This protein-packed and portable snack are just like our favorite Christmas treats. It reminds me so much of peppermint bark minus the sugar crash. These protein bites a delicious and healthy little snack.

Ingredients

1/4 cup chocolate protein powder (I used Truvani)
1 tablespoon cacao powder
1/4 cup almond meal (or oat flour)
1/4 cup almond butter (or any nut butter you have on hand)
2–3 tablespoons maple syrup to thin it out
Pinch of sea salt
1/4 cup crushed candy canes + more for rolling
Instructions
In a food processor, crush the candy canes and set aside. I leave a little bit in the processor to mix in with the dough, too!
Add the remaining ingredients to the food processor and pulse until a dough forms. Add more maple syrup if needed.
Roll into 6-8 balls, using a melon ball scooper and your hands.
Roll each ball into crushed candy cane.
Store covered in the fridge.
Notes
This recipe is so easy to customize! Feel free to use dried fruit, chocolate chips, nuts, or anything you have on hand instead of candy canes.
