Make you zucchini-banana pancakes…

I’m kind of obsessed with making pancakes for other people.

I’m pretty sure that nothing says “I love you” like a steaming plate of pancakes with butter and syrup.

Pancakes give me such fond memories of when I was growing up. Over the weekends, I would always wake up to the smell of mom cooking breakfast. Sometimes it was chorizo, beans, tortillas and eggs, other times, oatmeal with brown sugar and cinnamon rolls, omelets and fruit, or my personal favorite: banana pancakes. Kyle and I would have contests as to who could eat the most and we’d switch up our consumption methods: covered in syrup, plain, or topped with jelly and rolled into a taco. Eventually I got brave enough to start making pancakes for the family, and since then, I’ve always enjoyed making them for others.

The Pilot and I almost always dine together Sunday mornings, since it’s the one day a week we both don’t work and are able to spend a slow morning together. Sometimes we’ll enjoy it on the patio, other times we meet up with the family at Eclectic or another breakfast spot, but now, we also get to enjoy it with our littlest breakfast buddy.

And, for the first time ever, I got to make her some pancakes. She enjoyed them just as much as any breakfast- for now, she’s an adventurous little eater, for which I”m very thankful- but I don’t think she knew how much I loved making them for her.

Liv’s Zucchini-Banana Pancakes

-1 egg yolk

-Steamed zucchini (1 large, peeled and chopped)

-1 banana

-3/4 C oats

-1/2 C water

1. Mix all of the ingredients in a high-speed blender until smooth and creamy.

2. Cook on medium heat, for 2-3 minutes per side in your favorite healthy oil. I use coconut oil on the pan and wipe off the excess with a paper towel.

I’ll usually just keep an eye on the pancakes and when bubbles start to appear, it’s time to flip:

3. Let cool completely and store in the freezer until you want to reheat for a quick breakfast component. I put some parchment paper in between each pancake so they don’t get stuck together:

4. Serve to your baby and watch the cute little smiles 🙂 If it’s anything like our house, you’ll have to do 2-3 pieces at a time because one swift grab and they’ll all be going in. For Liv’s breakfast, I topped the pancake with fruit puree and cut it into small pieces for her to pinch up, and she also had scrambled egg yolk, soft apple and puffs.

Some tips:

-Check with your doc before introducing any new foods to your baby

-Liv is a few days shy of 10 months old and has been feeding herself and enjoying firmer solid foods for a couple of months. She has 4 teeth and is pretty great at mashing things. Even so, I gave her very small pieces and topped with a little fruit puree to soften. Use your best judgment <3

-If you’re sans kiddos, there is no reason why you shouldn’t make these for yourself. I ate one during the cooking process plain and it was pretty delicious- I would especially love them with almond butter and syrup. Bonus: sneaking veggies into breakfast!

    I can’t wait to make these! I have been feeding my 7 month old pancake “soldiers” dipped in goat kefir to soften and she loves them! I love how you added zucchini – I’m always looking for ways for her to get some green stuff 🙂

    Thank you so much for sharing this! I love all these food udpates, I need to bookmark them all for Evan. You seem to handle her growing up so well. I find myself a huge mushy teary mess so often because he is growing too quickly and I feel like I’m always missing something (even though when I’m home he can be found in my arms, wrapped in the moby on my chest or on my lap).

    Motherhood is so worth it. Blah there are those water things in my eyes again.

    I’m not a fan of pancakes because I find them to be too heavy. But these? Seriously I’m making them soonest! I love zucchini and love bananas so this could be a total win for me. Thanks Gina!

    I am all about the zucchini-banana combo! In the past few months I’ve made both a cake and a bread with that flavor combo. Pancakes – great idea!

    Pancakes and puffs are like baby crack! Banana and zucchini is such a yummy combo. We often add carrots, sweet potato, butternut squash and whatever veggie is leftover to pancakes, cakes and muffins. Always good to add an extra veggie not just for nutrition but because it makes baked goods so moist.

    I can most definitely relate- I LOVE cooking for others and pancakes feel especially good! I always force people to eat pancakes when they are staying at my place 😉

    Your pancakes look so fluffy and I love the added veggies and fruit! I was reading that babies under 1 year can eat egg yolks, not the whites, not sure why, but I see you know to only give Livi egg yolks. Very cool!

      yeah, egg whites are highly allergenic, so they suggest avoiding them 🙂

    I just saw someone post about baking their pancakes as mini pancakes in a muffin tin. I did this this morning and they were done when Liv was ready to eat breakfast. Easy to do one handed and I didn’t have to stand and flip. Total timesaver and I wish I would have thought of it!!

    I have been looking for a good baby pancake recipe and these look perfect! Quick question- the recipe says steamed zucchini but the vitamix pic looks like raw zucchini. Did you steam it in big chunks?

    Love the taste and healthy ingredients. Any suggestions on how to make them cook through? I must be doing something wrong. I’ve tried 2 separate batches because they didn’t cook through, and when I tried to cook them longer, they burned. I used a gas range on medium heat, but the middle was extremely wet. I tried different cooking times, too, and even did a long low heat cook. Any help is much appreciated! I really want these to work. 🙂 Thanks!

    i just made these and they did not turn out :(…the first blended batch was SUPER thin, so I added another banana and they’re still too thin, i still tried cooking them but the batter was so thin they aren’t cooking right 🙁

    Hi Gina!

    I seem to be having the same problem as Brenna with the pancakes 🙁 They seemed to cook on the outside fairly quick and then did not cook at all on the inside, was still raw liquidy mixture. This happened whether I cooked them for 10+ minutes on low to medium heat or turned the heat up high (which made the outside burn). I used quick cook oats, do you think that was the issue? Like Brenna I would love to make them work, so any help is appreciated! 🙂

    I’m totally confused because they weren’t even that thick and yet the insides just were not cooking!
