His and Hers Huevos Rancheros
Hi lovely friends 😀 Good morning! Hope your day is going well so far.
After a loooooong day of traveling, we made it into Tucson last night, with the fam waiting for us.
(my bro tore his medial meniscus! poor buddy)
I bet you can guess who was happiest to see the Pilot…
Bella went INSANE. Her tail was shaking her entire body!
Everyone came over to our temp townhouse, where my madre and nana had tons of food and goodies waiting:
(lots of shrimp- they know us well)
+ fresh flowers <3
It was pretty much the best thing we could have come home to.
I can’t even say how lovely it felt to sleep in a REAL bed after a week of different hotels, and to make a real, homemade breakfast this morning.
His and Hers Huevos Rancheros
All ya need:
-Sea salt, pepper, garlic, cumin, cayenne
-1/2 large onion, diced
-can of each of the following: diced tomatoes, black beans and green chiles; all drained extremely well
1. With a little organic butter, in a small saucepan, cook the onion and green chiles on medium heat. Season well with sea salt, pepper, 1/8-1/4 t cayenne, 1/4 t garlic powder, 1/2 t cumin, and add in the black beans and *most* of the tomatoes.
2. Continue to cook on medium heat while you prepare the eggs.
3. Place some of the bean creation onto a plate and plop said eggs on top.
The Pilot enjoyed his with 2 eggs over easy, and two tortillas:
(I’m sure he would have loved cheese, too, but we haven’t been to the store yet)
I enjoyed my bfast with 1 egg, brown rice toast, green tea and a simple salad with dressing and ground flax
Such a hearty, flavorful bfast and it took about 15 minutes to put together!
Feel free to get creative with this one, too- crumbled tortilla chips, avocado or guacamole, fresh cilantro, bell pepper, and cheese would all be lovely on top of the bean mixture.

We’re off to walk Bella and look at a few houses before it’s time for me to get to work.
(Sassy Pants. She needs a haircut, but I’m fighting it- we love when she’s all fluffy!)

Aww so sweet your fam and Bella were waiting for you! I resist taking my Pomeranian to get her hair cut because I love when she looks like a ball of fur!! But then the groomers hate me 🙂

Huevos rancheros = deliciousness in Spanish (well, that’s what it translates to in my mouth, haha). That last photo of Bella totally made me laugh… So glad you guys are home TOGETHER at last 🙂

What a fabulous welcoming committee!!! I remember when I used to live in Bahrain, we’d have to take our dogs to the kennel when we went away for the summer months. When we came back, they’d go absolutely CRAZY on the car ride home – it was almost like they were talking like kids who had just been at camp for 2 months!! SO cute. Enjoy the rest of your day Gina!

Aww, what a happy reunion! Isn’t it funny how pets go crazy like that? Whenever I come back home for breaks, both of my puppies get so happy. It makes me smile just to see them so ecstatic!
Breakfast nothing. I think we’re having those eggs for dinner tonight!

My girls get really fluffy so quickly!! And I love it too! They’re so soft when they’re fluffy…like a big ol’ teddy bear. Our favorite thing to do is pick one of them up and say in a little girl voice(yes even hubby does this…lol) ….”she’s so fluffy I could die!”

What a lovely homecoming! You have a wonderful family, I am so happy for you that you get to be rooted with them for a long while. And, I am superduper thrilled that “his and hers” meals are back! It’s tutoring for me because I cook for me and the BF, but he doesn’t quite like to go all the way with the healthy options. I learn alot from your tailored meals!

Omg Gina! I just found out yesterday from my MRI results that I have a slight tear in my medial meniscus as well. Does your brother have to get surgery, or is there a way of avoiding a surgical operation? My doctor said no surgery, but I find it hard to believe that a tear can be fixed any other way.
i’m not sure yet- his appointment with the specialist was today so we’re waiting to find out. fingers crossed you heal quickly

We have these all the time! Except we fry the egg onto a corn tortilla, then scoop the beans in the middle and eat it like a taco, with goat cheddar and salsa. It is awesome.

he is the chef- he injured himself playing basketball, not cooking. i feel bad for him though- he can’t work for a while :/
My dog seems really similar to Bella in a lot of ways although they’re different breeds, and I always try and leave her as long as possible between haircuts coz I think she looks cuter with long hair!
