Outside the tortilla

Last night’s enchilada’s were a little different than the usual chicken or veg that I’ll make.

I’ll usually serve them with rice and beans, but last night the rice and beans were inside the enchi’s <—an idea I got from my “Cooking for Isaiah” cookbook

In all my years of enchiladas, I’d never tried them this way and was a big fan. The Pilot loved it, too.

Just started off with a purple onion, the corn from two cobs, garlic, sea salt and pepper

Added to that 2 cups of brown rice, cooked, cumin, chili powder, black beans, splash of lime juice and sliced grape tomatoes

Sauce was a la jar, mixed with some homemade salsa, his side was topped with a blanket of cheese. So good. It was my first time using blue corn tortillas for the wrappers, and while the taste was awesome, they fell apart a little more easily than the regular corn tortillas.

After we feasted, we ran a couple of errands and then came home to online shop for desks. We really want to get the office put together before Christmas, and whilst perusing Amazon, we came across these little gems:

How a desk was originally priced the same as a car I will never know. Unless it gives me magical powers…. then I would like it. We didn’t end up finding a desk, but got a pretty good laugh out of our shopping endeavors, and called it a night.

Winter is pretty much the only time I don’t mind seeing the sun rise

and I’m about to make some bfast and head to work.

    It always amazes me how much you still cook and keep this blog going while pregnant. I nearly dropped off the face of the Blogosphere when I was preggers. I also would gag when I tried to cook, much less blog about it. I’m totally impressed 🙂

    That Beyonce song is THE JAM. She’s flawless. I feel like I haven’t seen too many pictures of her baby bump, but I can’t imagine her doing pregnancy in anything but complete style 🙂

    Enchiladas look so yum, and holy cow, a 30K desk? I wonder if the drawers are full of dolla bills…

    Holy cow! I’m really hoping that desk was some sort of typo error on their part because I would never buy that desk even if I was loaded! Oh and great idea on the enchiladas. I’ve never made them with all the fixins inside either 🙂

    HA – what’s kinda funny/sad is that I bet somewhere, someone actually PAID that much for the desk. Personally I can think of 26000 better ways to spend money but hey.

    And I actually NEED a computer desk now. Wonder how that would look in my tiny apt. I’d be soooo stylish 😉

    My pre-mommy career was as a commercial designer, so I’m pretty familiar with office furniture. Bush (the brand of that desk) is not high end and not particularly well made. Most of their pieces retail for just a few hundred dollars, so I think that $26,000 was a big, whopping mistake!! Pretty funny though 🙂

    And those enchiladas look de-lish!

    I just laughed out loud at those desks – the book one is pretty sweet, especially with the bulldog statue.

    Are most caned enchilada sauces similar? And they always seem to be vegan, is this correct? I’ve only used the Trader Joes brand before but just moved far away from a TJs (sad day) and need a replacement.

      Also – do you ever use nutritional yeast in your mexican food? I hear it can be a nice cheese-ish substitute, but I have never tried it.

        aaaah! nooch is such great stuff! i would totally throw some in when you want a little extra kick. it does have a great nutritional profile as well- i think it has 8 grams of protein/serving.

    LOL @ the $26,000 desk !!! And now you have me really wanting some enchiladas … but our volleyball team’s playoffs are tonight, and they do like a pizza/sub party for the league, so Mexican food will have to hold off til tomorrow maybe ?? (: (:

    What kind of sauce did you buy? Since I moved from the south, I can’t find good (or any!) enchillada sauces in the grocery stores.

    Ha, those desks are redic [for different reasons] 😛 My Dear works for Amazon so that’s usually where we check first for anything… Great selection, tons of options, but you’ll def find some “gems” 😛

    “leather bound books and rich mahogany” – I had a laptop case that was made to look like that for my 13 inch. But I upgraded and they don’t make them in 17″ sizes but that is a cool concept!

    Omg those enchiladas look delicious!! I eat the ones from TJs all the time that have black beans, corn and tofu in them… they’re my fave and just so happen to be GF and Vegan! I’m not going to lie though- the pilot’s blanket of cheese looks pretty incredible! And omg 99% off?? That’s crazy!

    I really want to try those blue corn tortillas! Unfortunately us on the east coast have very limited tortilla options…. SO sad because I LOVE wraps and tortillas!!

    omg – I just tried the hot bar at my Whole Paycheck. Until I started reading your blog, I was not even aware of the amazingness! It was a South American-themed bar, and all I remember now is how unbelievably delicious the chicken and rice was. It makes me want to forget to pack a lunch every day…

    Thanks for including the link about the worst diet scams of 2011. I have a coworker who did the homeopathic version of the HGC diet. Of course anyone will lose weight eating only 500 calories a day. She kept insisting the HGC keeps you from being hungry. I think it’s a normal response to fasting. She did lose weight and has kept most of it off so far. It would be interesting to see how much weight lose was muscle vs. fat.

        I mean HCG, not HGC! I believe the FDA is taking all the HCG “supplements” off the market.
