Party Menu
Morning! Hope youโre having a great day so far <3
Thanks for all of the tips about Bell and possibly adopting a friend for her. We decided to wait it out and reassess in a month to see how sheโs doing. And in the meantime, make sure to give her lots of love and attention, starting off with an extra long walk this morning ๐
Last night was Mexican Monday over here ๐
I told the Pilot to hurry up and get home from workโฆ I had a lot of guacamole and couldnโt possibly eat it all alone ๐
To go with our guacamole and chips, I made quesadillas- chipotle-lime shrimp (from Costco) and goat cheese for me on a teff tortilla, and shrimp and queso fresco for the Pilot on corn tortillas.
Grilled the quesadillas on the George Foreman and served with refried black beans.
Delicioso ๐
Iโve been trying to think of menu ideas for our housewarming party, which is in two weekends! [This weekend we wonโt be able to prep since weโll be partying it up in Philly]
Mexican is usually perfect for a crowd, so hereโs what Iโm thinking for a tentative menu:
-Green corn tamales
-Beans
-Mexican rice
-Mini chimichangas [from El Molinito]
-Homemade horchata and Sangria
-Chips, salsa, guacamole
-Fruit skewers with lime juice and mint
-Tres leches cake
Iโm going to be cooking up a storm next week ๐
If you have any ideas, let me know!
Iโm off to meet a friend for bfast and then getting started on the dayโs to-dos.
See ya laterrrr <3
xoxo
Gina
Something to talk about: Howโs your Make August Awesome checklist going? Weโre halfway through the month!
I still need to: go for a swim, get a new cookbook and sign up for a fitness event ๐
Yum! Everything sounds great. ๐
I’ve never tried a teff tortilla…how is the texture? I usually make my quesadillas with Trader Joe’s whole wheat corn tortillas (it’s a mix between flour and corn) and I love the slightly crunchy texture it gets from being panini’d (that’s how i make my quesadillas)
I still need to get my school situation settled as well as get my fall wardrobe in line! ๐
<3 tres leches!!! It was my wedding cake =)
I would surely be ready to devour that menu! Sounds delish! Most of my life I couldn’t stand guacamole and then about 3 years ago, I gave it another go and haven’t looked back since! I could eat it daily, I swear!
Ooh if you’re looking for a good cookbook, get Clean Start by Terry Walters! I just reviewed it on my blog a little while ago and the recipes are DELICIOUS! The link is here if you want it: http://wp.me/pSUCS-2q7
Mmmmmm ….I now want salsa , chips, and cake for lunch : )
Happy Tuesday! xoxo <3
My August goals are not going that awesome…well mostly just not in the fitness department. But the rest are going swimmingly!
Can’t believe we’re halfway through August! These months FLY by!
Love the menu. Plus you have things that are special to both you and the pilot (tamales, horchata) which makes it extra awesome. It’s perfect. ๐
Just made this Roasted Corn and Jalapeno salsa for a mexican night – was a HUGE hit! http://www.mylifeasamrs.com/2011/08/roasted-corn-and-jalapeno-salsa.html
plus you can make it the night before, and it’s just as good!
Mexican is definitely a crowd pleaser! Sounds great!
Every time I hear the word horchata, I think of this SNL skit:

I should make some too! ๐
i totally wish i could come to your housewarming! lol all that food sounds amazing.
Southwestern Eggrolls! These are DELICIOUS!
http://thenoshery.com/2009/06/04/southwest-eggrolls-with-avocado-creme-dip/
That menu sounds great – can I come too?! Haha ๐
Yum! That all sounds amazing…I love mexican food! Can you share your recipe for the tamales once you make them?
Maybe a build your own taco bar? Traditional tacos with soft tortillas, meat, onions, cilantro and radishes. You can make different meats (and maybe marinated tofo/tempeh?) and have different sauces out. I know you’re not a big meat eater, but not sure if your friends/fam are? Just an idea!
I second the request for the tamales recipe! I love tamales and since I’ve been trying to eat healthier, I haven’t made them. Any tips? Thanks! ๐
Gina, you’re coming to Philly?! I was unable to get tickets to the Healthy Living Summit, but if you wpuld like any tips on great restaurants or other hang-outs I’d be happy to help!! Philadelphia is home to me and I hope you love it! =)
Just make sure you have time to sit and enjoy your guests! You don’t want to be spending all of your time on your feet and in the kitchen!
Everything will be made in advance and ready to go- I learned that one the hard way
Mexican is my all time favorite cuisine! I’m from Miami so we have tons of Cuban restaurants– and not many baller Mexican options. For this reason, every time I see Mexican feastings on your blog I pretty much pass out ๐
You should have a tamale giveaway!… just sayin’ ๐
Tamales and Tres Leche cake. That sounds freakin heavenly.
This menu looks awesome! Can I come? Haha!
Tres Leches cake is one of my favorite desserts!
Mexican is an awesome idea for a party because it is soo easy to make in bulk!
Sounds like a tasty party menu! Build your own burritos are always delish and super easy to prepare.
What about chile rellenos? Those might be a big hit!
I always like Mexican for a crowd. Especially with a build your own burrito/fajita/taco type thing because the toppings— all those veggies and cheeses laid out side by side on a long platter look so beautiful.
We love doing taco bars here. Everyone can make there own when they want. Perfect. But what I really want to know is where did you get that carafe??? I have been looking all over for one just like it and no luck. I couldn’t even find one on Amazon which was kind of surprising.
Your menu sounds fantastic. ๐ Throw in some homemade queso maybe? Always my favorite item on any Mexican menu! Perhaps your goat cheese Bobby Flay one? Mmm!!
I wouldn’t have waited to share the guac ๐
Oh man, I would be ALL over that menu! Mmm!
mexican lasagna is always a good party dish for me!
mmmm – great, its only 10am and now I’m wanting lunch because these pics look sooooo good! ; )
I think a Mexican feast sounds like a stellar idea! ๐ My family does that every year no matter what for Christmas! I love it!
Aw poor Bell! I hope she is feeling back to her normal spunky self soon! And that looks like a delicious dinner! I love Mexican food! I’m way impressed with your housewarming party menu too- I’m sure everyone will love it and have a wonderful time!
Sounds perfect! I hope you are enjoying your new home! Have fun in philly!!
Everything sounds fantastic! I’m hosting a family dinner in 2 weeks-ish and need to plan my meals… not too sure what I want to do yet but mexican sounds like a good idea! ๐
That’s a lot of food! I’ve been experimenting with crab quesadillas trying to perfect my recipe. What are you going to Philly for? That’s my stomping grounds!
That menu sounds delish!
On the topic of Bella & a friend, we’ve got two cats and we got the second as a friend for the other when we were both working away from home all day everyday. Although they don’t “hang out” together all the time, I think they really appreciate having a “buddy” around so they aren’t alone. Whenever one has to go to the vet the other searches and searches for the other until they return. It’s cute ๐
I need to go back and check the August list to see what I need to get done! ๐
Please make tres leches cake…and then share your recipe ; )
Oh that horchata looks so good! There’s a couple local Mexican women who sell their horchata and other kinds of fresh juices, too, at the farmers market here every week and it’s sooooo amazing. It’s heavenly. I want to try yours!
And waiting on a dog. I am happy you guys are holding off for a bit. I think that is so smart. You can always re-assess in a few months and see.
New cookbook? Oh girl, I wish I could give you some of mine. I seriously have soooo many. I did a post on how I havent even unpacked them from out last move…haha! Internet, blogs and well, my books…I just dont use them as much anymore. Crazy but true.
Please feel free to send any leftover Tres Leches cake my way. Delicioso! I want to come to YOUR party. ๐
Mmm yummmy food. Speaking of yummy food, I totally celebrated Indian Food Tuesday with an awesomely delicious buffet here in Asheville ๐
Ooh tamales would be great! Even a make your own taco bar? Easy peasy!
Is there a recipe to the Tres Leches cake? I have never had it, but it looks heavenly and would love to make it for some friends. We are ADDICTED to anything Mexican and food. Haha. Thanks!!
i use alton brown’s recipe and it’s absolutely perfect.
I had the same question! I’m making tres leches this week and I was looking for a good recipe. Thanks!
My husband and I are having a housewarming for our first house in Portland the same weekend! ๐ I still have no idea what to do foodwise! Need to keep it simple since we’ll be away this weekend through Tuesday.
My BF grew up eating his mother’s Tres Leches cake and now that we’re both vegan, neither of us can actually enjoy it anymore. I’m going to try my hand at making a vegan version. Here’s hoping it works out!
that’s a great idea!
Lovin the menu- everything sound great. Maybe throw a dip into the mix as well, like a spinach artichoke dip-yum!
That menu sounds amazing! But wow that’s gonna be a lot of work. I guess it’s a good thing you inherited your Nana’s skills for cooking up a feast! ๐
Your dog is precious!!! What kind is it?!
What kind of cookbook were you looking for?
maltipoo ๐
i have one in mind! just need to amazon it ๐
Wow, at first glance I thought that cake was cottage cheese!! I have obviously been eating too much of it…
Now I have a massive craving for Mexican ๐ I never get sick of it!
I’m listening to ‘Umbre-ella-ella-ella” right now and I think you should sing to her!!
“Umb-bella-bella-bella”
๐
i just tried it. she just stared at me. hahah
