Hole in one

Last night, I got sucked into this book:

The lovely Jenna recommended it, and she pretty much never does wrong when it comes to nighttime Kindle reading suggestions. I ended up doing the “one more chapter” thing until it was way past bedtime, and now here I am, groggy and so excited that it’s Friday. Except it’s not 😉 At least we’re close! Any fun plans this weekend?

We have a lot to do around the house since last weekend was so crazy, so I’m really hoping we can finally finish the master bedroom and office. We’ll also see if the Pilot still wants to pimp our light display, or just wait another week until the decorations are 50-75% off (that’s my vote).

For breakfast, I was transported back in time about 22 years:

egg

Egg in a hole!

First time I’ve seen a shot glass in a while….

party

paaaarrrrttttaaayyyy 🙂

Mom used to make this for us when we were little, and since I’ve been looking for ways to change up the usual eggs/toast or oats combo, I thought I’d enjoy a little breakfast blast from the past.

All you do is cut out a hole in each piece of toast (using a shot glass or regular cup)

butter a small skillet

add the toast and crack the egg into the hole.

egg in a hole

These pieces of toast were pretty small, so I ended up scrambled the superfluous egg whites on the side and eating them separately.

After cooking on both sides, I also toasted up the bread holes on the skillet:

toast

my favorite part.

This morning I’m off to do cardio and weights, then heading to a work meeting.

Hope you have a wonderful day!

xoxo

Cute idea. I’ve seen egg in a hole before but never tried it. I love poached eggs on toast though so I’m sure I’d be a fan!

I loved egg in a hole growing up! I made it last summer to change up my breakfast usual, and it was still just as delicious as I remembered. The toasted bread holes were always my favorite part, too. Don’t get too crazy with those shot glasses. 🙂

  6. Amy@healthyhungryhappy.com on December 15, 2011 at 11:14 am

i love your mug! so cute!

I haven’t had egg in a hole in SO long, but you’re right, it’s a great meal!! I grew up calling it toad in the hole, but I have no idea how the egg part turned into a toad. Nevertheless, you’ve got me craving one now!

  9. Erin @ Girl Gone Veggie on December 15, 2011 at 11:17 am

Love that snowman cup! And that toast is so cute!

  10. Marie on December 15, 2011 at 11:22 am

Love that breakfast! I should make this soon. I call this dish egg in a boat or egg in a nest but my husband calls it toad in a hole. Isn’t it funny that it has so many names?

  11. Liz @ Southern Charm on December 15, 2011 at 11:24 am

Aw. My mom used to do those too … and she didn’t cook much so it was special. I think I may have to request this for Christmas morning. That lady better remember 😉

  12. Steffany on December 15, 2011 at 11:28 am

Love those ! haha I also like to make “eggs in a basket” which is like the same thing, except in muffin tins. Bread, filled with egg, and then whatever else floats your boat (BF loves bacon or crumbled sausage LOL) and then bake, and voila ! Cute little breakfast bowls hehe.

  13. Natalie on December 15, 2011 at 11:28 am

oh i love egg n’ toast (that’s what my family calls them). You can also use cookie cutters to make different shapes for different holidays/birthdays. I also do a heart shaped on on Valentine’s day for my better half!

  14. Kelly @ Laughter, Strength, and Food on December 15, 2011 at 11:35 am

My uncle used to make me ‘egg in a hole’ for breakfast when I was little! He used to also make me ‘egg squares’, which consist of making a completely flat scrambled egg and cutting it into squares. Oh, the things that used to excite me when I was little… 😉

  15. Cat @Breakfast to Bed on December 15, 2011 at 11:41 am

I love eggs in a basket!! They’re so random but so good. In my head the egg somehow just got trapped there and gave up, I save it by eating it.

I am 28 and not 8 by the way. You’d never know if you lived in my head. It’s a very puerile place.

  16. kaila @ healthy helper! on December 15, 2011 at 11:43 am

I have never had eggs like that before! Looks like a fun way to eat them!

  17. Olivia @ PeanutButterNerd on December 15, 2011 at 11:45 am

Aww so cute. I used to have that sometimes as a kid. Though more commonly my mom would make us french toast “soldiers” to dip into syrup – french toast made with bread strips so they’re kind of like men. Though for some reason I don’t even remember liking french toast as a kid! LOVE it now!

  18. Sonia (the Mexigarian) on December 15, 2011 at 11:46 am

I have never had that before! Great way to mix it up though. eggs and toast are one of my favorite meals. well, with a side of veggies of course 🙂

  19. Ana on December 15, 2011 at 11:51 am

My son loves this, he calls is “eggs on toast”! We even have it for dinner sometimes when I haven’t planned anything, serve with a side salad and/or veggies and you have a filling and delicious meal! (and fun too! we also love to dip the toasted round centers in the soft egg yolk!)

Egg in a hole is the best! It’s always fun to get creative with food and plating.

  21. Anna @ The Guiltless Life on December 15, 2011 at 12:31 pm

I LOVE the idea of egg in a hole! SO cute!

  22. HRCK on December 15, 2011 at 12:39 pm

Whenever I was sick at home, I would ALWAYS request eggs in a hole! I don’t know why I haven’t brought it back in more recent years– it’s so simple, fun, and delicious. Thanks for the reminder, Gina! 🙂

  23. Jessica @ Dairy Free Betty on December 15, 2011 at 12:42 pm

we always had that too, but right after you flip it you add honey and then flip again so the honey gets warm on the bread. Sounds weird but it’s sooo good!

  24. Lindsey on December 15, 2011 at 1:02 pm

That was my favorite breakfast when I was younger but I haven’t had them in forever, I might have to now 🙂

  25. Jamie @ Don't Forget the Cinnamon on December 15, 2011 at 1:12 pm

Haha I did not make the connection from that first picture that those were the cutouts from the toast. I thought you had your breakfast with a side of christmas cookies!

  26. Averie @ Love Veggies and Yoga on December 15, 2011 at 2:08 pm

Cute egg in the hole. That picture of the hole you’re holding made me think of the Pioneer Woman’s tv show (I’ve only seen 2 episodes of it) but one of them she was making egg in the holes and I think she has like 5 kids? But she said that since she’s had kids, she’s never ever been able to eat the hole because one of her kids always snatches it from her…and as you hold up your hole part, it looks so good. I’d definitely snatch it 🙂

    • Brittany on December 15, 2011 at 4:41 pm

i love that episode of the pioneer woman!!!

  27. Alicia @beingLA on December 15, 2011 at 2:26 pm

I’ve been making my eggs with my bread in the middle…so I guess I would call it “Bread in an egg-hole” 🙂 It’s delicious. I add fontina cheese all around for added yumminess!

  28. Rebecca @ Runner with an Appetite on December 15, 2011 at 2:46 pm

So glad someone else calls it Egg in the Hole! Everyone looks at me weird when I call it since there are so many other names for it. 😀

  29. Jen@FoodFamilyFitness on December 15, 2011 at 3:30 pm

I call them toads in a hole so my kids will eat them, but the little toasted holes are my favorite parts as well 🙂

  30. Lena @Fit on the Rocks on December 15, 2011 at 4:31 pm

Oh my goodness!!! I love my eggs and bread cooked that way, but it’s been a good year or two since I’ve had it. On my agenda for the weekend.

I LOVE egg in a hole. But when i was little my mom called it a birdsnest.

  33. Katy Widrick on December 15, 2011 at 4:50 pm

My dad always called them bird’s nest eggs, so that’s what I call them. I make them for easy-to-transport breakfasts all the time!

  34. Ali on December 15, 2011 at 6:21 pm

AWW!! I love your eggs in a hole toast!! I used to make fried egg sandwiches with tonnes of ketchup and pepper back in the day.

  35. Chelsea @ One Healthy Munchkin on December 15, 2011 at 6:29 pm

My parents never made me this meal as a kid, but I was always jealous of my friends whose parents did haha. 😛 My dad did make some mean scrambled eggs though!

  36. Leanne (Bride to Mrs.) on December 15, 2011 at 7:33 pm

My parents used to make me eggs like that too!! I’ve never met anyone else who has their eggs that way!

  37. Amber L on December 15, 2011 at 7:56 pm

Okay so lately my new pregnant thing is once I see something that looks really good, I have to have it. As soon as I was done reading this post I made an egg in hole for a snack. haha! It was delicious. I toasted up the bread hole too, yum!

  38. meghan@ struggle muffins on December 15, 2011 at 8:24 pm

Awesome breakfast idea! I love when a book sucks you in like that..until the next day of course, when you feel like a sleep-deprived wreck. It’s so good to get lost in a good read though, I’ll have to check that one out 🙂

  39. Lisa O on December 15, 2011 at 9:33 pm

I did exactly the same thing with Jenna’s recommendation as I’ve found so many fabulous reads from her book reviews. I haven’t found The Midwife’s Confession yet in Australia but I highly recommend the book I did find once searching for the author – Cypress Point (which is now called The Shadow Wife) also by Diane Chamberlain. It’s such a good read and one of the central characters is pregnant which we can relate to! If you do read it, let us know if you also enjoyed! Being so far into the pregnancy, reading is the perfect excuse to put your feet up and relax with all the fun chaos of the festive season.

  40. Shannon on December 15, 2011 at 10:44 pm

My boyfriend’s roommate made those and he calls them “spit in the eye”‘s. He says he learned to cook them at boy scounts. Weird name…delicious breakfast!

  41. Nicole on December 15, 2011 at 11:55 pm

    I love these! Very yummy!!
Your plate and cup were the cutest too! So sweet!

  42. Kara on December 16, 2011 at 12:48 am

Ahhh my grandma used to make me that breakfast except she calls it the one eyed egyptian! no idea why…but it was one of my favorite breakfasts!! Love the snowman mug!

  43. TanyaS on December 16, 2011 at 9:33 am

I was transported back in time by my breakfast this morning too, but it was cream of wheat with lots of milk & some brown sugar. Reminded me of sleepovers at grandma’s house.

  44. Debbie on December 16, 2011 at 10:29 am

So funny…I made the same thing this morning…my grandfather used to make them for us as kids all the time…and the cut out was always my favorite part!

  47. Emily on December 17, 2011 at 6:09 am

Omigosh! The book! I can’t stop reading it!

I am currently studying for finals and I keep telling myself: study for 45 minutes and then you can reward yourself with reading for 15 minutes–and then an hour passes and I haven’t done ANY studying!
