Hey everyone! HAPPY FRIDAY! Hope you have something fun going on this weekend 😀

So last night, I didn’t have an appetite since my throat was killing me, so I made a simple kale salad to get some veggies in my life.

Kale, shallot, grape tomatoes, nama shoyu, cayenne, apple cider vinegar, a splash of agave and a drizzle of olive oil.

And ate it atop my legs while I watched Fools Rush In

And had 4 cups of scalding hot green tea:

Even though I had a blasty this past week, it felt SOOOOO good to crash out in our own bed, curled up with my puppies 🙂

We woke up and went on a 30 minute walk around the neighborhood and then came back for more tea, and an unpictured warm cookie from the dehydrator. I’m thinking another recipe test is in order because while the taste is spot-on, the texture isn’t quite right. I added too much agave and they’re a little on the gooey side.. so I’m gonna leave them in the dehydrator for the rest of the day and see if they dry out a little.

The plan for today:

  • Laundry and cleaning (blah!)
  • Take puppies to the vet to get ear drops
  • Workout (light cardio and weights)
  • Hit up the Main Squeeze for a wheat grass shot
  • Training appointment
  • Dinner with Ashley (and hopefully Meara and Kelly… I need to call those girls!)

I’m kinda worried because I have a 5k tomorrow morning and if I still feel like I do today, it might be a disaster.

    The last leg of the pom tour looks like so much fun. I’ve seen it on some other blogs but I cannot believe the entire process. Your pictures do make me want to drink some POM all day long. Hope you feel better so you can make your 5k! 🙂

    Aw so sorry to learn that you are sicky… no fun, but I know that kale salads are always the thing to get back to health quickly. Paired with a dose of Matthew Perry (always Chandler Bing to me too) is the best medicine, haha! If it makes you feel any better (or to gross you out, we’ll see which), while I was living in Peru and teaching at a very poor school, I actually got fleas and had them for a good month. All my kids were farmers kids and pretty much had two outfits total meaning I couldn’t get rid of those guys for a long long time.

    I hope the cookies turn out because they look super yummy!

    Best of luck on the run tomorrow and I know your gonna kick some booty!

    This might be a silly question, but are you just using raw kale for the salad? I’ve only eaten kale cooked, so I was curious.

    I hope that you feel better soon! Good luck in the 5k if you do it but health always comes first – so no worries if you don’t. 🙂

      not a silly question at all! yup, it’s raw kale. when you massage all the liquid ingredients with it, it wilts the kale down and gives it a “cooked” feeling

    A little while ago you made wraps with collard greens stuffed with veggies. I had that for lunch today, and it was fabuloso! I’ve never had collard greens before, and they are so yummy. I’m rather new to the clean eating, about 9 months. I grew up in a Mexican household as well with little fruits or veggies, other than the occasional apple or banana that would go bad, since it was never touched. So, I’m finding all new kinds of fruits and veggies I never even knew existed!

    I have a spin question.I have just started taking spin classes. They are intense and I am dripping with sweat after. I was wondering if you know a ballpark of how many calories are burned during a one hour class. I know there are a lot of factors, but for a small framed woman of 115 pounds what number is reasonable. I have seen everywhere from 300-900.

    Also I hope you feel better.

      so cool you just started taking spin! it’s one of my favorite workouts 😀
      i’d say around 550 if you’re really pushing yourself. that’s what i usually burn for harder classes: 450-550

    Hope you feel better! Go to sleep early if you can and see how you feel in the morning. Don’t push yourself if you don’t feel well. There’s always a 5K but your health is most important. Happy early birthday to the Pilot!

    Question: what’s the deal with KALE ?? I notice that you and other raw food folks seem to LOVE it for salads, etc. I have tried it and have nothing against it at all, but wonder why so many (raw) people seem to prefer it over other more traditional lettuce mixes ? Thank You !!

    That salad has me drooling! I love kale but we don’t ever get it in Saudi Arabia so it has become a distant memory…I love what you added into the salad, it would definitely take it over the delicious top!
