Quick hummus and veggie pizza

Our aunt, uncle, and cousins got in from Key West last night, and since then, our house has been bustling with familia. I love it so much. It’s amazing to look at the girls and see their ranging ages- almost like having a glimpse into the future.

Since they got in late, madre picked up Mexican food for everyone to snack on:

and this morning, surprised me with Good Egg for breakfast since I had to leave for work.

I took some more fruit with me to work, along with a salad beast for my morning snacks.

I had a major klutz moment and dropped my salad… quinoa went everywhere in the locker room. For the record, quinoa balls are not fun to pick up from carpet. It was a disaster.

It was hard to leave for work this morning with everyone over here, but minus the great salad casualty of 2012, it was a great morning. I loved seeing my work friends and was surprised by a ridiculously awesome Zumba class. It was huge, and the energy was outta control. Love when that happens 😉

I’m pretty stoked with my preparation as far as food/snacks goes for this week. Sometimes before I leave for work, I’ll be scrambling to put things together, and this week I did a lot to make sure I had work snacks (plus it helped that nana and madre made a couple of grocery trips with me to stock the fridge) and that there would be plenty of grab and go options for everyone. The Pilot grilled some chicken breast for lunches, I made hummus, quinoa, grabbed lots of veggies, fruit and sandwich/salad supplies. 

Last week, while nana was over, I made us a lunch with some of the hummus and roasted veggies I had in the fridge. The hummus was the “sauce” of our flatbread pizzas. This isn’t really a “recipe” per se, but a great combo of ingredients that most of us have on hand throughout the week.

baked in the oven at 350 for 10 minutes. Super fast, crazy delicious.

Tonight, we’re going to grill with a special surprise for dessert.

Something to talk about: Any clumsy moments lately? Besides, the salad fail, I also got the tickle in my throat during stretch and relax today that wouldn’t go away. Awkwaaaaaard :/ New quick lunch combos?

    I think I need to make those pizzas — and I haven’t even had hummus before! Not sure what’s holding me back…for the longest time I thought hummus had to be super garlicky and I didn’t want to deal with crazy-garlic breath. Maybe I will try it out!

      Make your own….it’s so easy! If you love kalamata olives, sub them for garlic (and don’t add any extra salt – you won’t need it) and you will have some really yummy hummus! There are so many different ways to make it… you can totally have fun with it. 🙂

    I am clumsy ALWAYS. I used to work at a hospital and if anyone fell they called it “pulling a jackie” because I fell 3 times while working there. And it was never discreet. It was usually when there was a lot of people on the floor I work on…

    I loooove when my Zumba classes are HUGE and the energy is out of this world…seriously puts me on cloud9! Sounds like you are having some great family time, chica! I love the “hummus pizza” idea; will definitely try this out. Must be something about us Zumba instructors, too, that we are huge klutz’s (spelling?)… as coordinated as I am teaching a fitness class, I SUCK at everyday life. Once I was at work (corporate america), and I opened my drawer to pull out my canister of oats, and the top slipped off and I dropped the canister. The oats went all over the drawer and all over the carpet in the office. Quite a few co-workers saw this and I was pretty embarrassed. There is so much more; stumbling over myself never ends!

      Eva, I never connected fitness instructors with being a klutz but I am a fitness instructor and also have a corporate job and have also spilled my entire canister of oats all over the carpet at my corporate job. It was really hard to clean up and lots of people saw! Can definitely relate 🙂

    I am definitely going to try that hummus pizza idea! Thanks! One of your posts inspired me to make a Greek chickpea quinoa salad that was similar to the one you made and it was a hit. This week I made a quinoa tabouli inspired by a recipe I saw on TV and some recipes I found on the net. It worked out really well. Up until recently the only success I had with quinoa was adding it to chicken soup and making the Gluten-free goddess’ quinoa chocolate chip cookie recipe with quinoa flakes and flour.

    I made taco chicken for this week’s lunch and froze half of it…found the recipe on pinterest! I took 4 chicken breasts, 1 packet taco seasoning, and a 16 oz jar of salsa and threw it all in the crockpot, then shredded the chicken once it cooked and mixed it all back up together. Sooo delicious!!

    Had a horribly clumsy moment yesterday actually. I was walking downstairs and turned around to go back upstairs to get my ipod, tripped over my dog and slid all the way down the stairs on my butt! Luckily no one was around to see except my dog, and I don’t think she’ll tell!

    oh man, those girls are too cute!! i love how they all look alike. i hope you have an amazing time with your family in town.

    i have clumsy moments all the time but my most recent was when i spilled a full cup of soda all over journeys kids. i had the cup in the cup holder of my son’s super lightweight stroller and i also had my huge purse and a small diaper bag hanging from the handles. i know it will tip over with those things on the back but i didn’t even think about it and pulled him out of the stroller to test out some shoes and BAM, stroller tips over, soda busts all over the place. of course, i HAD to buy the shoes then.

    those three girls together….so precious <3 she looks so much like them! have fun with your fam in town.. and don't worry about those little blunders.. i'm sure no one but you even noticed. I've thought about those kinds of things before "oh man, did i really do/say/whatever that?!" and then you just have to put it into perspective…later that day, tomorrow, next week..is it going to matter? probly not. :]

    Oh your spill sounds so frustrating to pick up! Lately I’ve been making a big batch of roasted corn, poblano peppers, and jalapeno peppers, bring a container of that plus an avocado to work with me. Once lunch time rolls around, I half the avocado and stuff it with the “salsa”. It’s incredibly flavorful, spicy and I love the heat of the peppers mixed with the coolness of the avocado! Enjoy your week!! Family time is the best time. : >

    Those flatbread pizzas look delicious! I’m definitely going to have to re-create those soon.
    And I actually spilled brown rice allllll over my kitchen last week. I’m still finding it everywhere! It’s so frustrating.

    I know how you feel- I hate leaving the bf at home to go to the gym. Luckily, I typically only go in the mornings so he is at work anyways. But those arvo classes can be a struggle sometimes.

    one of my newest lunch “things” is to use guac (from TJs) as my spread on my lunch wraps (instead of the plain old mustard). I know, I’m so boring. haha. on a Zumba note, my Mom just told me she went to her first Zumba class!!!! I have never been and was so stoked and inspired that my Mom was brave enough to go (and she LOVED it and is now all talk about going a few times a week – it’s only $4 at her local park and rec) that I told her I’d go with her next time I’m down in Cali. Anyway, just had to share 🙂

    And I had to laugh at your great salad debacle of 2012 only because, yesterday, I had the great SMOOTHIE debacle of 2012. Blueberry smoothie ALL over my living room floor and part of the couch. To make matters worse, the smoothie didn’t grind up the oatmeal too well, so I had nice little chunks all over the place. NOT FUN. Quinoa ball = oatmeal chunks… I can relate. 🙁

    Bummer about your salad! I’m always dropping my meals too – and it’s so disappointing when it was something I really wanted to eat! One time I actually just scooped it back into my bowl and ate it… not my finest moment. 😛

    Aww the girls are precious! Reminds me of me & my cousins when we were little. We all looked just alike and we still do HAHA!! I am also super clumsy in so many different ways I cannot describe LOL! I have learned to laugh at my self… ALOT :-D. And the flatbread pizza idea using hummus as the “sauce” is a fantastic idea! Will have to try. Awesome sauce!! 🙂

    Girl, you’ve got some seriously awesome genetics going on in your family. I haven’t seen a single person on your side that you’ve posted that isn’t GORGEOUS! Even your brothers are “pretty” -I mean that in the manliest way possible 🙂 And obviously the Pilot isn’t blood related but his good looks fit right in with all of ya’ll. You guys kill me!

    As for the clumsiness, just last weekend I was checking some strawberries at the store to make sure they all looked good before I bought them and sure enough one side of the container wasn’t closed all the way and they went everywhere! Luckily, I had my baby with me. It’s amazing how people cut moms a break. Although, I can’t blame that one on mommy brain- that’s just me being me 🙂

    I once dropped a WHOLE container of cocoa powder all over my kitchen. I was finding cocoa powder for months! Now I treat it with great care when carrying it from the pantry to the counter.

    Girl I swear I’m like the queen of clumsy! I dropped a stuffed pepper one night while transferring it from the pan to my plate. Landed upside down right over the 1″ space between the stove and the counter. I had to move the stove to get it all cleaned up. Sad thing is, I nearly did it a 2nd time. (I only made 2 peppers…)

    Your daughter and nieces are beautiful! That olive skin and dark hair is gorgeous. Dropping a salad dressing jar from the fridge was definitely clumsy and disasterous! Glass and balsamic everywhere was no fun to clean up!
