I Swoon 4 ‘Roons

Hey everyone 😀 How’s your day been? It’s almost Friday! Thank goodness, eh? This week has be dragging for me.

This morning, I made some macaroons to send to the blogiversary winners since the rest of their packages are ready to go 😀

Blonde ‘roons

roon

Super ‘roons

roon (2)

Cacao almond-butter ‘roons,

I swoon 4 roons 😀

For lunch, I broke out this bad boy from the freezer.

enchilada (2)

I plopped the enchiladas onto a salad with grape tomatoes, hot sauce and cilantro:

enchilada

I started happily munching away when I noticed strange square-shaped smushy bites.

When it comes to Amy’s food, I check for 4 things:

-Vegan

-Soy-free (I avoid soy for the most part)

-No potatoes (blech)

-Whole-grain

Apparently I didn’t check the label that well, because tofu was in there. I ate it anyway, and my stomach didn’t hurt at all. Winner, winner, enchilada dinner lunch.

This afternoon was spent running errands and work stuff, and then I went up to the yoga room,

lit my favorite aromatherapy candle (Lavender Vanilla from Bath and Body Works- we have one in our room and one in the yoga room)

buddha

and practiced some yoga with my favorite downward-facing dog 🙂 (Viesa prefers running, but Bella loves yoga)

yoga

We free-styled to some Glee music and then I followed it with a 13-minute relaxation podcast from YogaDownload.com.

‘Twas lovely.

So… I’ve decided to apply for a scholarship to Bikram’s teacher training in September. I figured since I’m not teaching at the base gym right now, it would be an excellent step for me because I’ve fallen in love with Bikram yoga over the past year and a half and it’s something that I could teach wherever the military sends us. They only give out two scholarships so my chances are slim (there’s no way I’m paying 10 g’s for yoga training), but if they pick me, I’m going 😉

Time to meet with a prospective client and teach boot camp.

See ya in the morning with that crepe recipe <3

xoxo,

Gina

Something to talk about: If you could go back to school for anything and time/money/family/work commitments weren’t an issue, what would you choose?? I would absolutely love to finish my MBA –I will when we find out where we’re moving!- and enroll in one of those yoga teacher training retreats in another country.

I’m currently working on applications for a Master’s of Accountancy, but I also want to be a yoga alliance certified instructor. I figure yoga will have to wait a while, but I plan on doing it big time in retirement (I call it a 50 year plan).

  4. Jackie (Peaces of Earth) on June 24, 2010 at 9:01 pm

I love raw ‘roons!!! They look fabulous.

Good luck with the scholarship, that would be amazing!! I would love to go back to school for nutrition counseling and I am in August. 🙂

  5. Tyffanie on June 24, 2010 at 9:09 pm

Man, I would love to get a degree in dance, or train to be a yoga or pilates instructor….or all of them! That would be awesome if time and money weren’t issues.

Good luck with the scholarship. That would be awesome! You inspired me to look up an Bikram yoga class for this weekend since we’ll be visiting my in-laws in Viña del Mar.

  6. Kristin (Cook, Bake and Nibble) on June 24, 2010 at 9:18 pm

I want to first finish my nutrition degree, then do a yoga teacher’s certification- oh, and I would LOVE to be a certified holistic nutritionist!

  7. Hilary @ Purelicious on June 24, 2010 at 9:26 pm

That’s so awesome about the Bikram training! I just very recently (past month) tried Bikram and I reallyyyyy liked it. Unfortunately it’s just a tad too expensive here in NYC for my lil budget right now, but I’m still going to try to squeeze it in occasionally! Good luck w the scholarship!
If I were to go back to school, I would def get a degree in nutrition. Such a passion of mine and I’d love to be able to pursue it! We shall see. 😉

  8. THe Rabbit Runner on June 24, 2010 at 9:38 pm

so i think you should open up a macaroon shop 🙂 like soon because you seem so talented at creating them 🙂

I also love how you make an amy’s meal look so fancy!!

    • Fitnessista on June 25, 2010 at 8:08 am

thank you- i’m working on it 🙂

  9. Ashley (whole-ier) on June 24, 2010 at 9:48 pm

I ate my first Amy’s frozen dinner for lunch today. Gotta say… I’m not a huge fan. It def looks better on the box.

    • Fitnessista on June 25, 2010 at 8:08 am

      which one was it?

  10. Cat on June 24, 2010 at 10:08 pm

OMG!!! Good luck on the Bikram scholarship. A good friend of mine got offered it one year and ended up declining it! I so wished I was in her position (no pun intended)! Seriously, crossing my fingers for you!

  11. Chelsea @ One Healthy Munchkin on June 24, 2010 at 10:18 pm

That would be so cool if you became a yoga instructor! Good luck on getting the scholarship. You totally deserve it girl. 🙂

  12. Melissa (MelissaLikesToEat) on June 24, 2010 at 10:20 pm

I would go to cooking school for sure!

  13. Suzanne on June 24, 2010 at 10:48 pm

I’d probably go back and do Charms or Potions. I don’t think I’d like arithmancy or runes…

In the muggle world, I’d do archaeology. I’ve actually done a couple of digs, and well, I dug it 😉 Nearly all archaeologists today teach, and I wasn’t interested in being a prof, so there went the dream. But think about what an awesome enterprise it’d be: you get to exercise your mind and your body. Data analysis, history, all kinds of fun intellectual activity plus in the field you get to be outside and work the bod (pickaxe swings, holler).

Also, from a few posts ago, did you say what your fave strength training move was? I’m sure you did, but I can’t find it, thanks!

  14. Jos on June 24, 2010 at 11:13 pm

Hi, I stumbled upon your blog and love it! To answer your question, I’d love to study in Pharmaceutical/Health so I can get a better job in the future. I never tried Bikram yoga. The only yoga training I have so far is from P90X.

  15. maxinthegym on June 24, 2010 at 11:24 pm

I would love to become a proper yoga instructor 🙂 I hope you get the scholarship!

  16. chocolatecoatedrunner on June 24, 2010 at 11:59 pm

I’m currently in undergrad school now at 19 yrs old =) But my major is nutrition and im still deciding what ot minor in… I’m really interested in music/acting/singing/ dancing!

  17. Jenn (Jenn's Menu and Lifestyle Blog) on June 25, 2010 at 1:00 am

Yum, I LOVE Amy’s light in sodium frozen meals, they’re so tasty and low in cals.

I’d go to law school, given the time and opportunity.

I am finishing up my MBA right now. However, I would love to go back for art, especially specializing in museum education.

  19. Lindsay on June 25, 2010 at 1:14 am

Good luck with the scholarship! That sounds like fun.

I’d go to medical school. But the amount of loans I’d have to take out and even the cost of taking prerequisites (from a university) are intimidating. So, I’m more practically planning to go to nursing school.

  20. Saima on June 25, 2010 at 1:28 am

I will be graduating with my masters in Speech-Language Pathology come December. Secretly, i’d love to go to med school…..but its soo not feasible right now on many accounts!! *sniff sniff*

  21. molly (the particular kitchen) on June 25, 2010 at 2:23 am

How are feeling today after the soy? I avoid the soy products in Amy’s stuff too because I have an intolerance, but do you have an allergy/intolerance as well? Could be if it is making your tummy upset…

    • Fitnessista on June 25, 2010 at 8:11 am

i feel ok today, my stomach hurt a little last night but i think because the amount of tofu was pretty small, it wasn’t too bad. i think i have an intolerance but not a full-up allergy, because i can eat it, but prefer not to because it makes me feel icky

  22. Becci@gonefrutti on June 25, 2010 at 4:48 am

I would love to go to 105 degrees and get my chef certificate, I’m working on manifesting it. How did you find it there?? If you had the choice would you do it again?

Yoga teacher sounds cool, good luck! I tried a class one or twice and found I had no idea what I was doing and the teachers didn’t help me 🙁 There are so many signs in my life that this is def something I have to try again.

    • Fitnessista on June 25, 2010 at 8:10 am

i loved it. really. if i had the $ and ability to leave the house/dogs for the amount of time, i would be doing the level 2 cert this fall.
if you have any questions, please email me and tell dara i said hello 🙂

  23. rachael on June 25, 2010 at 8:12 am

Good luck with the Bikram scholarship! I loved getting my 200 hr yoga cert. I would like to do one of the Baptiste trainings somewhere tropical but I don’t think that will happen anytime soon. I am slowly working on my masters too which I am really excited about but it’s a long road as a working mama!

  24. Danielle on June 25, 2010 at 8:39 am

totally off topic, but I think you should audition for Oprahs open casting call to get your own talk show. You seem to have a great personality and you are so chock full of awesome info, I think you would be amazing!!! Go for it girl!!! Love your blog!!

  25. CaSaundra on June 25, 2010 at 9:23 am

I’m still dying to try your macaroons–hopefully you’re bringing some to Chicago!? 🙂

    • Fitnessista on June 25, 2010 at 9:30 am

yes! i’m going to bring a ton and keep them in the hotel room- whoever wants some can stop on by 🙂

  26. Rosa on June 25, 2010 at 9:54 am

photography. If it weren’t for the hubby and 3 kids needing my financial contribution, I would leave the law and become a wedding photographer. I am obsessed.

I wish you the best and hope you get your scholarship. You deserve it.

  27. Lauren W. on June 25, 2010 at 9:57 am

Ahhh! So amazing about possibly becoming a Bikram teacher! I don’t know what you have to do to apply, but is there any way us bloggies can help? I’d totally petition and write some reccommendations on why they should pick you! As long as you taught at least once in NYC. 🙂 Good luck! xo

    • Fitnessista on June 25, 2010 at 10:55 am

      hey girl,
thank you! i’m not sure.. i’ll check on that 🙂 i may ask you guys to help me out and if it happened, yes i would come and teach once in nyc 😉
      xoxo

  28. Marissa on June 25, 2010 at 10:04 am

I love candles! But I don’t like ones that smell like flowers… mostly because I don’t really like the smell of flowers. My favorites are (unsurprisingly) foodie candles like apple pie, pumpkin spice, hazelnut coffee…

    • Fitnessista on June 25, 2010 at 10:54 am

ahhh i love cupcake and cookie dough scented candles 🙂

  29. SIMI on June 25, 2010 at 10:34 am

Ahhhh where can we get your roons recipe??!?!?!? 🙂

    • Fitnessista on June 25, 2010 at 10:53 am

      deep inside my brain.
      buahaha 🙂

  30. Shannon on June 25, 2010 at 11:01 am

The idea of a candle & yoga now sounds AWESOME! Is it 5pm yet? haha. I am going back to grad school for a total career switch (CPA to speech pathologist) this fall. The money side of it really freaks me out (loans, no salary for 2 years), but I know it’s the right thing for me 🙂 Good luck with the scholarship!

  31. crystal on June 25, 2010 at 11:49 am

10gs yikes that just crazy! I have my fingers crossed for the scholarship- that would be awesome!

  32. Jen on June 25, 2010 at 12:06 pm

I just finished my Masters of Education to become a reading specialist, which was a pretty big step for me. What I would really love to do is become a certified fitness instructor. Because I love teaching and fitness, I think it would be the perfect job! Do you have any suggestions for ways to get certified?

My husband is currently going through some caeer struggles and I know that what would make him happiest is to be a trainer/nutritionist. However, I think he is afraid to make the jump because of the pay cut and expense it would take to go back to school.

  33. Anne @ the doctor takes a wife on June 25, 2010 at 2:18 pm

I have a masters in music performance, but I would love to do something on the visual arts side, like photography. Who knows, maybe I”ll invest in the fancy schmancy camera and take some classes 🙂

  34. Monica on June 26, 2010 at 10:46 am

Those ‘roons look so delish! Cacao-almond butter? Be still my heart!

If I could go back to school for anything, it would be to get a PhD in 19th C. British Literature. I’m such an English geek at heart 🙂

  35. Dee on July 21, 2010 at 2:56 pm

I’m seeing this way late, but still… if I can swing it I really want to go back to school for my MFT- master’s in family therapy. Dreaming…

  36. Erica on February 8, 2012 at 12:47 pm

I randomly stumbled upon your blog and this particular entry today. Almost 2 years later! Did you ever do your bikram yoga teacher training? I finally took the plunge and started practicing bikram last September. It is my one true love! The perfect combination of exercise, therapy and wellness! I’ll never go back to any other type of yoga!
