We heard back from the realtor today and sadly, the bank didn’t accept our offer and countered with the original asking price. Can’t say we didn’t try though, eh?

We are looking into just paying the full price and putting more money down than we anticipated, so I’m doing the spreadsheet finance nerdy thang to make sure we’ll be bueno.

It’s going to be worth all of the stress and insanity we’ve gone through.. we’re sleeping on it and if we decide to go for it, we’ll be in the new place in 30 days!!!

Today has been a fun and crazy day- started off with an EARLY Zumba class! It was my first time teaching Zumba at this studio and since it’s a new class (like the one I taught yesterday), I didn’t know if I’d have anyone. 6 girls were there ready to shake it! Such a blasty.

After teaching, I had breakfast waiting in the car for me:

My first experience with oats farina in a jar!

The reason why I haven’t tried this yet is because a necessary component is a “waning almond butter jar.” There’s no such thing in this household. Either the almond butter is there or it isn’t- there is no in between 😉

Well when I made the brownies the other night, I deliberately saved a little almond butter in the jar to use for breakfast purposes. Dedication, haha 🙂

-1/4 C cooked brown rice farina, thinned out with almond milk

-organic blueberries

-whatever was left in the AB jar (1 T?)

-about 1/3 crumbled brownie for “garnish” 😉

It was SO good. Loved how convenient it was, too—just stashed it in my bag and enjoyed after teaching.

A little while after I got home, foam rolled and did the shower thang, it was snack time:

I actually took it easy today, since this is technically my Sunday this week, and joined Meg for a thrift shopping adventure 😉

    My anythings in a jar are few and far between too. Good luck on the house! My husband and I were there a little less than a year ago. Stressful, but worth it in the end!

    Jars in my house.. are the same way. It is full.. or empty. As I eat it.. I make sure to get every last particle off of the side.. so there really isn’t anything left by the time I get to the bottom. A meticulous jar cleaner perhaps?! Who knows.

    Gina, good luck with the house thing! I know those few weeks prior to closing are totally stressful, but in the end it’ll be worth it if you know in your heart that’s the house for you. 🙂 You’ll be done with all this duh-rah-mah soon enough!

    Have you considered posting some longer zumba videos? My gym’s latest class is 6:30 PM on a Friday – Not ever gonna make that in DC traffic! I MISS that class!! A YouTube option would at least be a lil sumthin sumthin since I can’t make it to the “real” thing.

    my mom was just going through that whole offer / counter etc thing with her new house which she’s been making progress on — painting and getting a quote for flooring today!. Maybe she’ll have appliances by the time I visit again! I’m sure whatever happens you’ll land on top. You seem to have that buoyancy.

    “brown rice toast w/ egg whites, nutritional yeast and TJs green salsa”—oh the nooch “dump” looks awesome! I do that to my popcorn and add stevia. Sounds weird, but the sweet + savory + crunchy is really good.

    I hope you guys get your house!! I know how it is with short sales and banks. Oh, dont even get me started. I just hope you guys are able to do what feels best for you. Nothing like “magically” making x thousand dollars just appear out of no where for a higher than planned on down payment. Gah!!

    I’ve been known to smear nut butter around the sides of a bowl just to mimic a waning nut butter jar. I’m a little obsessed with oats in a jar. And nut butter.

    I love oats in a jar! I have the same problem, though. There either seems to be too much or too little in the jar to to OOIAJ! If there’s too little left I’ll just supplement with extra banana chunks 🙂

    1. i’m not sure how much more the counteroffer was but hopefully you two decide to move forward with the house. you seemed pretty stoked about;-). hey, even if you don’t get it for a steal, at least you get it for a good deal (my guess given the circumstances of the sale).

    2. anyhoo, i’ve never been to tucson but you surely do make a girl wanna vacay out there sometime soon. geez, the wonderful eats, fantastic workout options, shopping excursions and hot weather … shucks, how have slept on tucson all of these years?;-).

    I had a suggestion for a Reader’s Request post, because you are a finance guru etc. Do you think you could show some of us non-finance minded people the basics of budgeting and working on spreadsheets? I’m trying to get organized in that department, but I’m at a loss as to what to do. Or are there any books you could recommend?

    So this is the first time that I have truly followed a blog and i have to admit I am hooked.

    First, i heart your spreadsheet! I too am a little ocd with my organization and expenses. Two: if you love the new place go for it. You have to follow your gut it will tell ya if it is the right move.

      yes you can get too much of any macronutrient, which will be stored as weight gain- that’s why balance is important 🙂

        What do u find as the best balance for macro’s. I;m eating 2500 calories and trying to gain some lean muscle and i’ve been told 40/40/20 carbs, protein, fat and 40/30/30 I’m 5″4 and weight train 4 days a week and I weigh 104. I think I need to be closer to 110

    What gluten free brown rice bread do u use? I have a hard time finding one thats healthy and not sweetened with fruit juice or cane juice?
