How’s your night treating ya??

I’ve had a bueno day, full of ham 😉

First, I worked out my hamstrings (hamstrings), quads and calves with Jeni

5 minutes elliptical Bench step-ups Body weight, 3 sets of 12 on each side
Bench squats 6 lb kettleball 3 sets of 12
Calf raise on a step Body weight 3 sets of 12
Pilates side leg series Body weight 3 sets of 20 on each side
Prone hamstring curl 35 lbs 3 sets of 12
Dumbbell deadlifts 8 lbs each 3 sets of 12
Elliptical Hill 2 program; level 5 25 minutes
Total time: 1.25 hrs    

Next, I fought for some ham:

Actually, I didn’t have to fight for it at all. I was a little afraid because day-before-Shrimpsgiving in Tucson is a little hectic at Honeybaked Ham and the line is INSANE, so I showed up ready to tackle some biznatches. Surprisingly, the one here was pretty mellow. I picked up some honeybaked ham for the pilot, a turkey breast, mashed potatoes and gravy. All the labor-intensive stuff I couldn’t justify making for one person to eat 😉

Next, I had the same salad beast as yesterday. I’m boring. Sorry 😉

It was delicious though.

Then I went to workie for a training appointment and did 30 minutes walking on the treadmill at 4.0 with 4.0% incline for 30 minutes while reading the new issue of SELF. Cardio reading makes workouts flyyyyyyyyy by 😀

After that, it was PREP TIME!

I made a vegetarian green bean casserole (all organic ingredients)

It felt good to get some prep out of the way—all I have left to make tomorrow is orange cranberry sauce, Ezekiel stuffing with dried cherries and green apple, and the sweet potato casserole. All vegan, all healthy. Don’t tell the pilot, he’ll never know 😉

I also whipped up some dinner: Quinoa Confetti Casserole from Eat, Drink and Be Vegan

I’m off to shower my stinky face before meeting Michelle and her pilot for drinks, but I’ll see ya tomorrow. Regular blogging will continue and I’ll post all of the recipes for Shrimpsgiving on Friday 😀

    The casserole and pie look delish! I can’t wait to see the rest, especially the sweet p casserole and the stuffing. I made stuffing last year with ezekiel and it was heaven!
