Pumpkin Banana Oat Blender Pancakes

Who’s stoked for Thanksgiving?! *raises pie fork in the air* I have a Thanksgiving-friendly pumpkin breakfast recipe for you today.

The morning of a holiday, I like to have a protein-heavy breakfast. I feel more satisfied, and also prefer enjoying a healthy meal before the avalanche of sweets and heavy foods occurs. 

Healthy Pumpkin Pancakes

These pumpkin pancakes are basically everything you could wish for in a healthy breakfast: protein, smart carbs, healthy fats, filling fiber, and a dose of nutrients. They have great staying power, and are a quick “blend and cook” kinda breakfast.

I took my beloved banana-egg-oat pancakes and fall-ified them with some pumpkin and spices, natch.

A fall twist on the beloved 3-ingredient pancakes

  • Prep Time: 5
  • Cook Time: 5
  • Total Time: 10 minutes

Ingredients

Scale
  • 2 eggs
  • 1 banana
  • 1/2 cup oats
  • 1 heaping tablespoon chia seeds
  • 2 tablespoons pure pumpkin puree
  • 1/2 teaspoon pumpkin spice
  • pinch of sea salt
  • 1 teaspoon vanilla
  • Maple syrup to serve

Instructions

  1. 1. In a high-speed blender, blend all of the ingredients until smooth.
  2. 2. Heat a large pan to medium, and add some butter or coconut oil to the pan.
  3. 3. Cook the pancake batter in small or large circular shapes in the pan, flipping when the edges are dry and bubbles start to appear on the surface.
  4. 4. Cook for 1-2 minutes on the opposite side. Repeat with the remaining batter.
  5. 5. Serve hot with butter and maple syrup.

    There is something so visually satisfying about seeing a mountain of pancakes cut into, with a nice little corner wedge 🙂 They look soooo yummy! Maybe I’ll make after thanksgiving….with PIE leftovers!

    Those pancakes look sooo good! Add some chopped pecans and I think they’d be my favorite, yumm.

    UGH I’m a sucker for all things pancakes, but one of my all time favorites are these raspberry walnut pancakes from a Charlotte spot called Toast. The batter is made with mashed raspberries!

    Love the idea of having such a healthy/protein-packed breakfast on the morning of a holiday! These look delicious.

    The dessert I’m most looking forward to is my husband’s homemade pies. He makes the most amazing berry pies and and apple pies (the apple pie he makes has whole wheat crust!) 😀

    These were great! I happened to have the week off work and everything on hand, so I made them today and yesterday–first topped with cottage cheese and pomegranate seeds and then with AB and pomegranate seeds. Both excellent. Thanks!
