I spoiled my dinner tonight….

in the best way possible.

After this afternoon’s acupuncture appointment –which was much-needed. I missed it!- I went to Whole Foods to grab a couple of things and get a smoothie since it was on the way home.

While I was there, my nana texted to see if I wanted to stop by the madre’s and say hi. When I got there, she had jalapeno poppers in the oven –half of them stuffed with goat cheese just for me- and beef and vegetable stew on the stove that she was making for dinner.

So nana, mom and I sat at the table and ate jalapeno poppers (the other half had cream cheese, cheddar and chorizo), chips and salsa, and pineapple juice mocktails. It was a lovely little appetizer hour.

Bonus: I was sent home with beef and veggie stew + poppers for the Pilot

Today’s tip: With all the extra January resolution-ers at the gym, also more germs! Little reminder to be extra mindful about wiping down equipment and washing your hands like crazy <3

    don’t know if you know, but i work at WFM now as their healthy eating specialist!! i just made green smoothies for the team members yesterday – banana, pineapple, green grapes, lots and lots of kale, and a splash of coconut milk. so similar to yours 🙂 can’t wait for the baaaaabyyyyy 😉

      Allison, I never even knew that Whole Foods had that position until a few weeks ago. Sounds like an amazing job! I want to look into the ones around here and see what’s available. 🙂

        yes!! it was added as a core value and launched in 2009 i think (as pilot testing…not to be confused with tom the pilot). they rolled out the position in all of the stores in 2010/2011, so most/if not all stores should have one now. i have to be certified and complete certain trainings in order to “practice,” so i have a lot of work ahead of me, but I’m enjoying it so much!!

          That sounds amazing, Allison! I just finished my Master’s in Elementary Education last summer and I have a teaching job now, but I’m not actually passionate about it and see it too much as work. I became vegan over the summer too and ever since then, I’ve started researching as much as I can about the plant-based way of eating and I love it so much!

          I just started a Healthy Eating Challenge at my local Whole Foods and the Healthy Eating Specialist is in charge of that. I’m going to follow my intuition and shift my career more towards something like this and it sounds like the perfect job. Will keep my eye out for this and other opportunities. Trying to decide if I should go study at the Center for Integrative Nutrition or what. Sounds like Whole Foods definitely gives you great opportunities to learn though. Thanks for the input. I’m glad that you’re enjoying it so much! 🙂

        yep!! i’ve only had it for about 3 weeks now. i really think it’s my dream job 🙂 and it’s true what the say – if you love what you do, you’ll never work a day in your life.

        My Grandma thinks you have to leave your cellphone plugged in all the time except when you are using it – like a ‘walkie’ phone. She can’t understand that you can actually use it away from the house and that this is why we gave it to her. She never takes it anywhere because she has a mental block about it needing to stay close to the house.

    Ooh that smoothie sounds amazing! I totally agree about the gym germs. I live in CO, so we don’t really ever have humidity. When I walked into the gym yesterday, however, I got punched in the face by a giant humid cloud of sweaty nastiness. Maybe I’m just paranoid, but it felt like I was being suffocated by sweat germs. So gross.

    It would be SO awesome if you could do like a “meal plan” with links to your foods. I Just LOVE what you eat… it is just so hard to go through everything to get it together. I know this might not be possible any time soon, considering all you have coming here any day now…. but you eat exactly how I want to, so, if it is possible EVER that would just be amazing. 🙂

    wow, you are right on with today’s tip! I have a sore throat, and I have no idea how that is because the weather has been really warm and I hardly get sick. It’s a big possibility I got it from the gym, bleh sometimes I forget to wash muh hands… anyways thanks for that.. would’ve never occured to me thats how i got sick!
    That green juice sounds mighty tasty, never had a tropical green juice before.

      it’s a seeded jalapeno stuffed with cheese. they’re usually breaded and fried, but madre broiled these ones sans breadcrumbs

    I have never thought of making a jalepeno poppers with goat cheese! Come to think of it, goat cheese tastes a lot like cream cheese (but wayyyy better).

    haha resolution-ers…. it’s good that more people are trying to get some fitness in their lives but it’s a zoo this time of year! It happens every year but by the end February it’s all back to normal lol

      “Most of the capsaicin, which is the substance that adds the heat to jalapeño peppers, is located in the white ribs that attach the seeds to the inside of the pepper. Including more of this part of the pepper will increase the heat, and removing more will made the pepper slightly milder.”

      Thank you ehow.com… if you clean out the peppers properly (and remove all the seeds) they really aren’t very spicy! I loooove me some poppers.

    Those poppers look great! SO sweet that she made goat cheese ones for you! And that juice looks so amazing, exactly what’s needed when you need a pick me up! I’ve never seen a juice station at my Whole Foods – I’ll have to look harder. Surely they wouldn’t deny us one??

    Umm I love that your nana texts. My favorite thing is when I taught my Daddy-o to text and he still to this day always ends it with “Love, Dad” as if I don’t know it’s him. It’s adorable and most would make fun of their parents but I just smile because he’s too darn precious. I tell him “Dad, I know it’s you.” He says, “you do?” I said yeah, because you’re in my phone as “Dad,” but feel free to still end your texts in the most adorable way because I don’t mind one bit 🙂
