Eggless Nog

It’s my last day staying with the parentals– I move into my place TOMORROW! I’m really excited to finally get settled somewhere. Living like a nomad out of suitcases and boxes has been a little painful.
Two suitcases and 11 FedEx boxes to be exact.
One of the boxes weighs 70 lbs, which I carried down two flights of stairs and out to my car in Orlando. Adrenaline will give you superhero strength, I tell ya.
Last night, I dug for 20 minutes to find the secret ingredient for the eggless nog I’d been plotting 🙂
I’d been having a dilemma about how I would *color* the nog without using eggs. I wanted it to have that slight yellow eggy color.
TUMERIC.
Eggless Nog
Serves one or many
-2 C raw cashews, soaked for 2 hours and rinsed well
-2 C almond milk
-1 C light rum or 3/4 C bourbon (optional)
-1/2-1 t nutmeg (depending on how strong you want the nutmeg flavor)
-1 t cinnamon
-1 t vanilla
-pinch of sea salt
-1/8 t tumeric (optional, for color)
-Stevia, maple syrup, pure sugar or brown sugar, to taste (I used Stevia, about 1 T brown sugar and a drizzle of maple syrup)
Add ingredients to blender and blend on high speed for 3 minutes until smooth
There was no way I was digging in the boxes again for the Vita-mix.Top with additional cinnamon and nutmeg.
I’m off to breakfast with my daddoo and then hitting up a Power Hour yoga class. The weather is beautiful, so I might take the pups for a power walk, run, jog… wog. 😀

What’s your winter beverage of choice? Hot cocoa, tea, cider, nog?
I am a huge fan — when I was younger my mom used to always buy “Holly Nog” at the grocery store – just for me 🙂
But I am a cider girl — with a little bit of cinnamon liquor (like Hot Damn or Hot 100) – it tastes sooo good!

Cider! Which is strange, because I hate apple juice or applesauce. I guess I only like it hot 😉
Ooo i LOVE eggnog during the holidays, my favorite. I used to make some with soy and pudding mix, but since i’m less lactose intolerant, i usually just buy the regular light stuff.
I would love the recipe using soy and pudding mix!!!!!!!!!!!!! will you post?

Congrats on moving into your new place tomorrow! You have been on what feels like an epic sojourn for the last 8 mos or so. Basically the 2nd half of 2010 and a little before that. I truly wish you peace and a settled, “at home homey” feeling in your new place. I know that having the Pilot there would make it better but til he comes home, I hope you find some peace and calm and a sense of belonging and can put down roots!

I love a SMALL glass of egg nog as it really upsets my stomach (WAY too much dairy), but I’d have to say I’m a Scotch on the rocks kinda gal. I remember growing up my dad and uncle would have a glass Christmas Eve (after the festivities of dinner and going to church) and my dad would let me have a small sip and it eventually grew on me. I can’t do much (like maybe 3-4 sips worth) but it warms you right up! 🙂

Tumeric- cleva cleva! When I was a kid, I LOVED egg nog, then one Christmas I had a sip and thought it was the most disgusting thing ever. But over the past couple of years, I’ve started to dig it once again. I’d say homemade mulled hot cider takes the cake, though. So comforting 🙂

Congrats on moving in! From working at ‘Bizzle’ for a few years I’ve totally lost my appetite for eggnog from making Venti Eggnog Lattes for people. That’s 3x the normal serving! It’s insane. But I have been looking for a Raw and/or raw vegan nog…this one looks fantastic!
mmmm, nog. i like the idea of nog, but i never really loved the reality of it. once soy nog hit the market i found i like that better.

I prefer cider. The texture of eggnog bothers me.
BUT you could also try soaking the mixture with grated carrot to give it the color you are looking for. That is how people used to color the butter yellow when they made it at home!

Too hard to have a favorite! I do love nog (the hardcore stuff with cream and eggs but I’m going to try the cashews!), cider, hot chocolate and mulled wine too. I usually can’t stand to drink hot drinks but I will pound them down if there’s spice in them 🙂

I’ve never had eggnog before but have always kind of wanted to. It must be because me mom’s not a huge fan so I grew up with it being a “gross” drink in my mind. I like that this one’s eggless! I’ll have to give it a try.

This “Nog” looks delicious. My fave winter drink is definitely Hot Cocoa, but it feels like Christmas if I have a glass of Eggnog because I like Hot Chocolate any time of the year!

I’m not a big egg nog fan, but I’d definitely try an egg-less version. Other than that I’d pick tea. Unless it’s fall and we’re outside. Then it’s cider all the way.
Not a huge nog fan, usually one mug a season hits the spot for me. Love cider, and hot chocolate. So, I picked up some goat cheese! Better be good!! lol

For winter time, I like flavored coffee (just wrote cookies for a second there) and holiday flavor teas like Vanilla Cinnamon or Candy Cane tea from Trader Joe’s.
You carried 70lbs box, you’re a strong girl…either that or you were very determined.
