Liv’s 2nd Birthday Party and the magical 321 cake

Spent the morning celebrating this little lady’s fabulous 2 years <3

Birthday girl 1 of 1 2

(My mom was holding her so she couldn’t fall)

Just like last year, we had a little family party here at the house on her actual birthdate, and waited until later to celebrate with all of our friends and family. It’s fun to split them up because her real birthday is fairly close to the holidays, and she gets to celebrate even longer 😉 Cake for a month? We’re all on board with that.

Since the trampoline park is her favorite spot, we knew it would be the perfect place for her birthday party.

The best part was that the tiny babies up to the adults (my brothers were having dunk contests and playing dodgeball in the dodgeball room) were able to jump and enjoy. It was a blast!

I took some pictures, but most of them look like this:

Livi is Frozen obsessed right now, so I set up a few of the party tables with Frozen theme.

Party table 1 of 1

The sparkly centerpieces were made using stems I got in the Christmas clearance section at Michaels. (Each little sparkly bouquet was less than $2 to make!) The tablecloth, tissue snowflakes and horns were from Amazon, the cupcakes and cake were from the Whole Foods bakery. I just added the figurines to the top of the ombre cake:

We ordered giant eegee’s subs for lunch, a lemon eegee’s party pack,

Subs and eegees 1 of 1

(eegee’s are a Tucson thing. They’re flavored slushies, and the deli sandwiches are amazing)

and the cooler was filled with juice pouches and coconut waters.

Drinks 1 of 1

I was excited to show you guys the little favor bags I put together, but just realized I forgot to snap a pic. Fail. They were little snowflake bags filled with Frozen figurines, crayons, bubbles, and Annie’s gummies. I made the name tags with the kids’ names and snowflake stickers. They came out so cute!

It was fun celebration for someone who makes our hearts so very happy <3

Singing w mom and dad 1 of 1

We were especially thankful that our Tucson family and friends could all be there, along with my MIL who came to celebrate us. It’s been wonderful having her here, especially since we’re moving soon.

We’re off to take her to a movie, but before I go, I have to tell you about this cake my mom brought over last night.

In a ziploc bag, you combine one box of chocolate cake mix and one box of angel food cake mix. She said you can mix and match different cake flavors.

It’s called a 3-2-1 cake:

3 tablespoons mix

2 tablespoons water

1 minute in the microwave.

Just lightly grease a coffee cup with nonstick spray:

add the mix,

321cake 1 of 1

water,

stir and zap.

321cake 1 of 1 3

It was life-changing. Perfect for a single serving sweet treat!

Hope you enjoy the rest of your day!

xoxo

My niece LOVES frozen too – that cake is beautiful! Do you think you could bake the wonderful serving sized treat you mentioned? I don’t have a microwave.

    • Fitnessista on January 20, 2014 at 5:02 pm

i definitely think you can but i’m not sure how long it would take

i don’t usually get boxed cake but I want to go to the store and try this out now 🙂 the party looks like so much fun! i now want to go watch Frozen.

    • Fitnessista on January 20, 2014 at 5:17 pm

i love getting boxed cake mix and jazzing it up with homemade frosting 🙂
and you HAVE to see frozen! we’ve seen it twice and it’s super cute. the music is wonderful too

      • Dominique @ Eat, Pray, Lift on January 20, 2014 at 5:53 pm

AMEN to the music. Idina Menzel is a vocal wizard.

        • Fitnessista on January 20, 2014 at 5:55 pm

she is beyond incredible. “let it go” gives me chills EVERY TIME… and i’ve heard it at least 1000 times haha

      • Amy on January 20, 2014 at 5:55 pm

I never understood boxed cake mix as a time saver- isn’t it just the dry ingredients pre-mixed together for you? I always have flour, sugar, baking soda, salt, cocoa powder, etc in the house that take 1.5 minutes to locate and whisk together so I feel like boxed mix is frivolous. Am I missing something?

        • Fitnessista on January 20, 2014 at 6:00 pm

there are pros and cons to both, which is why like using both. for gluten-free baking, boxed mix is a huge time saver.

          • Ali on January 20, 2014 at 8:16 pm

There’s boxed GF angel food cake mix? I’m ALL over that! I need to hit up a store with a good selection ASAP! I wanted to mention to Amy, as someone who doesn’t bake and has continuous, awful baking fails, boxed mixes are a way for me to make something nice for my family without having to throw food out constantly. I can cook but I absolutely cannot bake no matter how many times I try!

  6. Jackie on January 20, 2014 at 5:18 pm

I’m gonna have to try that mix!

  7. Sara @ LovingOnTheRun on January 20, 2014 at 5:28 pm

That is an awesome idea for a single serve cake! I will have to remember this later tonight when I am craving something sweet 🙂

  8. Diane on January 20, 2014 at 5:47 pm

How cute! Were the Frozen figurines from Amazon too? Were they normal ones or just for cakes? Love them!! HAPPY BIRTHDAY LIV!

    • Fitnessista on January 20, 2014 at 5:55 pm

no, my mom got those for liv! i just put them on the cake 🙂
      thank you <3

Aw, such a cute party! Happy birthday, Miss Liv! Glad you all got to celebrate together, and I have a feeling you’ll still end up all together pretty often….when you live near the beach, it’s great for bribing family to visit. 😉

Sharing that mug cake with my parents right now! They’re already obsessed with eggs-in-a-cup, so this will be the perfect complement.

    • Fitnessista on January 20, 2014 at 5:56 pm

i hope so! at least it’s a good spot for them to visit 🙂
hope your parents like the cake!
      xo

What an adorable party and omg 321 cake might change my life.
Also I’m super jealous of the trampoline park. I went to one for the first time a few months ago for a Trampoline AIRobics class and it was beyond fun.

  12. Clarice on January 20, 2014 at 6:02 pm

I LOVE the party decorations! Miss Liv has great taste! haha I’ve been obsessed with Frozen too, it’s such an amazing movie!! And that mug cake recipe is genius. Can’t wait to try it out with some funfetti cake mix:)

  13. Ali @ Peaches and Football on January 20, 2014 at 6:04 pm

I’ve done the 3-2-1 cake before and it works great!!!

  14. Katie @ Talk Less, Say More on January 20, 2014 at 6:17 pm

How fun!?! That’s definitely the sort of thing that’s great for the adults AND kiddos!

  15. Colleen on January 20, 2014 at 6:18 pm

How old was Livi when you started going to the trampoline park? We have one near our house that I’m DYING to try, but I wasn’t sure if my 18 month old would be completely pummelled by older jumpers.

    • Fitnessista on January 21, 2014 at 10:42 am

      she was about 19 months?
they have a little kid area!! under 4 only. we go pretty early when it isn’t crowded and will usually have the baby area to ourselves 🙂

  16. melissa on January 20, 2014 at 6:40 pm

Happy birthday Livi! LOve the frozen theme.

  17. Stephanie on January 20, 2014 at 8:12 pm

Too funny that I always tell you about my girl born 3 days before Livi and they wore the same shirt for their parties too! Gymboree right? My girl is her east coast twin 🙂

  18. Danica @ It's Progression on January 20, 2014 at 8:34 pm

such a cute idea for a party!! I swear adults have more fun on those trampolines than kids even do 🙂

  19. Cristal on January 20, 2014 at 8:51 pm

My daughter’s 3rd birthday is in March and I am also planning a Frozen party. We took her to see it at the theater for her very first experience and she is now obsessed! She goes around singing the same three lines from “Let it Go” over and over again! Your decorations were really cute. I’m glad Livi had such a great time on her birthday!

    • Fitnessista on January 21, 2014 at 10:41 am

      thank you!!
so many of her little friends are frozen-crazy too. amazon has a lot of awesome decorations!

  20. Livi on January 20, 2014 at 8:51 pm

oh my gosh I love that idea! I have some cake mix lying around that I never make because I don’t want to eat the whole thing– this will be perfect!!

    • Fitnessista on January 21, 2014 at 10:40 am

it’s great for easy portion control!

  21. Beverly on January 20, 2014 at 9:04 pm

This looks like SOOO much fun! We did a similar thing for our little man when he turned 2 and EVERYONE had such a great time. Not sure how to top that when he turns 3 in March… 🙂

On another note, I have a product that I was wondering if you would be interested in reviewing on your blog and offering a fantastic giveaway for your readers! It is completely unrelated to fitness and diet (no fads or cleanses here!). It is just a unique, sort of whimsical fashion thing…very fun and unique and I bet you would love it! I wasn’t able to find a way to contact you, but would love to send it your way to try!

send me an email- i’d love to hear more info!

      • Beverly on January 21, 2014 at 1:11 pm

What a sweet party!!! That cake is gorgeous!! You did such a nice job with the crafts–so creative!! Livi looks like such a big girl now!! Looks like so much fun!! And that single serve cake treat–yum!! I actually do that with straight up cocoa powder and stevia, add a tablespoon egg white then zap it in the micro. Totally quenches my raving sweet tooth.

  23. RachelG on January 20, 2014 at 9:14 pm

I definitely love everything about this post…even The Pilot’s slightly creeptastic smile at the end. lol! Happy birthday, Livi! 🙂

Happy Birthday, little miss! Looks like a blast! All the kids play/activity centres I’ve seen here in Brisbane are so dodgy. I wouldn’t send my dog there, let alone my child. That’s one thing I’m looking forward to in possibly moving to the States in the near future: great facilities!

Great job on the party, Mama! I’m trying to quickly organize a 1st birthday in the next couple of weeks… should be interesting!

    • Fitnessista on January 21, 2014 at 10:38 am

  32. Hannah on January 21, 2014 at 8:53 am

Looks like an awesome party! I hope she enjoyed herself and I hope you got a wee treat of an exhausted little girl at the end of it for an evening break! 😛

Love the cake idea too – I’m always looking for single serve ideas like this because if I bake a whole cake it seems to disappear!! Funny that isn’t it!

I’m in the UK and most of our cake mixes require oil / eggs etc – is this the kind of mix that you’re talking about too or do you guys in the US have cake mix that only requires you to add water?

    • Fitnessista on January 21, 2014 at 10:38 am

you need oil too, but for some reason the water works!

  33. Haley @Cupcakes and Sunshine on January 21, 2014 at 9:22 am

OH wow! This is great! I can’t wait to try the 321 cake out! And the party looks like a blast! What’s more fun then trampolines and Frozen? Happy, happy birthday again Livi! 🙂

Love the 3 2 1 cake idea! Send thanks to your madre!!

i will- i told her it would be a hit haha

  37. Julie on January 21, 2014 at 2:12 pm

that 321 cake looks awesome!! I will definitely be trying it soon 🙂

  38. Jacki on January 22, 2014 at 11:32 am

My Taryn turned three on Jan. 10, so we have the same set up with the small family party on the actual day, followed by a bigger party when I can come out of the Christmas coma. Unfortunately, our b-day spots in Flagstaff for January babies are pretty limited since you really have to be indoors. And we don’t have Eegee’s 🙁 But, we’re doing it at our gym this Saturday with a beach theme….if she can’t have an outdoor party, we’ll bring the outdoors inside!

    • Fitnessista on January 22, 2014 at 6:34 pm
