My Moonie Pie + Roons For a Cause

Hey guys! How’s your day going?? I am blown away by your amazing donations to my aunt’s relay page—thank you so much <3  (More info + Roons For a Cause at the bottom of this post)

So today, I had a little bit fun with Heather’s Moonie Pie Challenge. 🙂

Behold, the Almond Butter Crunch Moonie Pie

(I still have to cover it with raw chocolate ganache, but they’re in the freezer waiting to be frosted!)

The gist of the Moon Pie Challenge is that you purchase Heather’s ebook (which has the recipe), make your own variation of it, and post about it on the blog.

I couldn’t wait to get started 😀

First, I put the cashews and dates to soak:

Then made the dough:

I added in some coconut flakes to give it some “crunch” and made the bottom layer.

Next, the almond butter “fluff” (added 3 T almond butter, 1/2 T nutritional yeast and nixed the lecithin)

If you’re wondering if I had any, I think we all know what the answer to that is 😉 Quality control is muy importante.

Today has actually been a super productive day. I moved all of the furniture out of one of the guest rooms (by MYSELF. I feel like a little hardcore, haha) so Ashley and I have room to do the Insanity workouts in there. I did the Fit Test today (which made me feel extremely out of shape, but it was a lot of fun!) and also took the puppers on a base trail walk.

I even gave corn chip a bath:

Time to head to work for a little while and then teach Zumba.

    Gina-
    I was curious what kind of KitchenAid mixer you have. I want to ask for one for my birthday, but didn’t realize there were so many models. Do you like the one you have or would you suggest something else? These treats look amazing!!! (as usual)

    i can’t wait to hear what you think about the insanity workout! a lot of times when i was training i’d hear about these extreme workouts that kill people to get them in shape, but they’re so hard to stick with because they’re so difficult! i’d love to hear your thoughts…

      i can already tell that i probably wouldn’t recommend them to the average jane. i think they’re geared for already very athletic people… if i tried these when i was first starting on my weight loss journey, i would have been so discouraged. i’ll definitely post a full review when we’re done with the program

    i cant wait to hear about your success with insanity. I am kind of jealous, because i would love to do the program but literally have no space in my tiny nyc apt to work out. when i move to a bigger place, i think i will definitely have to get the dvds.

    Oh girl that looks sooo good!! How do you make time for so much!?! Good luck with insanity, right now I am actually doing Jillian Michaels “Making the Cut” program and though the workouts are pretty insane I am seeing awesome results!!! Can’t wait to hear about you Insane results!!

      i usually plan my days out in the morning, just so i have time to do everything i want to do 🙂 it keeps me from slacking around, too 🙂

    Oh Insanity FIT TEST…it killed me as well! I started the full blown program this morning. Today was a wee bit painful but it felt incredible to complete.

    I’ll be posting each day on my blog about my Insanity journey. Oh it shall be grand!

    Can’t wait to hear how you like the Insanity program! It sounds intense!

    I just started the Physique 57 DVD program, and I love it so far! It’s really fun AND effective! I love changing up my at-home workouts, and I don’t think it’s possible to have too many workout DVD’s. 😉

    Your moon pie looks awesome! I’ve never had a real one, so I wouldn’t even know where to start! But I’m pretty sure I’d like your version more than the traditional one anyway!

    Your moon pie looks fantastic! I think it is so funny how to refer to your pupper as “corn chip”. That is truly the smell, isn’t it? My pup’s feet are the strongest – and I always ask him if he’s been walking in Fritos! Or I simply call him Frito Feet.

    I love that you call your dog corn chip (she looks like velvet now, by the way!) I call my dog Frito when she smells like chips – why is that dogs smell that way when they get dirty?

    I made a donation to help your aunt reach her goal, but I do not need any macaroons (although I am sure they are amazing and am dying to try some haha). I just want to say that I really hope that we find the cure for cancer, and that all of these donations help that and help families who need it in their time of need. We have been fighting hard for so many years- we have to find the cure soon, right?

    I know how your feeling. I felt ridiculously out of shape after doing the insanity fit test too!! And I know I’m not…it’s just something new that we aren’t used to but it’s good to change it up once and awhile 🙂 I think the exact words out of my mouth after one insanity workout was “running 13 miles is easier to me than this is!!”

    And your moon pie looks so yummy!!

      that’s so true! it would be so much easier to chill on the elliptical for 3 hours or run a half marathon than those 25 minutes of craziness

    I. LOVEEEEELOVEEELOVEEEE this. I tried warmed dates stuffed with almond butter yesterday and was thinking about making something JUST Like this haha. I wanted to make a date crust with some sort of almond fluff. I wasn’t sure how to go about it, so this is perfect! Love the combination!

    Nice substitutions. I think that’s the best moonie pie entry I’ve seen so far, even while it’s naked. You need to put a chocolate robe on that bad boy 🙂
