Healthy Easter (without eating like a rabbit)

It’s always a nice surprise when I can hit up a yoga class. Usually, I’ll just do a few poses at home if I get a chance, but it’s a treat to be able to take a class at a live studio. I hit up the $4 hot class with some friends and it was amaaaazing.

Workouts have been a little hit or miss this week, but it’s always motivating to have new gear to try out. Reebok sent me some goodies per our partnership, and I especially love the graphic print on the shorts and shoes:

I’ve been wearing the shoes for teaching -they’re super lightweight while still supportive for cardio or strength- but I made the mistake of wearing the shorts to yoga. They looked like they’d be a perfect booty short, but the leg holes are a little large. I’m pretty sure everyone could see my goodies. Lesson learned: wear them for strength or cardio! They have a great fabric that dries quickly, too.

The week seems to by flying by, which is fine with me because I’m counting down to Easter and nana’s egg casserole.

Easter is something I look forward to every year, but I really love any opportunity to spend time with the family and eat delicious food. I’ve always had fond memories of Easter, and now especially look forward to egg hunts and Easter baskets with a special little someone. (I’ve filled her Easter basket and every time we go into the guest room, I try to distract her from seeing it!)

With our family, there’s no telling what types of amazing food you’ll find Easter day.

Desserttable

It’s always a mix of recipes, from nana’s legendary egg casserole and nana’s ham (which I don’t partake in, but love the aroma), Mexican treats and gooey desserts. We’ll have breakfast with dad’s side of the family,

come home for naps (necessary long before Liv was born), and the family comes over to our house for dinner.

Since it’s always a hodge podge of different things on Easter, I feel like the options are endless for what I’d like to make. I tend to go for lighter, more summery fare; here’s what’s on the radar this year:

Clean eating egg salad

Egg casserole

Spicy chopped salad

Curried chicken salad

Ingredients 6

Angel food cake and berries

Key lime cupcakes

Granola balls

Fudge-y chocolate brownies

5 layer Greek dip

Jalapeño cornbread poppers (these look RIDICULOUS)

Watermelon cookies (I’d add a little fresh lime juice and sea salt)

Homemade rotisserie chicken

    I like the design on those shorts, but must say reeboks shoes are my favorite.
    I hope to cook up something fun for the weekend! We don’t usually celebrate too much and now my Mom and Step Dad are sick, but I think I’ll bake up a good dessert, maybe it will help them feel a bit better;)

    haha I have definitely had yoga classes where afterwards I realized people behind me got a little more than they bargained for. After that- the shorts I wear are purchased from Lululemon, and they are spandex!

    Your Easter meals sound amazing! My family lives pretty far away, so I always feel lonely on Thanksgiving and Easter- as the weekend is too short for a trip home. Thankfully my boyfriend’s family lives nearby, so we’ll be going to his dad’s house for a large meal. It’s a big turkey dinner for us- also followed by naps.

    I’m excited for Easter too as we’ll as every other holiday this year. My little boy was too young last year to really get into the spirit of anything. This year should be a lot of fun 🙂

    VERY IMPORTANT NEWS: Ryan Gossling announced the other day that he was taking a break from acting. He said he needed it and felt like people needed a break from him too…..WHAT?! Who are these “people” he is speaking of? I need to chat with them haha

    My older sis and I are going to decorate eggs at my parents house with our s.o’s and then Mom and Dad will hide them for the Hunt. Little sister can’t make it this year though. :\ And yes, we’re all in our late 20s early 30s. 🙂 Dinner will be shrimp, trout and ham with veggies and such.

    Those shoes and shorts are so fun!!!!! Easter will be celebrated by going to church and having family over. I can’t wait to share the true meaning of Easter with my little guy, but for now he will be hunting eggs:)

    Also, the Jalapeno Cornbread poppers are A.M.A.Z.I.N.G. I made them for Christmas with the fam, and considering the jalapeno lovers I’m related to (and am) they were a huge hit!

    I forgot about Easter! We don’t have any family in San Diego, so we tend to forget about holidays. 🙂

    I love hearing about all of your fun family get-togethers! It is usually just the 4 of us (unless we get together with friends). I haven’t even planned anything for Easter yet – better get busy!

    I’m so excited for Easter this year! I’m in charge of dessert so I’m trying to narrow down my recipes now..I love baking and can’t wait. Those Reebok shorts are absolutely adorable…and I’m checking out the shoes right now. I need a good pair for cross-training/strength circuits!

    Ack,the expensive, cute clothes! $35 booty shorts? $68 yoga tops? If I worked in fitness, maybe, but since I just do yoga in the clothes, I need to get over my jealousy.

    I bought some running shoes at a shoe store that specializes in running footwear — they watched ow I ran, measured my feet and did an impact imprint to see how I strike when I run.

    And I hated those shoes so so so much.

    About 4 months ago I saw some cute Reebok running shoes on sale, and decided to just go for it. Haven’t looked back since – they make running 10 times more enjoyable. Glad to see you’re liking Reebok, too! 🙂

    I have a question- totally off topic. If I wanted to find an independent trainer. Is there a website that I can look at? I want to make sure the person is certified. I don’t have the time to go to a gym so I really would like to hire someone to come to me.

    Oh, I wish I could rock shorts for cardio! I’m one of those “chunky thigh” girls where the shorts always ride up. That’s okay, there are plenty of cute capris out there!

    I am sooo excited for Easter! But I’m waiting until tomorow to buy the Easter basket goods since I’ll probably be too excited once I get it all and give Squishy his basket RIGHT NOW. The husband thinks I’m ridiculous for planning an Easter egg hunt (Squish is Livi’s age), but it’s 100% for my own amusement 🙂

    I plan on eating some jelly beans on Sunday! I’m making a “grown up” version of rice krispie treats. Filled with marshmallows, choc chips, peanut butter, and white chocolate. Yum!

    Um, wow. The egg casserole and jalapeno cornbread poppers are going to have to make an appearance on Sunday, along with mimosas and a salad. We aren’t religious — despite me having the world’s most Catholic-sounding name — and don’t have kids, so Easter isn’t really a thing for us. I do, however, welcome all opportunities to eat delicious foods. 🙂

    Have a wonderful Easter, Gina! One of my all-time fave memories EVER was my daughter’s 1st Easter egg hunt. I just “hid” (pretty much in plain sight) some plastic eggs around the house (indoors) & gave her a little basket & she “oohed” & “ahhed” her way around the house gasping every time she found one. It was absolutely precious! Thank God I videotaped it! Now I think I need to go home & watch it again. 😉 P.S. She’s 13 now!

    The hubby is a firefighter and has to work on Easter this year. It’ll just be me and my two girls and I was thinking about making a strawberry tart for a special treat. But I think I’ll ha ve to take a closer look at what you’ve got planned.

    Yum! all that food. Sounds like we are going to a turkey dinner. Being Ukrainian we’ve always done a lot for Easter, but I am not going to be with my family this Easter.. i’m a little bummed about it.

    I have the new tank to match those shorts love it and I’m a true lulu lover….closets full….but I’m really liking the new reebok lines. Paleo easter dinner and treats for this girl…no family time this year though.

    Those shorts are super cute on you and I second or third, or 10th the comment that your legs are crazy good! Thought I’d respond to Mel above who asked about finding a trainer. A lot of the certifying bodies will provide a list of trainers who are certified through them so that might be a place to start (maybe with ACE, or NASM or in Canada, CANFITPRO) You can also go to some of the higher end clubs in your city, pop into the gym and ask them. Obviously many would prefer your join the facility but I work at two private clubs and they’re happy to give referrals if it seems clear the person isn’t interested in joining the gym. Hope that helps!

    I wasn’t planning on making anything special for Easter…but Trader Joe’s was sampling their spiral ham with hot&sweet mustard.

    Needless to say, we’re having ham with hot&sweet mustard for Easter.

      they are pretty true to size. i would have like a size smaller, but then they would have been wayyyy too short

    In the photos of yourself that you’ve posted lately, I’ve noticed you look a lot more muscular. I’d love to hear about what you’ve changed up (if anything) that has resulted in this more defined look you have. I think you look fantastic lately, very strong but still very feminine. It’s a physique that I am aiming for:)

      hey girl! thank you so much 🙂 i’ve been more dedicated with strength training. it’s not that i go more often, but when i go, i make it COUNT. i’ve been lifting much heavier and to fatigue and have also increased my protein intake. i try to make sure every meal has some good quality protein in there.
