Liv’s favorite soup

Blogging from bed- still feeling a little under the weather, but still fighting it with everything I’ve got.

(gotta love the baby bangs- after my post-baby hair loss, it’s on it’s way back)

The only thing that really sounds good:

Soup… and coffee. Oh, and chocolate.

I have no idea why I don’t make soup more often (besides when it’s not 104* like it was today)- it really is an easy meal, one pot, and you can get in a ton of veggies and protein.

Don’t you just want to dive in?!

All I did was sauté an chopped onion, 2 ribs of chopped celery, 2 chopped zucchini and some garlic in a little olive oil:

Seasoned it with pepper, oregano, garlic powder and added a container of low-sodium chicken broth, a shredded rotisserie chicken, a few sprigs of rosemary

Let it simmer for an hour or so before adding a drained giant can of garbzano beans, scooped some out for Liv, and then added sundried tomatoes, handfuls of spinach and lots of salt.

I held my bowl in front of my face to let the steam hit- giving myself an Italian facial as Kyle calls it, and then devoured.

As much as I loved the soup, the person that went even crazier for it was Oliv. I pureed some of the unsalted soup for her (garbazno beans, chicken, broth, veggies) and she loved it. I couldn’t feed her fast enough! Looks like we have a little foodie on our hands.

      My ENTIRE hairline (including the underside of my hair) looks like your little section of baby bangs! I lost EVERYTHING! It’s been a pure nightmare but as we approach my son’s first birthday in a week (omg) it’s alllmost all back.

        The same thing happened to me. My daughter is now 19 months old and the re-growth is just at the top of my ears. It’s like growing an entire head of new hair. I’m interested to see what happens when baby #2 arrives in just 2 months. I guess it will all fall out and I’ll get to do this all over again. No one told me about the hair loss and re-growth. 🙂

      You’re totally right. Most premade soups are PACKED with sodium and making your own is a great way to control that.

    This soup looks so good! I’m a soup lover, too, but it’s been so hot! I’m definitely going to save this soup for when the temp drops. Hope you’re feeling better!

    I made soup today too. And I also wonder why I don’t make it more often; so easy to just throw everything in the crock and let it do it’s thang. 🙂

    Soup = ideal freezer food. Make sure to stash some away. Always there, just ready to be unfrozen when you are having one of ‘those’ days.

      Oh and hope you feel better. We are having a flu epidemic here, it’s at the same level as the Swine Flu in 2009. I think I had my dose two weeks ago (it lasted two weeks – such a productive start to the uni semester). Now my neighbours on both sides have it (oops….).

    Hope you’re feeling better! I just came back from holidays in Nice (France) and again, no internet connection so i’m going to read all the posts i missed now 😀 i love soup too and i think it’s perfect for all time (i caught a cold last week so i think i’m gonna cook a lot of soups these days)

    Homemade soups are the best – I love how they almost always taste good no matter what you put in, and they make enough to last for a week!

    I loooooove soup. I do have a little trouble eating it during the summer because of the temperature outside, but during the fall/winter, it is my absolute FAVE.

    Isn’t it the worst to be sick with a little one? I’m at home full-time right now with her and unless my mother is free to help out or my husband could stay home from work I’m in trouble since it takes so much energy to care for her. Hope you feel better soon!

    This may not work for Olivia, but, pouring in a tablespoon or two of white wine while the veggies are sizzling and then finishing off the soup with a squeeze from half a lemon really ups the depth of flavor for chicken soup. It’s my family’s “secret” recipe. haha.

    On soup in the summer: The husband and I spent a couple days last week with friends up in the mountains and one of their kiddos got us both sick. I was totally making home made stock/ soup with the AC blasting. lol

    Reading that also… I had to put it down yesterday because I kind of get a little sad when my book is over. Such a fast read! My Mom is adopted, so it strikes a special cord with me. Unfortunately, by the time my Mom found her Mom (she had been searching most of her life), she had passed. Such a great story. I can’t wait to see how it finishes. ;0)
