That’s a spicy ‘rita

Another amazing date night with that one good-looking guy I snagged over at Starbucks.

We dined at Acacia, which is quickly becoming one of our favorite spots. They have a great mix of the things we love, fantastic drinks, and locally-sourced organic produce and meat, which is a bonus.

Since our last Acacia dinner, I’ve had their spicy tropical margarita on my brain- made with infused jalapeño tequila.

In true date night fashion, I didn’t drag out the paparazzi camera and snap pics of our food, but I had to take one of the tomato basil soup in the cute coffee cup:

We shared sourdough bread with butter, the above soup (which was probably my favorite of the night), chicken dumplings with a cashew sauce, wasabi and ginger, and for my entree, I chose the corn custard with veggies while the Pilot had cioppino. They added a fun little Southwestern flair by topping the seafood with crispy tortilla strips. It was a fabulous meal with fabulous conversation, even though my throat was killing me from a day of teaching (I’m hoping it’s that, and that I’m not getting sick. I’m determined to ninja kick it in the face if I am).

It was a more challenging day as far as the usual classes go. One of the cool things about teaching at a resort is that everything you’ll be doing is new to the guests, since the majority is only there for a week or so. At the same time, it’s easy to get complacent, since you could do the same things every week and no one would really know. I get sick of my music and moves fairly quickly, so I try to have at least 1-2 new songs and choreography each week. A tough thing about the changing guests and participants is that you don’t have a set class that you “know” and can become familiar with their abilities as a group- it’s always changing.

When I taught at the base in Valdosta, I had a core group of participants for Zumba, spin and step. I knew what they were capable of, and how much more to push them each week. At the resort, it’s kind of like class roulette- you never know what you’re going to get. It’s scary and exciting at the same time. There have been times I’ve gone in to teach and have had to totally change my playlist (like today) or bust out my hardest hip hop songs because I found out quickly that they could handle it. You definitely have to adapt and go with the flow.

Killer post-Zumba lunch:

1/2 bag spinach, deli turkey, tomatoes, Meyer lemon olive oil, sea salt, 1 C quinoa

    I love teaching the same people because I can push them harder, but I am always easy with new people. Because one time a lady passed out on my class, and it scared the crap out of me!

      Nope, I still have the same gf mentality- gf for the most part, a little gluten every blue moon if it’s something I really want

    What a cute picture of the two of you! And your food (especially the soup and your post-Zumba salad) makes me want to run in the kitchen and prep! Strange question, but I was wondering how you work up the energy to have a date night? LOL My hubs and I have become such homebodies that we hardly work up the motivation to go out at night… I need some tips to keep things fresh! 🙂

    I have taken inspiration from your no-photos-date-night! So tempting with all the delicious food and drinks but makes it an extra special meal, dedicated t focusing on good conversation and good company.

    Your post-zumba lunch looks so delish. Love quiona, perfect protein to add to salads.

    You two are so cute! this restaurant looks fabulous. Jalapeño vodka? yes please! I also totally know what you mean about teaching and the playlist stuff. If I hear that Shake Señora song one more time, I may scream. very loud, too. I was also using Starships by Nikki Minaj as my warm-up for months, and I can’t even hear that one anymore, either, ha. I think it’s good you have your regulars and then some newbies.. always keeps YOU on your toes!!

    That lunch looks fabulous! I totally understand about your classes! I get sick of songs rather quickly but I definitely know what I’m going to get with each class because they’re usually pretty consistent! I know which classes I need to go easier on and kick it up for others! I imagine it must be challenging to never know what you’re going to get and have to adapt on the fly!

    hi Gina, longtime reader! this is an odd question I think, but what kind of deli turkey do you get? I have really mixed feelings about deli meat and keep reading different information from different places. I eat lots of salads but I love the occasional turkey sandwich. I buy organic deli meat, but my husband eats so many sandwiches and we can’t always afford to buy organic. What are your thoughts on that?

    Sounds like you had a really fun date night!

    That must be challenging to be changing up clients all the time. I love watching people progress over time. I guess it’s probably fun to be at a place where people are excited to try out new classes and exercises!

    Looks like your date night went great! Your guy is nice looking. Your job sounds like a lot fun. I think that taking group classes are great and have in the past taken classes like spinning, Pilates, Body Pump, etc. Haven’t tried Zumba yet but it sure looks like a lot of fun!

    spicy margarita….ummm, yes please!! jalapeno infused tequila alone doesn’t sound great but in the margarita mix, then….sounds like something I might need to try to recreate or find a place with one on the menu…
