Here’s how to make one and here’s a video tutorial :)


  1. Is the breakfast cookie supposed to harden or stay soft and just eat it with a spoon?

      it stays soft and you just eat it with a spoon. to make it a little firmer, toss it into the freezer for about 10 min before you plan to eat it 😀

  3. Can these be made ahead of time? Like a week’s worth of breakfast cookies made on Sunday and then ready to go each morning?

  8. Wow, I just tried one this morning with my husband and we both loved it! I made his with banana & pumpkin and mine with just pumpkin and it was awesome. Last night I kept thinking it wouldn’t be filling (eyes bigger than stomach syndrome), but this morning I actually could not finish it and will be saving some for a snack later.

  10. I made these last night and my boyfriend gobbled it up this morning – then sent me a thank you e-mail at work!! I just made tomorrow’s batch, and the best part is licking the bowl before I go to sleep :) I made them with chocolate protein powder – it tastes just like my mom’s no-bake cookies from my childhood – amazing recipe, thank you so much!

    And this helps me get more organized b/c I don’t have to spend time making hot oats in the AM!

  11. I just found your blog and Im so happy I did! I always look forward to my oatmeal in the morning but today I was down right excited! this cookie dough creation is amazing. I mixed my oats with chocolate protein powder, cinnomin, PB, and cottage cheese and topped it with some crushed almonds it tastes amzing and I can’t wait to try new flavors!

    I’ve made this once, and at the time I had no protein powder. I was wet mushy like in the morning…is it supposed to be this way? or is it b/c I missed the protein powder? I’d love to see a up close video of the finished product!! =)

      they have around 400 cals, give or take and depending on which mix-ins you use :)

  15. I found this recipe recently and love it! My mix-ins are usually coconut, dark chocolate pieces, chopped almonds, flax, honey and coconut oil. This combination holds together really well. I use a piece of parchment paper to form into a bar and cut it in half. In the morning I have 2 great breakfast bars that can be eaten on the go instead of with a spoon.

  17. For the cookie dough cereal, do you just make the bfast cookie in the morning and use more milk? Or still make it at night and just add milk to it in the morning?

I made a bfast cookie for my husband (he’s military too, but I don’t think calling him boats is as much fun as calling him the pilot :) and he texted me to let me know it was delish, held him through the morning workout and he’s not even the slightest bit hungry.   30. I finally gave in and made one. I was always scared because when I can taste/feel the texture of the protein, it creeps me out! haha. Reading the recipe, I was sure the protein powder taste would over power … I was wrong. The breakfast cookie is amazing!!   31. Gina, I just had one of these this morning, and I just have to share the mix ins with you- I used about 1/4 cup of pumpkin, Justin’s Maple Almond Butter, lots of cinnamon and pumpkin pie spice- it was the perfect fall breakfast!! Thanks again for all your awesome (and delicious!) recipes :)

  34. I made one of these last night and I’m eating it right now. I can’t believe how good it tastes. I used berry powder and dried fruit thinking it might not go so well with the nut butter, but it surprisingly does. I’m so glad you shared. I think this is going to become a part of my normal routine.

  35. I LOVE your blog!!! I was introduces by and have been hooked ever since. I’ve been a fishaterian for a year and a half and my fiancé is a meat eater!! Once I finish preparing his meals I’m lost as to what to eat so I normally front load on whatever sides I’d prepared for him. I’m gaining weight as a result!! Carbs, carbs and more carbs!!!

    I go to the gym faithful with no results. Hoping to get into really good shape so I can prepare my body for babies. With the recipes you offer and the workouts. I no longer feel like a helpless cause!!!

    I’d love to make this cookie since we’re snowed in and am waiting for My Sun Warrior to arrive. Have you ever used Vega protein to make it? I was thinking the shake & go. Thoughts?

    PS. I have my whole office hooked on TJ’s almond butter w/flaxseed. That’s a little bit of heaven!

I’m starting my first day of a new school year tomorrow (I’m a high school English teacher), and this seems like the ideal make-ahead breakfast. I have one in the fridge right now. But, can I heat it up so that I’m not eating a cold breakfast?

    I LOVE your site >:) I enjoy your stories about your family and your recipes are great. I wanted to share my version of your breakfast cookie. The grocery store in town makes the most awesome oatmeal ranger cookies (I can’t buy them because I can’t stop eating them!) so I thought I would try to replicate the flavor using your breakfast cookie. My stir ins are: walnuts, dried cranberries (applejuice sweetened), unsweetened coconut flakes and cacao nibs. I have to say OMG, it was incredible.

    Thanks for saving me from THOUSANDS of needless fat and calories (and guilt).

  42. Hey Gina! Question: is there a reason that my cookie is always mushy on the bottom? I’ve played around with the amount of milk and the texture is great everywhere but the bottom of the cookie. When I take it off of the plate in the morning, it sticks to the plate. Should I maybe add less banana? (I’m adding even less than half of one at this point) Thanks!
