. Hahahaha.

Lately, I’ve been enjoying lots of green juice (so much ginger, it burns on the way down)

Eggs in a Basket Paleo and Whole 30 Style

This is a new favorite breakfast, and it was introduced to me by Meg! She made it this weekend, it was everything I could wish for.

Even though I have quite a few beloved breakfast recipes, I tend to stick to the same easy things on a daily basis (mostly egg burritos, banana-egg pancakes, smoothies or breakfast cookies). I was so excited to have something new to add to the mix. Meg recently completed the Whole 30 challenge (no grains, dairy, alcohol, or refined sugar/flours) and felt amazing afterwards. This was one of her breakfast staples during the challenge: eggs in a basket of sweet potato and brussels sprouts.

This is the amazing thing: the steam from the veggies cooks the top of the eggs!

Eggs in a Basket Paleo and Whole 30 Style

A delicious and healthy take on traditional eggs in a basket that uses veggies instead of bread.

Ingredients

Scale
  • 1 tsp coconut oil
  • 10 brussels sprouts
  • 1 sweet potato
  • 2 eggs
  • salt & pepper to taste
  • garlic powder (optional)
  • hot sauce (optional)

Instructions

  1. Wash and thinly slice about 10 brussels sprouts.
  2. Grate one sweet potato using a grater or food processor.
  3. Heat coconut oil in a medium pan.
  4. Saute veggies over medium heat until soft–bout 3-5 minutes.
  5. Season with salt, pepper and garlic powder.
  6. Reduce heat to low and a make a nest for the veggies.
  7. Crack the two eggs in the nest.
  8. Cover the pan and cook until eggs have reached their desired texture (3-5 minutes).

 

What’s left: drippy eggs atop savory brussels sprouts and lightly sweet potato. With hot sauce on top and a side of hot tea, it is an amazing (and filling!) breakfast.

    Hi Gina! I heard about the event on Thursday and wish I lived closer, unfortunately it’s a bit too far from San Francisco. Hope you get well by then! I’ve been known to teach while sick, because finding a sub is so hard. This recipe looks sooo sooo sooo good. I usually stick to overnight oats for breakfast, but would love to try this one out. I can see myself eating it for lunch too though. Yummy! 🙂

    Yum! I’m currently doing the Whole 30 diet myself. I’m on week three and it is going great! I feel so much better and all my stomach issues have gone away or calmed down.

    Looks delicious! I e been on a baked oatmeal kick lately, but I also sauté some kale in coconut oil and enjoy it as a side with the oatmeal. It’s delicious and slightly sweet from the coconut oil and it helps me start my day with some healthy veggies. Wish I was in the Cali area-would love to come to your event. Hope that ginger and green juice help- feel better soon!!

    I don’t want to sound like that annoying person fixing grammar (that person annoys me) but the missing coma here made me giggle as I imagined a giant inflatable leading a pilates class 🙂

    That breakfast looks amazing. My husband travels a lot and when he is gone I always tend to have breakfast for dinner… it is easy. I will try this soon! Thanks for sharing.

    That’s called basted eggs. Love them. You can cook eggs that way alone in a pan, just dribble a little water in to make the steam. Or order them that way in breakfast restaurants! That photo is gorgeous, of the dish!

    That looks like an amazing recipe! I love brussels sprouts but my husband hates it when I cook them because they stink up the house. Have you found a way to minimize the smell when you cook them, or do you guys just roll with it? 😀

      we just roll with it, and i’m a candle hoarder so usually my afternoon candle lighting helps eliminate the smell. today, liv was like “what’s that smell? it smells bad.” haha

    Hahaha that’s hilarious about your mic ball! Being sick is the worst! Take 1000 mg vitamin c at the first sign of you getting sick and it does wonders. Loving this breakfast, I am going to make this for my boyfriend who is a huge brussels fan.

    I’ve been having eggs over a vegetable style hash lately, and I love it. A lot of times people only put eggs over potatoes, but I’ve really been enjoying peppers, onions and squash lately. Your brussel sprout version looks amazing too.

    Have fun at the Beach Bash! Looks like so much fun. I wish I was in Southern California instead of on the north side.

    Such a small world! My agency was hired to staff the crew/brand ambassadors for that event!

    We did a training session with everyone and there was a “Meet Gina Harney” slide in the presentation 🙂
    I’m in Boston so won’t be there, except I’m flying out to San Diego on Friday for another event – didn’t plan that one very well!

    Looks like a great event though! I hope it brings you a lot of opportunities too!

    With that said, any chance you are teaching any classes this upcoming weekend? I figured odds are slim and I’ll be on event the majority of the time anyways (There is a Zombie Food Truck Rally in Escondido Saturday afternoon/evening FYI!!) but if I had the chance to catch a class of yours, I would be so stoked!!

      this one was about 6 stalks of celery, 1 green apple, a large handful of mint, half a lemon, a giant knob of ginger and a handful of spinach 🙂

    I love cooking eggs this way, I often do this with sweet potato cubes.
    My breakfast staple is still oatmeal with banana, topped with PB, never gets old!

    Yum! I love brussel sprouts. Throw some bacon into this recipe and maybe some fried onions and I’m in heaven! The Whole30 is great! I’ve done a few and always had a great experience with it. Hope you feel better soon. I’ve been successful avoiding everyone’s sickness so far, but that reminds me… it’s probably a good time to stock up on some Emergen-C!

    I love Brussels sprouts with my eggs for breakfast. I add curry powder and stir the eggs so they coat the sprouts and the grind trader joes lemon pepper on it

    Hope you’re feeling better! What is your opinion about working out when not feeling well?

      thank you, nicole! i think if you feel sick from the neck up (like runny nose, sore throat, etc), i think it’s fine as long as you feel like working out. also, i would only work out if you aren’t coughing and hacking everywhere. i had a super sore throat and headache, and i would have rather rested on monday, but it’s basically impossible to find a last-minute sub for classes :/ i think if you are sick from the neck down (body aches, fever, chills, stomach ache), take a day off and rest

    YUM! This is such a good combo. I’ve actually made a version of this using left over sweet potato tots (or wedges) and roasted brussels from dinner and just throwing a fried egg or two on top and lots of sriracha in the AM. Love the basted egg idea–must try this weekend!
