Chocolate cinnamon alarm clock
Hey guys! Hope your day is going well and Iโm loving your feedback on my encouragement to eat post ๐ Lets all raise our forks and feast on the good stuff ๐
I woke up this morning to a delicious aroma that filled the downstairs area with a chocolaty cinnamon scentโฆ
Waiting in the Excalibur, were raw chocolate cinnamon buckwheat crispies.
Yesterday, I soaked buckwheat groats in water for most of the day and then drained and rinsed the groats. I put them into the Vita-mix with raw cocoa powder (from One Lucky Duck), Stevia, vanilla extract, cinnamon and sea salt. After it was fully blended, I spread the mixture onto Teflexx sheets and dehydrated for 6 hours, flipped it over, and let the rest dehydrate overnight.
I crumbled half of one of the sheets into a bowl:

And topped with vanilla hempmilk and sliced nanner.
Unbe-freaking-lieveable. So delicious. I have a TON leftover so weโll see if Iโm a repeater or if I can get crafty with the remaining groat crispies ๐
I went into work for a couple of hours to make some dinero, even though I didnโt have any training appointments. I had fun talking nutrition with the guy who works at the front desk and has lost about 30lbs this summer, played on the new crackberry (still have no idea how to work it), and read The Time Travelerโs Wife.
Before I knew it, it was lunchtime and I got to make a meal I had been thinking about all day.
Raw Pad Thai with Spicy Almond Butter Sauce
For the noodles:
-1 mango, cut into matchsticks
-1 yellow bell pepper, thinly sliced
-1/2 english cucumber, spiralized
-juice of 1/2 lemon
-sea salt
-1/2 tbs flax oil
Combine all ingredients in a bowl and set aside as you prepare the sauce.
Spicy Almond Butter Sauce
-1/8 cup water
-1 tbs almond butter
-1 clove garlic
-1 medjool date
-hefty sprinkle of cayenne pepper
-small handful of cilantro leaves
Combine all ingredients in a food processor or Vita-mix and stir into the noodles. Top with fresh cilantro.
It came out almost perfectly. The only thing was that the cucumber made the sauce a little watery but since the flavor was so delicious and intense, it was fine. I know how to fix it for next time though ๐
Well Iโm off to get things ready for dinner (so all I have to do is assemble and bake it when I get home), make CDs for tonightโs classes and teach spin and Zumba.

What is a favorite dish that youโd love to see a raw version of?? For me, itโs enchiladas and Iโm determined to come up with a raw version that closely mimics the real thing. Iโve seen recipes in cookbooks and online, but Iโm sorry, while a nut paste wrapped in a lettuce leaf is delicious, that is NO enchilada ๐
I'M SO curious to see what you come up with for raw enchiladas!!

Raw enchiladas sound amazing! I just copied your recipe down for the Pad Thai because that is my favorite dish at That restaurants and your raw version looks just as good. Can't wait to give it a try!
Fantastic sounding recipe! I have bookmarked it for later this week. Thanks so much for sharing! I too would LOVE a raw enchilada recipe. In a dream world I'd also like a raw lemon meringue pie which didn't use nuts to make it creamy but I may be dreaming there. In the meantime I'll stick with Gena's lemon chiffon version.

Cinnamon (obviously) is the one scent that does me in – if something is baking with cinnamon, I can't contain my excitement! Your crispies look delicious!!

I'm a long time blog follower and admirer. It has been/is a real pleasure to watch this blog and its author develop and increase in awesomeness. Seeing as how it appears to me that you've been especially sage and honest as of late, I was wondering if you could explain something that I remember wondering about (long enough ago that it's a bit embarassing that i still remember….):
I can't find the link to it unfortunately, but you had a post last fall (approx) about some incident with that dark chocolate peanut butter and you had to throw the rest of the jar away?

I love mango in any stir fry. It's the perfect touch of sweetness and I adore the texture paried with the crunch of the veggies.
Okay, now get to work on these raw enchiladas because I am sure you will rock the world when you introduce them! ๐

2) what happened with the peanut butter -i totally remember what you're referring to- is that i found myself eating it out of boredom and not because i was hungry or really craving that chocolate- it just tasted good. it was kind of a weird purchase for me because i don't usually keep junk food in the house (not because i don't trust myself with it but because if i want something that badly, i like to think about what it is exactly i'm hankering for and go out and buy it), but really wanted to try it because i live for chocolate and figured it would be a nice treat every once in a while. after eating probably two or three servings that night just because i was bored, i realized what i was doing and tossed it out.
it just goes to show that i've come a long way since then.. now i've tuned into my hunger a little more, changed my eating habits, and can tell if i'm craving something particular or hungry, or if i just need something to do ๐
Hi Tina. I have several questions, and if you have time I would love to hear your advice. I remember you holding a contest for wag gloves. I don't practice yoga but started to work out and find my wrist really hurt when doing push ups. Do you find wags work? They are super expensive for gloves, so I don't want to get them if they don't take pressure off the wrist. I have really small wrists.
My other question is like most people I am time crunched. I know push ups worky your chest and triceps, but I actually feel the front of my arms working as well, which I assume is the bicep. Is that possible?
Lastly, I find I am starving after working out, even if I have a huge breakfast. I seem to eat more calories than I burn and majorly crave carbs after. Do you find you have this problem?
Ok a few thoughts…buckwheat groats. Girl, where do you find them? I cannot even find oat groats in San Diego, I have been to like 10 natural food stores, including WF, nothing. I am impressed that V town has bw groats.
Next your Excalibur..do you love it? I am thinking about it. Just got a Breville juicer. Cleanup's a beeotch but hey whatevah, it's worth it for green juice, but still thinking about the dehydrator but everytime i read samra's recipes im like yep, need it.
You noodle/spicy almond butter raw dish is right up my alley. That's a keeper!

Raw pad thai?!? Incredible. I'd like to see some raw chocolate chip cookie dough, please ๐
lauren- yes, the wag gloves work but the size i got is too large for me… make sure you measure your hands because mine slip and slide a little. i do think they help take some of the pressure off my wrists though and would definitely recommend them.
as far as push-ups go, you could be working your biceps indirectly but the major muscles worked at the chest, shoulders and triceps.
for the pre-workout fuel, try something lighter beforehand (like a banana with almond butter) and then re-fuel with a mix of protein, healthy fat and carbs (like oatmeal with 1 egg) and see how that makes you feel. you may not be balancing your meals properly (protein, carb and healthy fat in each meal) which could be causing you to be more hungry.
averie- i totally did NOT get the groats from v-town, they're from tucson! i would die if i saw them here hahah.
i LOVE my excalibur and use it at least a few times every week. it really is worth the investment, especially if you're thinking of branching out your raw food choices ๐
anna- that may take the #1 spot over the enchiladas ๐
