In Curry Glory

Heyyyy 😀 Happy Friday! What do you have going on this weekend?? I’m off to ORLANDO this morning! My cousin is graduating High School so I’m going to cheer her on, see my nana and aunties (!), and perhaps do some shopping damage with my cousin 😉 (Speaking of shopping damage, I’ll have a post up on budgeting later this afternoon)

Last night, we celebrated Indian Food Wednesday with Shrimp Curry, brown rice and zucchini with eggplant sauce

For the shrimp curry, I heated some onion and frozen organic cauliflower on medium heat for about 7 minutes and added cumin, coriander, cayenne, sea salt and curry powder

Then added a can of drained organic diced tomatoes and a third of a jar of Trader Joe’s Curry Sauce (the same sauce that exploded in my suitcase last time I tried to bring some back from Tucson)

I let it heat through for about 10 minutes than added some shrimpies

and plopped it down in a bed of brown rice for each of us.

The zucchini were easy—just heated on medium heat with EVOO and stirred in some eggplant sauce (also from Trader Jizzles)

Ahhhmazing 😀

This morning, Ash and I did the Month 2 Circuit workout for Insanity (the same one I did Monday in the Bahamas) and it was glorious and horrifying at the same time. Haha.

    Ahh, makes me cry! I was married in the Bahamas 4 years ago! Looks like a great place you stayed. We stayed at the One and Only Ocean Club, it was unreal. I want to go back now! 🙂 Glad you had a great trip! Thanks for sharing!

    I have noticed that you are including more grains and carbs in your diet post vacation. Did you notice a change in energy levels during the vacation when you were eating less raw? It seems that you are including more foods that are energy foods and may aid in more recovery ie: oatmeal, tortillas, brown rice, smoked salmon. Don’t know if you even noticed, but it stood out to me 🙂

      hey carrie,
      i’ve been doing it on purpose- insanity burns a lot of calories (especially month 2!) so i’ve needed the extra fuel

    that sounds so yummy. I can never find that kind of curry mix type stuff. (i don’t have a trader joe’s or a whole foods near by.)

    You & your pilot are so cute. The pilot reminds me of my husband Kevin when he gives the tour of the suite on video…except ours was a video of our house. You were so lucky that it wasn’t crazy busy when you went. I didn’t see too many guests walking around in the video. Nice & secluded!

    you and the smoked salmon makes me laugh because I went to St. Lucia on my honeymoon in March and stayed at the Sandals Grande and I don’t eat seafood that often, but I had smoked salmon every morning at breakfast (with capers and lemon!) – it was sooo freaking good! maybe Sandals has their own special kind? with addictives, because it was all I could think about when I got home!

    Your dinner looks amazing. I am not a creative cook and definitely need a recipe when it comes to spices. Can you recommend amounts for the cumin, coriander, cayenne, sea salt and curry powder? thanks!

      it was about 2 t cumin, 1/4 t cayenne, 1/2 t curry, 1/2 t coriander, hefty sprinkle of sea salt

    Isn’t it amazing what a few days of R&R can do? I know when we came back from scouting our wedding location (Cabo Azul in San Jose del Cabo) I was so chill I was almost jelly! Amazeaballs really!!! lol

    Love the video!!

    I need to pick up some of that curry from Trader Joe’s. I saw some last time I was in the States, but I wasnt sure how good it would be. We really need to get Trader Joe’s in Canada. Pretty sure its the best place on Earth.
