Winning and losing

 

Hi friends! Thanks for your awesome comments on the foam rolling post. (Like how I snuck a little giveaway in there? I’ll pick a winner tonight at midnight EST) 😉 A few people asked about the hoodie I was wearing in the video.

Moving Comfort sent it to me a while ago, and I’m obsessed with the super light fabric and fun neckline. I wore the hoodie with some Wunder Under crops (lulu) and a Reebok tank (also a freebie fave).

Last night, after Livi fell asleep, the Pilot and I had a little date night. The original plan was to go to urgent care -fun date night, huh?- but since my knee is feeling much better, we went bowling instead. Trev, Mik and her brother met us out there, and it was a blast.

I’m terrrrrrrible at bowling, but that’s what makes it fun. Plus, they have $2.49 margaritas. Winning.

To rewind, dinner was made using our Costco stash:

(I’m making more of a conscious effort to use our membership, especially since I can get many of our staples in bulk. It’s fun to take Livi since we love the samples, and she loves the toys. She fell in love with an electric car — not even two and asking for a set of wheels, haha)

An easy quiche:

Just sautéed some veggies:

Poured in the egg mixture (6 eggs, 3/4 cup grated manchego, salt), sprinkled with pepper and smoked paprika

And baked it at 350 for about 35 minutes, along with some roasted butternut squash. A lighter dinner since Liv and I had just enjoyed some Costco pizza together 😉

For dessert, I was excited to share something new with you, but it ended up being a fail.

First it was pudding, then I thought maybe ice cream, but the texture was totally off. Like a sweet sand? Derp.

Can’t win ’em all. Even though I will say I beat the Pilot in bowling last night, and the prize is a glorious foot massage. I caaaaaan’t wait.

Something to talk about: Any ideas for coconut cream? It was the main ingredient in my dessert fail. Who’s your fitness inspiration? I’ve always adored her, but this week I’ve gotten into Chalene Johnson’s smart success seminar videos. She posts them on her site, shares some amazing tips and secrets, and deletes the videos after one week. She inspires me, and I love her motivational content as well as her “go after your goals” attitude.

    Costco just opened here last week and I’m already curious to go stroll the aisles…might be dangerous! Do you think a membership is worth the price? Or what kinds of staples do you buy in bulk? So many questions 🙂

      the eggs (24 organic for $7), almond butter, organic chicken, goat cheese, hummus packs, salsa, wine, k-cups…
      i think a membership is worth the price if you use it. we didn’t use it much last year, but i’m trying to get more out of it. i always get glasses and contacts there, too!

      you can go in and look around you just cant buy anything without a membership, but it will give you an idea of what they have. we have Sams club and BJ’s Costco’s too far and we use both a lot our BJj’s has gas and BJ’s I love because they take coupons and let you stack there coupons with regular ones and there organic selection has grown a lot over the past few years.

    I love that quiche recipe, will make this on the weekend!
    Lauren Gleisberg is my inspiration – she’s super young but very mature and knows a LOT of good stuff when it comes to fitness and weight lifting. She created workouts daily and weekly mealplans which you can buy for a dollar a day. Great concept! http://www.fitnessbarbielaurengleisberg.com/

    Do you have an ice cream machine? I made ice cream with coconut milk, peanut butter and maple syrup this summer that was really good. I can’t remember the measurements for everything, but I found it while searching for dairy free peanut butter ice cream recipes. The 3 ingredients went into the Vitamix until blended and then into the ice cream machine for 20 minutes or so.

    I have an ice cream machine that I have NEVER used! I have tons of recipes…but I never seem to just make things.

    What a fun date night! I haven’t gone bowling in years and with $2.40 margaritas?! Sign me up 🙂

    My husband and I try to get out for date night about once every two weeks…It does get hard to leave our 3 year old! He is so much fun 🙂

    One last thing…LOVE the wine selection and prices at Costco!!!!

    You can use coconut cream in place of heavy cream in any recipe. It’s great in curries, and I think you can even make whipped cream with it.

    Thanks for giving us the details on your outfit. I was going to ask you about the hoodie 🙂 I just made an awesome soup where I substituted heavy whipping cream for coconut cream. I couldn’t taste the difference and everyone in my house loved it! Let me know if you try it.

    coconut cream is my new favorite–i LOVE it! my current obsession is to mix an entire can (you get it from trader joe’s right?) with 5T of cocoa powder (1T per serving–there are 5 in a can) in a mason jar. who doesn’t love a mason jar? sometimes i have to heat it up a little bit to get the cocoa to melt, but then i store it in the fridge and it makes almost like a thick pudding consistency. for dessert, i’ve been heating up 1/2 cup of frozen mixed berries (also from trader joe’s) for about 30 seconds, putting a huge dollop of the chocolate coconut cream on top, and enjoying (usually in about 10 seconds). SO GOOD. you could add stevia or honey (or even chocolate stevia, yum) if you want it sweeter. for me, it’s sweet enough (also stevia gives me headaches). let me know if you try!

    Ah, so thissss is where you got margs yesterday 🙂 I love bowling, and I truly suck at it. I need to go again soon. As I said on IG, I loved your foam rolling “lesson” (hello, who knew you could roll inner thighs…and how crazy you would look doing it at the gym at 7 am?!). Hope that knee is feeling better.     I haven’t been bowling in -ages- but I remember it being a tonne of fun. Well, as long as you’re not playing with anyone who takes it too seriously, because the terribad aspect of it is definitely what makes it so much fun.

    Coquito! It is the Puerto Rican version of eggnog made with coconut cream, coconut milk & rum…. Lots of rum. I have so many memories of my abuelita making it every christmas (along with pasteles). It is by no means healthy, but it is a delicious treat & tradition that must be passed on. That’s my excuse anyway, haha.

    I LOVE Costco! My haul usually looks similar to yours. Organic chicken, organic eggs, apples, produce and nuts are my typical costco staples. I love that they have really stepped it up on their organic/natural foods. Such great deals! My little man loves to go too since he gets to eat his way through. Might have to go in search of that car! I’ve been whipping up coconut cream with protein powder for a protein frosting on mug muffins. Or just eating that by the spoonful 🙂

    How do you manage date night with Livi around? Do you do bedtime before you leave then get someone to come over and hang out or do you take her to someone else’s house for the night? I don’t have family close by that can come over and watch my son, and he doesn’t sleep at anyone else’s house without crying!!
