Lunch break cake

– I took tamales to work today. They were a huge hit, and while everyone was gushing about how amazing they were, I couldn’t take credit for the work. All I did to contribute was the tamale deal in the Taco Bell parking lot. Nana picked them up from our tamale man, and I picked them up from her while we were both out and about later that day.

For the record, the slow cooker makes an awesome makeshift steamer. I added a couple inches of water, a steamer basket, put the tamales in and the lid on, cranked the heat up to high and then back to low. The tamales stayed warm.. for the hour until they were gone 😉

-This is what I call “lunch break cake.” During my lunch break, Oliv and I ate lunch and I quickly put together this cake to take to a BBQ. Here’s the recipe: buy Bob’s Red Mill white cake mix, add in 3/4 bag of chocolate chips, make the mix as directed, bake in a Bundt pan and drizzle with the rest of the chocolate chips, melted.

“What do you call this cake?”

“Bundt. It’s a bundt.”

“Bunk?”

“Bundt.”

-I’ve posted about my work fails a few times before. Today, I was taking the towels from the weight room to the laundry closet -which is right in between the massage rooms- and as I was walking out, I accidentally slammed into the wall and the sound of the metal bin reverberated down the hall. Leave it to Gina to disrupt the zen.

-I’m so excited to read Jenna’s new book, I can hardly stand it.

-It was a pretty amazing afternoon/evening. After I got off work, we BBQed and swam with friends.  After her day of fun and swimming, Oliv crashed in my arms while I was putting her to bed. She only does this when she’s really tired, and when it happens, I’ll lay on the couch in the nursery with her for a little while. A sleeping baby, heavy on your chest, totally comfortable… it’s gotta be one of the best things in the world <3

    That cake looks super good!
    There is a batch of Rocky Road fudge sitting around my house taunting me…chocolate chips + sweetened condensed milk melted in the microwave, add mini marshmallows and nuts, pour in pan, chill. De-lish…and dangerous. 😉

    Sounds like an Awesome day! That cake looks so good… Makes me want to eat cake for lunch. I totally agree with you nothing beats a sleepy, snuggley baby!

    I love the bundt. a bundt pan is on my “bakeware to buy” list. it just makes any ‘ol thing seem fancy. and btw, your work fail totally cracked me up. I’ve been a mindless, clumsy bunkin lately. I slammed the top of my hand into a random garbage can on the sidewalk on my EARLY morning run yesterday (guess I was really sleep running – haha) and have an ugly swollen knuckle to show for it. thankfully, no one’s zen was disrupted 😉

    I love My Big Fat Greek Wedding! We used to tease my mom a lot after that movie came out…. she has the tendency to use Vicks to cure everything! Very similar to the Windex. Got a cold? Vicks. Got a sore throat? Vicks. Got a parking ticket, a problem at work, AND a party of 50 to cater for? Well, maybe the Vicks will make you feel drugged. LOL

    As for bundt cakes, my favorite go-to for bbqs, I like to crush oreo cookies over my cake. Yum! Your looks REALLY good!

    Ahhhhh help!!!! When she falls asleep in your arms and you put her in her crib asleep, how do you lay her down without her waking up? Everytime I try to put my daughter down like that, she wakes up crying. Any magical tips?????? Help!!!!!

    Quick dessert that my mom used to ALWAYS make in a bundt pan– a box of spice cake mix, and two cans of crushed pineapple. The syrupy fruit makes it super moist and deeeelicious 🙂

    That cake looks lovely! As for My Big Fat Greek Wedding quotes…my mom is ridiculous. When our dog was in the last months of her life a few years ago, she’d grow tumors as quickly as the vet could them them off—she was always sporting a naked patch and stitches. In my family, we tend to deal with tough stuff by finding things to laugh about, so my mom started calling the dog “Bibopsy” and asking if her twin was in the newest lump.

    Great idea to use the slow cooker as a steamer! I never thought of that! I am going to have to give it a try. Perfect for potlucks when you need your food to stay warm.

    The cake looks amazing! I was just thinking that I needed to break out the bundt pan sometime soon…it’s been a while!
