a whole day of eats

Hi friends! How’s the day going? I hope you’re having a lovely morning. The weather has cooled down here quite a bit and I can feel the tiniest bit of fall in the air. P and I are taking the dogs for a walk together and going to make a stop to the library; her favorite place! I’m also excited to catch a Peloton class later this afternoon.

For today’s post, I thought I’d share a full day of meals now that I’m on the macro counting train. So many people have asked me for more meal ideas that are balanced in macros throughout the day, so I’m sharing some of my go-tos. Please keep in mind that I’m not a Registered Dietitian and if you need help with an individualized eating plan, please see out an RD in your area.

This particular day was a moderate carb day and I alternate the amounts of carbs throughout the week according to my workout. It was a super sweaty Orangetheory power day.

Breakfast: 2 eggs, 2 egg whites, spinach, grain-free tortillas, salsa, and coffee with MCT oil and collagen

I usually have breakfast when I’m back from school drop-off so I have time to put everything together. In the morning, it’s everything in my power to get the girls fed and the 3 of us dressed and out the door.

Mid-morning snack: Vanilla Silk almond milk yogurt alternative with a chocolate peanut butter protein ball (recipe coming soon!)

The Silk almond milk yogurt alternative has become one of my fave healthy snack options. I love it for a quick bite, and I’ll either eat it on its own (the flavors are amazing!) or crumble granola or a protein ball into it. I also enjoy it with fresh fruit, on top of waffles (try it- so good), or the plain flavor in tuna salad or drizzled on tacos instead of sour cream.

Here’s why it’s amazing:

It’s gluten-free, vegan, carrageenan-free (this is huge because it can be tough to find dairy-free almond milk products without this ingredient), and soy-free. It tastes like real vanilla bean (not weird or artificial at all) and I’ve also popped it in the freezer for a bit to enjoy more like frozen yogurt.

Lunch: salad with lots of fresh veggies, tuna, avocado oil dressing, and a big slice of sourdough from Barrio Bread

This week I actually meal prepped! It’s made such a huge difference to have fresh chopped veggies in the fridge ready to go.

Dinner: rice with edamame, salmon, and mango salsa

This is one of the few dinners I can count on the girls eating right now. I just pan-sear the salmon with salt, pepper, smoked paprika, and garlic powder and then bake it. While it’s baking, I cook wild rice in the Instant Pot, add greens at the last minute to wilt, and top everything with mango salsa. 

Dessert: mug of tea, a couple of pieces of chocolate, and a book in bed

Eating chocolate before bed used to keep me awakeโ€ฆ and now, pretty much nothing can keep me awake at night. (You know, besides small children haha.)

    I have not been consistent with healthy snacks since my daughter came along 8 months ago. I find meal planning and prep so helpful!

    Ironic that you post this, as the Silk dairy/soy-free yogurt, topped with granola, is my go-to afternoon snack right now. I had to go dairy- and soy-free for my 5-month-old daughter, but I think I’ll keep eating this snack even after I’m beyond my dietary restrictions. Thanks for the coupon code!

    I find snacks a slippery slope… I try not to snack so much. That slice of barrio bread though? I would eat that all day long. I cannot wait till I can go to the bakery. I know this is about Silk though… my daughter (2) blows through their almond milk costco packs, so that is her preferred snack.

    I’m curious if your protein consumption has changed since you did that podcast episode where you guys discussed the health consequences associated with too much protein? I’ve found myself a little more conscious of my protein intake since hearing that ep, like I’ll skip the protein powder when I make my smoothies now. Wondering if you’ve made any changes?

      hey! i just realized that i didn’t answer this comment even though i have had so many thoughts about this. sorry about that! honestly, i haven’t really changed it. i’m working on building lean muscle, so in order to do it, i’ve had to eat way more protein than usual. i’m trying not to have animal-based protein a lot throughout the day (lots of plant-based protein around here) but it’s hard. those studies were really interesting to me and something that made me consider my life haha but i feel like i’ve gotten into a good groove with my eating and don’t really want to mess with it, ya know?

    I have a hard time eating flavored yogurt knowing the sugar content that is in one… the Vanilla Silk yogurt has 17g in one container :/ I usually just get plain and add flavors in myself! Also loving homemade trail mix with whatever we have in the house.

        i found it to be about normal for most flavored yogurts. the nice thing about macro counting is that i’ll have real sugar here and there and it’s NBD

    I’m lost without meal prep – seriously it saves me! My go to snack at the moment is a homemade nut/seed/choc chip mix, or Epic jerky bites.

    i agree that its too much sugar. even if you eat healthy, 17g of sugar is not good for you, even occasionally.

    where do you find, and what brand, grain free bread did you have for breakfast? You eat gluten and dairy don’t you?

      Love nondairy yogurts but tend to stay away from them due to the high added sugar & low protein content, wish there was a flavored option with less sugar/ more protein

    Hi Gina, I was considering buying some of the four sigmatic products. Have you noticed a difference in energy? That’s what I’m hoping for. I wanted to try the decaf coffee but it said it is for relaxing? Thanks!

      i feel like their products give me a clear, focused energy. they don’t make you feel wired like caffeine. the decaf coffee is what i drink every morning and i definitely think it wakes me up and gives me energy ๐Ÿ™‚
