Hey hey hey 🙂 How are you? Hope your day has been lovely. Thanks for all of your fabulous comments this morning- I’m so stoked to hear that the Brita filter works!

So the reason why I woke up early as ballz was because my work friends and I went to Miraval, one of the local health resorts.

lounge

Before leaving the casa, I packed up two gluten-free waffles with an egg puff, and put it in a baggie in my purse for later. I was SO glad I had it!

We spent the morning training some of Miraval’s retail employees- it was a lot of fun 🙂

After our training sesh, my manager had to take a conference call, so the rest of us went exploring.

YES PLEASE.

I’m kicking myself for not buying the Groupon they had a few weeks ago….

After the adventure, we stopped at Ike’s for a little caffeine boost:

(Rice Milk Chai)

and I came back to the casa to make some lunch.

Leftover lentil loaf with kale and 3 egg whites:

Thanks so much for your tips on how to get the lentil loaf to stick better next time (flax/chia egg and/or processing half the lentils in the food processor). I knew that Ange had made one (which took her a couple of trials and she perfected it), but figured I’d give it a whirl on my own. I need to remind myself that there’s no need to re-invent the wheel… if another blogger has created an amazing version, why mess with perfection? 🙂

I’m off to choreograph for a while and then teach!

See ya in the morning <3

xoxo

The kale looks great, I need to start eating it. It feels like the universe is telling me to eat it. Kale is the new spinach! (Modern Family) You inspired me to try my hand at Indian food. So, I thought I would tell you about Seeds of Change simmer sauces… they are AMAZING!! They are certified organic (a must!) they were $3.89 at my Whole Foods in Utah, and there is a $1.00 coupon on the Whole Foods Website. I hope you give them a try.

those 20 reasons to be happy – thing about loans–well damn I guess I should have just gotten loans and went to college instead of being an admin at 17 – so much for earning your money before spending it!

  17. Tina on March 9, 2011 at 9:05 pm

I’ve heard Miraval is AMAZING! Enjoy your time there!

  18. Averie (LoveVeggiesAndYoga) on March 9, 2011 at 9:22 pm

OUTDOOR yoga studio with mountain views = omg that is a gorgeous shot! I bet yoga would be sooo awesome right there! And in AZ, you have your own personal “bikram/hot yoga” studio for more than half the year. No need to invest in a heater with the weather there 🙂

I’ve heard awesome things about Miraval, too. How wonderful for you.

And reinventing the wheel…girl, I am so right there. Sometimes I want to make something on my own, make it my own, put my own spin on it, but then I go back and study what another blogger, cookbook author, or my mother or grandmother did, and i realize there is NO NEED to reinvent the wheel.

But with all that said, your lentil loaf (and angela’s!) both looked awesome!

  19. Ashley @ the fit academic on March 9, 2011 at 10:07 pm

wow – yoga with the mountain view sounds like my fave part!

OMG I’m so jealous you live so close to Miraval! That’s pretty much my dream holiday destination and my mum and I are planning a (late) graduation present trip to go there. I’ve looked at the website so many times and REALLY want to try some of the cooking classes that they offer. Everything looks so amazing!!

  32. Kara on March 10, 2011 at 9:21 am

I’ve been tempted multiple times to buy trips to Miraval on both http://www.jetsetter.com/sales and http://www.ruelala.com. don’t mean to fuel the shopping fire.. but I do… 🙂

also the blurb about Starbucks being on a health kick? so awesome. makes me feel less bad about my $5 chai everyday.

    • Kara on March 10, 2011 at 9:27 am

oh wait a sec.. is that link old? I skimmed it earlier but it just occurred to me that other things on the list happened awhile ago. weird.. wonder why they still have it on their site.

  33. April on March 10, 2011 at 9:31 am

Thanks for the link on the fish in Redondo Beach, i am from that area and when my friend (who still lives there) sent it to me yesterday i was DEVASTATED, but so happy to learn it was not from pollution, whew!!!! Still a frightening scene, but nonetheless relieved to hear the cause.

That resort looks amazing, sign me up!

  34. jenna on March 10, 2011 at 9:44 am

I’ve always wanted to visit that resort! it looks amazing!!! I hope you get to go and stay awhile soon. What a fun work trip!

  35. Lisa on March 10, 2011 at 9:58 am

Wow, swanky resort indeed! When I was last in northeastern India, there were a ton of “spiritual”/healing resorts that literally looked like magical palaces. You’d have an absolute field day there!

  36. Kat on March 10, 2011 at 11:36 am

so swanky! I want to stay there 🙂

    Hey Gina:

I really love the new (or new to me, at least) “you might also like” widget! I’ve been playing around on it, and at one point it took me to a post (“Sweet Day”)that included some delicious-looking raw cacao cayenne truffles. Unfortunately, I didn’t see a recipe anywhere. Any chance you could point me in the right direction?

    Thanks!
