The Taco Man

There’s a man that drives around base in his taco truck, selling delicious Mexican meals. The truck plays the “Mexican Hat Song” as its horn (I couldn’t even make this stuff up), and the guys on base swarm around the taco truck like a grown-up version of the ice cream trucks of our youth. The taco man is one of the Pilot’s favorite people. He always gets his favorite, the Chupacabra, but hasn’t been eating from the taco truck as much as usual, since he’s had such a hectic flying schedule.

But tonight, he WAS the Taco Man 😉

While I was at the gym doing cardio, the Pilot stopped by Trader Joe’s on his way home from work to get groceries + ingredients for taco night. When I got home, he got to work cooking up the beef, while I made the other things to go with:

frijoles (a la can since this was impromptu. Homemade is 100x better, but I like to spruce up canned beans by thinning out with a little almond milk, adding sea salt and cumin)

a little bit of cilantro garnish came from my I-planted-at-the-wrong-time herb garden

grilled peppers and onions, seasoned with cumin, garlic, cayenne, sea salt, pepper, jalapeno olive oil, and paprika.

I enjoyed mine salad beast style, with beans on the bottom, then greens, peppers and onions, guac, salsa and goat cheese:

and the Pilot had tacos with all of the toppings + beans on the side

Most of the time, the Pilot and I will eat the same thing for dinner and sometimes I’ll just as meat to his, but for a “his and her”-style meal, this one was super easy, quick, and didn’t leave a ton of dirty dishes. Winner, winner. Bonus: I know what was in it. Not sure I can say the same for the Taco Man….

    Rob is the perfect DWTS contestant.. he was iffy in the beginning and didn’t seem so sure of himself, but slowly progressed to perfection in the end! i mean, i have to say, i’m pretty sure JR is better overall, but Rob is the epitome of what the show is supposed to do. this season is so good.. they’re all awesome! i’m definitely rooting for the boys.

    I really love that quote. I’m just about to graduate from university in December and I have all of these dreams and aspirations for the next few years. But while it is exciting to finally finish my degree, it’s also difficult balancing the expectations and advice from family and friends. Thanks for reminding me that I need to follow my own path so at the end of the day I can live with no regrets 🙂

    The fact that he flies planes AND then comes home and is Mr. Chef in the Kitchen…that’s impressive!

    We have street food trucks, taco trucks, Mexican ice cream/candy selling trucks, and just food trucks of all sorts here..some of them play some crazy music, too. But if there’s one thing you can usually count on with food trucks is some good old fashioned down home and very good cooking!

      No, I eat corn chips and tortillas pretty often. I just ate plenty of starches today, so I nixed the taco shells tonight

    This meal looks delicious! I love making Mexican food at home (it is the perfect way to make one meal to feed my vegan self and my carnivorous family and friends), but I always wonder if it’s a healthy eating-out choice. I always skip the cheese and sour cream and go easy on the tortillas/chips, but other than that are there generally hidden health traps in restaurant Mexican food? I always wonder about the oils/fats in the beans and veggies and worry that it could be counteracting all the healthy veggies I see on my plate. What are your thoughts?

    Yuuum! We loove tacos and mexican food in general! The only problem is, brazilians don’t like any spicy food, so if we want mexican, we have to make our own taco shells, tortillas, etc.

    Tacos are also one of my favorite his and hers meals since it’s easy to make a taco salad and we can each doctor up our plates according to our liking. I’m going to have to start growing cilantro, your plants looks great and I usually buy it every week anyways. I’m also going to have to keep my eye out for jalapeno olive oil, I’ve seen chili flavored before, but I bet jalapeno has a nice kick.

    We do the same thing- however a lot of time James will just eat a veggie dinner along with me. He’s pretty easy to please 🙂

    Mmmmmm tacos are one of my favorite meals ever. There’s a cute little Mexican joint down the street from us that makes THE BEST tacos ever. And it doesn’t matter if you get the ground beef, the turkey, the chicken, the fish – they’re all amazing.

    I love tacos! My bf and I do something similar. We eat similar meals and he just adds meat if he wants it.

    Bahahaha love that last line about the Taco Man.. There’s a truck like this by where my boyfriend is stationed, and he raved about it too.. unlike me, he’ll eat just about anything. 😉

    Now I just have to teach him to cook…Kudos to the Pilot for cooking for his Woman! ‘Tis a beautiful thing. Mine makes the world’s finest scrambled egg sandwich. That’s about it. (But it is GOOD)

    We have an ice cream truck in our neighborhood (that I try my hardest to stay away from lol) that plays the Mexican Hat Dance! Awesome. 😀

    taco/mexican salad is one of my favorite ways to make a salad at home. i buy chili beans from walmart which i think are just pinto beans with seasonings in them. tasty and cheap.
