Hey everyone! Happy humpday 😀 Thank you again for all of the anniversary wishes <3

For those of you who guessed we would have pizookies for our anniversary dessert, well:

I made the dough yesterday afternoon for the vegan oatmeal raisin cookies (from Eat, Drink and Be Vegan):

I was a little bummed because when I went to mix in the ingredients I realized the oats were gone and since I didn’t have time to go back to the store, I used oat bran instead.

I pressed the mix into two large ramekins and put it in the fridge to wait until I got home from work:

Note: Don’t use oat bran instead of rolled oats… while it tasted wonderful, the texture was off 🙁

I went to teach spin (which was awesome and PACKED!!! We’re getting 10 new bikes so more people can start coming), and then had a training appointment with the funny quotes lady. She’s always so much fun 😀

When I got back to the casa, I made a chicken, spinach and gouda omelet for the pilot and put the cookies into the oven for 5 minutes instead of 11 so they’d be nice and doughy in the middle.

Next, I topped them with my favorite ice cream and Dragoba dark chocolate shavings:

Well I’m off to run a couple of errands and then training, teaching spin and Zumba. I might get a new camera since the new and improved bloggy should be ready any day now.. I’m looking at this one. It has high megapixels, can do different color tones (I really want to take some black and white pics) and most importantly, it matches my pink laptop 😉 Priorities, right?

    i have that camera in silver 😉 and love it. it's really awesome, for a point and shoot, at focusing in on a single object and blurring out the background. and you can turn in to black and white, after you shoot it, all on the camera. though, i always prefer editing my pics on the computer.

    pizookie. that's hilarious.

    Can you comment on the difference you feel when you have a juice in the morning rather a smoothie or vice-versa? I noticed you had been drinking a lot juice and now you are doing smoothies. Is there a reason? I am tempted to buy a juicer but want to make sure its worth it before I actually do!

    Thanks so much for the pep talk yesterday. You were so right, I loved it! I did an hour vinyasa yoga class and it was pretty amazing. I loved the instructor and even befriended an wonderful woman. 🙂

    I have that camera! Except not in pink. I bought it from BB (in store, not online) about a year ago in a moment of sheer need, and they didnt have pink so I got silver. It was about a hundred bucks more than I recall it being now…for $200, I think you will be thrilled. Like all digital cameras, there is a small delay, but if you're shooting still food shots, not action toddler shots 🙂 you'll be more than fine.

    I have ED & BV…I need to go make those cookies! Thx for the underbaking (by half the time) tip.

    Do you use any blogger publishing software? Ecto? LiveWriter? etc.? I have a MAC and am on blogger. Would like to find something tried n true. I think you're a PC girl though…

    stephanie- i love juices and smoothies and actually planned on having both today 🙂 i just like to switch things up because i get bored easily and have been wanting a little more protein in my life lately, so that's why i've been rolling with the smoothies. smoothies are great small meals and juices are great snacks, so i think they're both beneficial and great staples in a healthy diet 😀

    oooo those look amazing!
    sony cybershots are good little cameras, but you might want to take a look at the canon powershots too! they also come in pink.

    mmm I want to go home and make a pizookie now! Brookies are good, too- brownie topped cookie or vice versa. I've never made either but clearly it's time for a pizookie in my life!

    I may have missed it but did you ever get up that post about thrifty grocery shopping for a healthy diet?
    I am sooo attracted to all the yummy specialty stuff but I know I can eat super healthy without those. So some tips to do that would be awesome…:)
