Happy Birthday, Pilot

So today was a classic example of the fact that sometimes it’s hard to take your own advice.

Case in point:

Yes, I ran the 5k this morning.

I woke up and didn’t feel 100%, but didn’t feel horrible. I had already pre-bribed myself to get out of bed by making a seriously awesome bfast cookie.

1/4 cup oats, splash almond milk, stevia, carob, 1/2 T brown rice protein, 1/2 T almond butter, 1/2 banana and vegan chocolate chips.

After bfast, I debated for a while….

And then remembered it was called a Think Pink 5k (I live for pink.. in case you couldn’t tell), the shirt would be guaranteed cuteness, my friends Kelly and Meara would be waiting for me, and it was a breast cancer benefit. So I went.

I huffed and puffed the whole way, walked about three times, and finished at 25:35.

25:35 isn’t a bad time at all, but it’s much slower than last year’s pace (around 24 min). Considering the fact that I’m under the weather a little, I’m calling it a victory 😀 And surprisingly, I feel a lot better now. The girls and I ran around for about 10 minutes after the race to cool down and we stayed for the awards ceremony because my friend Kelly is a running rockstar 😀 Meara also pushed her cute little baby in the jogger for the race and made as awesome time as well 🙂

To rewind a little, last night was a blasty—the girls and I went to Longhorn (we miss you Jeni!!!) and I got the standard:

After dinner, Ashley and I went to Bizzle for tea:

It was pretty face-rocking delicious. Yesterday, funny quotes lady gave me a giant bag of organic sweet potatoes. So expect many sweet potatoes in the near future and if you have any uses for them besides fry form or baker, please send them my way! 😀

Time to lounge on the couch with a mug of tea, then it’s clean machine time. Vino with some friends later tonight, and an 8-miler (ack!!) in the morning.

    Make a sweet potato soup! Onion, leek, celery, spices, and a sweet potato with a little veggie broth or water and then puree it all together mmmmm

    I’ve been using mashed sweet potato as a yummy filling in my wraps and I also made a sweet potato smoothie (based on Tina’s recipe over at Carrots n Cake.)

    Hello!! Check out hungry-girl.com, she has some awesome sweet potato recipes. You can also puree sweet potatoes with some shredded carrots and some maple syrup and use that as a filling for a vegan quiche (I like using a buckwheat flour crust for a hearty fall flavor). PS I totally love your blog. You always make me smile 🙂

    The sweet potato tofu burger recipe from wholeliving.com is really, really fantastic. I recommend adding in a bit more cilantro and chive than the recipe calls for though 🙂

    That sweet potato looks awesome! If you cook them long enough, they get soft and you can mush them up like mashed potatoes…Add some cinnamon and it’s very tasty!

    Great job in the 5k! Now I feel like I totally sucked in my 5k this morning. I finished in 26:18 and was pretty content until I read your time! 🙁 Oh well, I guess we are all rockstars at racing at our own speed.

    Woo hoo for the 5K/bad girl for not taking your own advice 😉 Happy Birthday Pilot! You can celebrate when he’s back with a belated paraty.. I’m sure it will still be a blast! Sweet pot’s are pretty much awesome baked, grilled, sauteed, and especially in french fry form!! How come the bfast cookie was so small this AM?

      yes, i was a little worried because i’ve been eating much lighter bfasts lately and didn’t want to feel sick. the smaller bfast cookie was perfect!

    You know the banana “ice cream” soft-serve thing? It works AWESOME with sweet potatoes. Just cut the sweet potato into chunks and freeze. Put the frozen chunks in a blender or what have you with pumpkin pie spice and milk(soy, dairy, whatever) or water, protein powder if you’d like, a bit of sweetner if ya’d like, etc. etc. and BAM! sweet potato milkshake! sooo good. Also, I love the picturees of you from your Pom excursion.

    Mash, top with some crushed pineapple and marshmallows and melt in oven – voila, what a treat! (my grandma made this every year for us, nostalgia :))

    First time posting on here, but I love your blog! Sweet potato fries are the best! (slice thinly into fries, toss will a little EVOO, cinnamon, & a pinch of sea salt!) Or slice into rounds & bake w/ sliced apples topped w/ cinnamon, pumpkin spice, EVOO, sea salt, & pumpkin butter if you have some! Fall flavors are the best!

    Glad you feel better after the race! Congrats on the time!!! I still have yet to run a 5K but I know I can do it!!!
    I would go on allrecipes.com and put “sweet potato” in the ingredient list and see what it comes up with. That’s my favorite recipe site!

    Now I know for a fact that breakfast cookies are absolutely delicious but I’ve yet to see a photograph that makes them look that way. I think you ought to have a competition, tap the resources of the blogosphere, and challenge everyone to come up with a shot that makes breakfast cookies look as delicious as they are. First-time comment from me, BTW. Enjoy your updates immensely and FYI, my enduring memory from your POM coverage is going to be thinking: “Dang! She sure was right about her calves,” upon sighting the full-length shot of you in red dinner dress.

    The only way I eat sweet potatoes is with peanut butter or almond butter! Sounds crazy but I promise it’s soo delicious!

    This is THE best sweet potato recipe EVER!!!! (In my opinion!)

    Moroccan Stew

    2 Tbsp. olive oil
    1 cup diced onion
    1/2 cup celery chopped
    1/2 cup green pepper diced
    1 clove garlic, minced
    3 cups sweet potatoes, peeled and diced
    1 can chick peas, drained
    1 can chopped tomatoes, drained
    3 cups chicken broth
    1 Tbsp. lemon juice
    2 tsp. fresh ginger root, grated
    1 tsp. chili powder
    1 tsp. cumin
    1 tsp. curry
    1 tsp. coriander
    1/2 tsp. salt (or to taste)
    1/4 tsp. pepper (or to taste)
    2 Tbsp. peanut butter
    2 Tbsp. cilantro, chopped
    1/4 cup golden raisins

    Saute onion, green pepper, garlic, and celery in olive oil for approx. 3 minutes. Then add every thing else (except raisins, peanut butter and cilantro) and simmer for about 20 minutes on low, being careful to not overcook potatoes. Before serving, stir in raisins, peanut butter, and cilantro.

    I freeze them in chunks, and then put them in the mixmaster with stevia, a bit of protein powder, vanilla or cacao powder or cinnamon or almond essence or all of the above, and sometimes frozen spinach. I also add xanthan gum with the water if I want frothy bulk. Without the xanthan gum it’s a sort of smooth soft serve texture. With it, it’s like a foam or mousse texture.

    I serve it with a bit of something for crunch – bee pollen, crumbled flax cracker, oats, (I just typo-ed ‘pee pollen’ ew).

    Alternatively, I steam and moosh with chilli and a bit of salt. Or if I’m feeling fancy, slice thinly with some tomato paste and whatever else is going to make a lasagna/stack.

    One of my fave ways to eat sweet taters is to bake one, mush it up with some curry powder, and then drizzle it with pb or ab. Delish!

    When I was gifted with a box of sweet potatoes I found this recipe for sweet potato and black bean enchiladas, my meat loving husband loved them! They are good with the green sauce or a homemade red one, Fatfree vegan recipes has a quick delicious sauce recipe as well.
