PRO Meals: Salmon Cakes

Happy Monday! Anything exciting happening this week? I’m not sure what we’re up to today, but the weather’s been gorgeous so I’ll probably see if some friends want to meet up at the splash pad or zoo. I do know that we’re having these salmon cakes for lunch, though. Recipe to follow!

Around the House

I’m kind of stoked to have a week without official plans. According to our calendar, it’s already Halloween (then the holiday hubbub begins) so it’s refreshing to have a little downtime. We have some fun (and not-so-fun) projects we’ve been working on around the house, and after cleaning the garage, we decided to keep our piano. I suggested painting it. I was hinting that maybe the Pilot would want to do it, but he hinted that I’ll be learning how to use a sander 😉

We got a new rug for the formal living room, and I’d love to paint the piano a cool yet neutral color to match. I was planning on giving it away or selling it since it’s just been sitting in the garage, but it still works great, I can play (even though it’s been a while), and if Liv wants to play later, we’ll have a piano for her to practice. 

Salmon Cakes

Salmon and sweet potato cakes for a delicious, healthy, make-ahead meal!

Fish in a can has always freaked me out a little, but I got realllyyyy into anchovies when I was pregnant. Since then, it doesn’t bother me quite as much. It’s not a regular purchase (canned fish from sustainable sources can be wicked expensive and there’s also the whole BPA issue from the can), but it’s a nice way to switch things up every now and again.

I made these salmon cakes as part of the meal prep for this week for an easy PRO meal (PROduce and PROtein). Salmon and sweet potato are one of my favorite combos for dinner (and lunch, and life), so I combined them into a tasty patty mixture,

and then pan-fried until crispy.

I made a huge batch and froze them so they can quickly be reheated for a protein-packed snack or lunch component.

Salmon Cakes

A healthy protein-packed meal or snack option, with a slightly sweet twist!

  • Prep Time: 40
  • Cook Time: 6
  • Total Time: 46 minutes
  • Yield: 16 1x

Ingredients

Scale
  • 2 6-oz cans of salmon (no skin or bones)
  • 6 oz cooked sweet potato flesh
  • 1/2 cup almond meal
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried mustard
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Juice of 1/2 lemon
  • 2 tablespoons chopped parsley

Instructions

  1. Combine all ingredients in a large bowl
  2. Form into patties and place in the fridge for about 30 minutes to set
  3. Cook in a pan or on an electric griddle with a little butter, ghee or coconut oil
  4. Enjoy with your favorite veggies or atop a green salad
  5. Freeze any leftovers for a quick and delicious meal later in the week!

    I wonder if these would be good with chicken replacing the fish, I’m not a fish fan but think these would be great with chicken!

    I always love finding new recipes for salmon because grilled salmon all the time can get boring. Sanding a piano? Good luck girl!

    Yes to pianos! I love when people have pianos in their house. I grew up with a nice Steinway and Sons piano and can’t wait to take it out of storage (my grandma’s house) to place it in my own when that time come! 🙂

    This looks very good and excellent that you can freeze these. I recently made shrimp cakes but baked them in a muffin pan. I agree that fish in a can is a little freaky.

    Hey Gina! Love your site, as always, but wanted to make a request. You used to post a lot of awesome vegetarian and vegan recipe options, which we’re always so easy to make and delicious. Any plans to post some more? You have such great dinner ideas, but I’ve noticed more meat and fish lately, so I was hoping us veggies can get a little something too. Thanks, you’re the best :).

    I love fish – but hubby really only likes fish that is really really really fresh, so it isn’t a common grocery purchase.

    I would never think to make ahead something like that, but those look really good. I love salmon, but I’ve never had the kind in a can. You should definitely keep the piano and maybe do a shabby-chic white wash to it. That’s what my piano looks like, so I’m a huge fan haha.

    Meant to leave this comment earlier, but when you mentioned your new running shoe trouble, I immediately wondered if you’d do with with the new Brooks Ravenna 4s.

    I just swapped out my worn out Asics for a pair and they’re perfect for in between feet — needing a little support but dreading a clunky ugly shoe with too much support. Loving them so far!

    This recipe looks great! My mom made us salmon cakes all the time when I was a kid, but the addition of sweet potato makes them sound even more delicious. I wanted to point out, though, that if you don’t mind a little crunch of the bones (they’re actually pretty soft), they’re totally safe to eat and are a really great source of calcium. Twice as much calcium per gram as milk, actually. 🙂

      that’s good to know! i don’t mind the bones in anchovies, but in salmon it always creeped me out for some reason

    I actually love canned fish, esp salmon. Those sound great!

    You should definitely keep the piano for Liv! Even if you just teach her to play chop sticks, she’ll have fun with it. Great “growing up” memories for me!

    My hubby and I (well, mostly him) refinished a piano! Take my word for it–pay someone to do it! It was sooo much work sanding it down and refinishing. It looks gorgeous now and I’m so glad we have it. I love that he worked so hard finishing it up for me and it’s a really special piece of furniture now. It was just SO much work and was not enjoyable.

    I rarely play anymore, but it’s do nice to have a piano in your home. I plan on having our kids take piano lessons at least for a little while. It’s a good musical background to have even if they choose not to continue.
