Healthy Banana Chocolate Chip Muffins

Hi friends. What a day over here. Everyone talks about the 2s being rough, and I hate to scare anyone, but the 3s are the real deal. (My mom also said to watch out for the 4s, haha.) While there is way more *good* than tough over here, not every day is rainbows and acai bowls. 😉 After some quiet time together, time outside and chilling, everyone is doing much better. 

We also made some muffins. Baking is a real form of therapy.

When we got back from vacation, we had some perfectly browned bananas. We actually took them on vacation with us, and brought them back, haha. I’ve found that the poor bananas have been neglected lately in favor of summery fruits like peaches, plums and apples. 

Don’t worry bananas, you still have purpose.

The bananas in these muffins give them a majority of their sweetness! Just mashed bananas, a little bit of maple syrup, chocolate chips,

A sweet treat for an afternoon snack or to enjoy with eggs for breakfast

  • Total Time: 5 minutes
  • Yield: 12 1x

Ingredients

Scale
  • 1 cup almond meal (you can also use oat flour)
  • 1 cup oats (for gluten-free, use gluten-free oats)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 cup mini chocolate chips
  • pinch of sea salt
  • 2 eggs
  • 2 medium bananas, mashed
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1 tablespoon coconut oil

Instructions

  1. 1. Preheat the oven to 350 and spray a standard muffin tin with nonstick spray or olive oil.
  2. 2. In a large bowl, combine the almond meal, oats, cocoa, salt and chocolate chips.
  3. 3. In a separate bowl, combine the egg, banana, vanilla, maple syrup and coconut oil.
  4. 4. Add the egg mixture to the dry mixture and stir well to combine.
  5. 5. Distribute the mixture to the muffin tin, and bake for 20-25 minutes, until set.

Notes

  • I like to make a batch of these and store in the freezer. When I want a sweet treat or breakfast accompaniment, all I have to do is heat and eat.

    These look delicious! At 36 weeks pregnant my ability to eat healthy is slowly going down the drain. These would be a nice way to get my sweet tooth fix in without totally blowing my nutrition for the day.

    Definitely making this recipe ASAP! 🙂 I hope you have a better day. You are so right though. The threes are the worst. When my oldest turned 3 (who is now 5 1/2) it was awful. Granted he was diagnosed with special needs so our experience hasn’t been typical, but I asked my mom, “why didn’t you warn me about the threes??” She said she didn’t want to scare me 😉 haha. As they get older they are able to control themselves better so that is a plus!

    I rightfully call my daughter a threenager. And unfortunately, the majority of our days are filled with discipline and fights and me wishing i could pack her up and shove her back “in there”. When i grovel to our parents for a solution to the madness, they shrug and tell me they are at a loss (“you guys never behaved that way, we dont know what to tell you…”). Um what….?

    4 gets better right?! Someone please lie to me and tell me it gets better! Ha!

      i totally hear ya. it’s just hard because you feel like you’re disciplining all day, which is EXHAUSTING, but at the same time, i refuse for her to grow up and be a brat.
      my mom said it was terrible until i was 5, and then i was as sweet as could be. so there’s that to look forward to haha.

    These sound delicious! I know what you mean about bananas taking a back seat in summer. We’re obsessed with peaches, cherries and all the berries here!!

    Wish summer would never end! I’m so sad that my kids started school today 🙁

    Your mom is right about the 4s!! WOW my 4yo son keeps outdoing himself every year lol. Love him so much and he is soooo awesome, but yeah….. he’s cray 🙂

    We’ve been having the same banana issue this summer 🙂 3 was also the worst year for us…4 still has itsome difficulties but definitely a better place than a year ago!

    We are also in the throws of a threenager and are adding a new baby Thursday! Heaven help us that this occupies him enough to lose the ‘Tude for a bit!! I agree, I will NOT give up on being polite, kind and overall pleasant. It may kill me, but these are the life goals!! Also, baking these currently to have as midnight feeding snacks!

    I had all ingredients on hand including dying bananas and gave it a try. Seriously, the best healthy and yummy recipe ever tried!! So rich in flavor, chocolaty and sweet. Yet I feel good about the ingredients. Thanks for sharing!
