Is the breakfast cookie supposed to harden or stay soft and just eat it with a spoon?
it stays soft and you just eat it with a spoon. to make it a little firmer, toss it into the freezer for about 10 min before you plan to eat it
I love that this is so easy and so raw! PERFECT!!!! I am going to make one tonight for my Monday morning treat! That will make waking up Monday morning a whole lot better!

Can these be made ahead of time? Like a week’s worth of breakfast cookies made on Sunday and then ready to go each morning?
i’d say maybe 2-3 days at a time… try making 3 on sunday night and 2 on wed night??

Wow, I just tried one this morning with my husband and we both loved it! I made his with banana & pumpkin and mine with just pumpkin and it was awesome. Last night I kept thinking it wouldn’t be filling (eyes bigger than stomach syndrome), but this morning I actually could not finish it and will be saving some for a snack later.

Thanks for the cookie recipe. I had my first breakfast cookie this morning and it was delicious. My 3YO daughter enjoyed it as well so I’m going to have to start making 1 for her so she doesn’t eat all of mine.
I made these last night and my boyfriend gobbled it up this morning – then sent me a thank you e-mail at work!! I just made tomorrow’s batch, and the best part is licking the bowl before I go to sleep
I made them with chocolate protein powder – it tastes just like my mom’s no-bake cookies from my childhood – amazing recipe, thank you so much!
And this helps me get more organized b/c I don’t have to spend time making hot oats in the AM!

I just found your blog and Im so happy I did! I always look forward to my oatmeal in the morning but today I was down right excited! this cookie dough creation is amazing. I mixed my oats with chocolate protein powder, cinnomin, PB, and cottage cheese and topped it with some crushed almonds it tastes amzing and I can’t wait to try new flavors!
I’ve made this once, and at the time I had no protein powder. I was wet mushy like in the morning…is it supposed to be this way? or is it b/c I missed the protein powder? I’d love to see a up close video of the finished product!! =)

I found this recipe recently and love it! My mix-ins are usually coconut, dark chocolate pieces, chopped almonds, flax, honey and coconut oil. This combination holds together really well. I use a piece of parchment paper to form into a bar and cut it in half. In the morning I have 2 great breakfast bars that can be eaten on the go instead of with a spoon.
