Peppermint chocolate amazeballs

This protein-packed and portable snack are just like our favorite Christmas treats. It reminds me so much of peppermint bark minus the sugar crash. These protein bites a delicious and healthy little snack.

Ingredients

Scale
  • 1/4 cup chocolate protein powder (I used Truvani)
  • 1 tablespoon cacao powder
  • 1/4 cup almond meal (or oat flour)
  • 1/4 cup almond butter (or any nut butter you have on hand)
  • 23 tablespoons maple syrup to thin it out
  • Pinch of sea salt
  • 1/4 cup crushed candy canes + more for rolling

Instructions

  1. In a food processor, crush the candy canes and set aside. I leave a little bit in the processor to mix in with the dough, too!
  2. Add the remaining ingredients to the food processor and pulse until a dough forms. Add more maple syrup if needed.
  3. Roll into 6-8 balls, using a melon ball scooper and your hands.
  4. Roll each ball into crushed candy cane.
  5. Store covered in the fridge.

Notes

  • This recipe is so easy to customize! Feel free to use dried fruit, chocolate chips, nuts, or anything you have on hand instead of candy canes.
