Heyyy hey hey! How are ya? Things are bueno over here… perhaps it’s because I have a wine and Mexican food baby in my belly?? 😉

This afternoon I had the only pre-workout standby:

And did some weights with Jeni. No cardio for this girl today because my body (especially my leggies!) are painin’ from yesterdays aerobics extravanganza.

I also had a training appointment, a side of gym drama (not that I was a part of, but that I got to listen to, haha), and went to Winn Dizzle to get dinner ingredients for ENCHILADAS!

I also got a can of this salsa and munched on it with some multigrain chips while I was cooking:

Usually I make my own, but since I was on a little time constraint and wanted to focus on the enchi’s, I bought the Herdez. If you buy salsa, get Herdez. It’s the best stuff you can get from a grocery store, I promise. It is REAL salsa…and that’s coming from a real Mexican 😀

I made the filling for the enchiladas using onion, garlic, green chilies, organic pinto beans and diced tomatoes, cumin, chili powder, sea salt, pepper, lime juice and sliced portobello mushrooms.

While I worked on the filling, the pilot made the guacamole using the usual recipe (minus the yogurt)

And then I made the enchiladas using a can of mild enchilada sauce and a can of the hot enchilada sauce from Whole Foods and stuffed little Ezekiel tortillas with the filling for Megan and I:

And added shredded rotisserie chicken, Mexican cheese and filling into corn tortillas for the pilot:

Also, I think I’m going to be signing up for the Disney Princess Half Marathon again since I ran it in March and it was basically the coolest, most fun race ever. Is anyone else planning on running it??

    Oh G, you KNOW I'm super stoked about running the Disney Princess Half!!! Jenna and I had made plans to run it, although we haven't talked about it lately, I bet she will still do it. I did 10.5 miles outside this past Sunday, by far the longest I have run outside in a while…but it made me SO EXCITED!! I wish it was sooner than March!

    I have a question. Can you suggest a good brand of goat cheese? Our commissary has a very, very limited selection…I bought some to try and it tasted like a dirty, wet goat. It pains me to dislike any cheese. Where do you find goat gouda??

    I made tamales yesterday for the first time, which was really fun! But I love alll Mexican fod.. I would love to hear more about the Disney marathon, why was it so cool – I imagine because you are running through the park?

    aw your little lush is adorable! and I want both you and the pilot's enchiladas!! My fave Mexican dish is this new chimichanga I made last week! I'm obsessed – first time having green chilies/green salsa. 🙂

    I realize that you did post the ingredients for your vegan filling. But, what are the amounts? It really looks awesome. I haven't used ezekiel tortillas for my enchiladas yet. I love the idea of vegan enchiladas, yum!

    yum everything looks delicious! my favorite mexican dish would have to be raw tacos in lettuce boats topped with salsa and a bit of beans. yum 🙂

    Wow, those enchiladas look incredbile!!! Cooking with the Pilot must have been such a blast:)
    My favorite Mexican dish would probably be fajitas, I love me some sizzling onions and peppers!

    I bet the Disney Princess Half Marathon is a really fun race. If I lived closer to Florida I would totally do it!

    wholebodylove- i know- i honestly just threw stuff in there! i didn't use the whole package of the mushrooms and about 1/3 can of the diced tomatoes. as far as the spices go, i just put more cumin than chili powder and salt and pepper. usually i don't measure, unless i'm following a recipe

    Everything you made yesterday looks SO good! I love rotisserie chicken in enchiladas… my friend made them with that one time and I never would have thought that something so easy could taste so good!

    And those almond butter macaroons… TO DIE. I keep hoping that one of these days you'll say that you're going to start selling them!

    I know it's awful but when I first had a chimichanga I nearly left my husband for it – they are just love in my mouth! Burrito = awesome. Deep fried burrito = outta control!

    Heck yes! I ran the Princess Half Marathon in March and it rocked! Can't wait to run it again! I've run the WDW Marathon and it rocked as well. Disney knows how to host races!

    I would have to say enchiladas con camarones en salsa verde..Shrimp enchiladas with green sauce. I hope my spanish was okay.

    Herdez is my favorite, too. Hands down the BEST store salsa 😀

    My favorite Mexican is either mushroom tacos or spinach enchiladas.
