Make It Green

Hi guys 🙂 It’s SATURDAY! Yessssssss 🙂 What are you up to this weekend?

I’m pretty stoked because I slept like a baby last night. Can’t remember if I’ve mentioned it on the bloggy, but I haven’t been sleeping well lately. Well, last night was my night. I attribute the glorious sleep to the beautiful rain symphony going on outside our window. Thank you, rain!

I woke up to an Insanity workout with Jeni and Ashley (Plyo) and a green-ish breakfast cookie.

bfast cookie

-1/2 C oats

-1/2 bananner

-1/2 scoop vanilla Sun Warrior

-1/2 t spirulina (for the GREEN color)

-almond milk

-cinnmon, maca + vanilla

-1 Gina-sized tablespoon of almond butter

‘Twas glorious. I’ll never get sick of those things 😉

I ran to Wizzle to scare myself pick up a few things, and packed up some macaroonie goodness to send to friends.

Crunchy on the outside.. soft and chewy on the inside

Apple with mesquite and cinnamon

Lonchi:

Salad with Garlic Gold and my favorite dressing

and a stove-top version of my sweet potato black bean chili

Not too shabby 🙂

I’m going to take the puppers out and do some yoga. Tonight, I’m going to our friend Jayme’s house for dinner and then girls and I are checking out the new J-Lo movie- it looks hilarious.

    Glad you got some sleep! Rain is so peaceful at bed time. YUM to the macaroons and the stove top black bean chili. Sounds like you have some great plans in store- happy weekend

    Your lucky the rain was on the OUTSIDE of your window. haha. it’s been raining the last few days here and the window in our bedroom leaks, so its no fun at all…

    Awww sorry you’re not sleeping good. I hate that. My hubby was gone to a conference all week and I did not sleep very well! Booo…

    so my nutritionist and i have been discussing night time snacking lately and she told me about some of the latest research which suggests that eating a carb heavy snack or small breakfast like meal before going to bed not only fires up the metabolism (in a good way), but also promotes a more restful, deep nights sleep! Maybe that “1/2 b-fast before bed” is workin for you in other ways than just convenience!
    PS:one day I will try one of those bloody roons… i dont think you understand my obsession with macaroons, but I never make them cus the ingredients are so ‘spensive, argh. Happy MAY!

    Glad that you got a good nights rest! I need to look into the bedtime snack research that Mary Ann suggested because it is the opposite of what we hear so often. I would rather go to bed hungry than be to full. But, a little bedtime snack might help this! Have fun with your girls tonight!

    Hi Gina, I just had to tell you I made your eggplant curry last night and it was to die for! I love Indian food and have been looking for recipes that aren’t loaded with butter or oil. Not easy to find. Seriously, my husband (an omnivore) and I (a vegetarian) could not stop raving about it. I’m a new mom too, so I LOVED how simple and quick it was to make. I only wish the recipe yielded more so we could have had more leftovers, it was that good. I will definitely double the recipe next time. You are a culinary genius:) Can’t wait to make the carrot dish next. Please keep the healthy, simple recipes coming! Thank you so much.

    Woo-hoo for sleeping well. I usually sleep like a baby so whenever I can’t sleep I go insane. Glad to hear the rain helped you get a good nights rest.

    That chili is one of my favorite recipes! I make a ton and freeze it in serving sizes…and last time I made it and gave some to my boss. She LOVED it (well, duh)! Thanks for the recipe!
