The Best Kind of Biscuits

Morning! How are you? Hope your Monday is off to a great start 🙂 Thank you so much for the cleaning tips- I’m excited to see if I can get the beastly water stains outs 😉

The grillmaster DID make an appearance last night 😀

For the veg, I used asparagus, sweet onion, mushrooms and grape tomatoes, seasoned with sea salt, pepper, oregano, balsamic and olive oil and

The Pilot made himself some grass-fed organic burgers.

I had grand plans for these veggies:

I topped arugula with the grilled veggies, dressed with red wine vinegar, olive oil, sea salt and a hefty helping of goat cheese 🙂

This morning, I woke up and it was CHILLY outside. I love it- so does Bell

I was so stoked to try a new recipe for breakfast: Gluten-free almond biscuits!

When reader Leah sent me this recipe and said it was one of her favorites, I couldn’t wait to try it. Le’s be real- I’m a fan of any recipe that includes almond butter.

Here are the deets:

 Leah’s gluten-free almond biscuits

biscuits (2)

*2 1/2 C. Almond flour / meal               

*1/4 C. Oat flour (or spelt)

*1/2 tsp salt

*1/2 tsp baking soda

*1/8 C. grapeseed oil

*1/8 C. almond butter

*1/4 C. agave

*2 large eggs

*1 tsp lemon juice

Preheat oven to 350.

1) Combine dry ingredients

2) Whisk wet ingredients and pour into dry

3) Drop batter by the spoon full onto a parchment paper lined cookie sheet

4) Bake for 10-11 min until a little golden on top and a toothpick comes out mainly clean

The only changes I made:

-canola instead of grapeseed oil

-maple syrup instead of agave

-baked an extra 7ish minutes, since I made 6 giant biscuits instead of smaller ones 🙂

These are INCREDIBLE. The texture is fantastic –not grainy in the least- and they have a mildly sweet nutty flavor. Perfect for any sweet or savory meal. You’ll love them 😀

    here’s the thing. grilled veg+goat cheese+vinaigrette is my favorite food ever. I want to drown my sorrow in its awesomeness. I think it could cure herpes. Now I want one and I need to go shopping. You see the issue here?

    I love nights where we grill too because that means the BF is cooking! We’re thinking about getting one of those vegetable roaster pan thingys for the grill. We keeping looking at them everytime we’re at Crate and Barrel or William-Sonoma.

    I love biscuits — when I was a kid my parents called me the biscuit queen because I’d always have more than my fair share of biscuits or crescent rolls 🙂 There is nothing better than warm bread with butter!

    Your salad looks great but I’m sorry to say I’d totally choose the Pilot’s plate instead — that burger looks incredible!

    Mmm…that dinner looks amazing. Nothing beats BBQ’s – love grilled salmon and grilled veggies! <3 And that grill tray you've got there is soooo cool! Never seen anything like that before but HOW fantastic and awesome is that for making mounds of grilled veggies?! I normally put mine on kebab sticks to stop them falling down the cracks, but now I must find one of those 😀 The Kiwi is grill master – like the Pilot I s'pose! It's totally man territory, lol! 😛
    Mmmm…that cake with butter melting on is out of this world! Melted butter AND almond butter in one creation?! That's GOTTA be good, lol!

    PS: Speaking of spinning – I remember you saying that it was uncomfortable to spin with your beautiful baby bump…is that still the case or have you figured out a way around it? 🙂 I love how you're being so active during your pregnancy – it's inspirational!

    Ohh that salad looks delish! I love salads with grilled veggies and of course, lots of goat cheese. And yay for that biscuit recipe! I have almond meal that has been sitting in my cabinet because I didn’t know what to do with it, but that sounds great! I will be making them asap!

    I notice you frequently sub out agave for other sweeteners– do you just not like the taste, or have you heard something negative about agave? I’d love to know!!

    not grainy in the least = GOOD because sometimes GF foods and flours have that…well….grit to them. Not a fan of that in my baked goods and these sound perfect!

    You’re the 3rd blog today who’s posted something with biscuits in it that Ive read. It’s fate for me…gotta make biscuits!

    This is going to sound a little icky, but the only thing missing from your grilled veggie salad was grilled lettuce! It seriously tastes amazing and so easy and quick to cook on the grill. Just buy a bunch of romaine and slice it half way across lengthwise, add s+p with olive oil on both sides, a few minutes on each side on the grill and waalaa! It might look a bit gross and wilted but I promise you the flavor is UNREAL! Atleast try it ONCE. I bet you will be a convert! 🙂 Nobody believes me until they try it!

      you might need to use a little extra oil, since the stevia is dry and agave and maple syrup add moisture

    Quick question: is almond flour and almond meal the same? I have almond meal but mine is not as fine as say, traditional flour. I’ve Googled it and most say that they’re the same but I’m not really sure I could use almond meal in place of almond flour. I also have no idea where to find almond flour.

    Pretty biscuits! We made biscuits this weekend, too, but ours were regular old buttermilk biscuits. My almond butter love is somewhat embarrassing, so I’ll have to try (and consume all of) these in secret 😉

    Those little grill baskets are awesome, aren’t they? I also think it is so cool that you can use almond flour in baked goods, not just raw desserts.
