Perfect Mexican rice

Itโs Fiesta Friday over here!
Nothing too cray crayโฆ just me, Senor Pilot, Bell, and a boatload of Mexican food ๐
Today, the cooking bug hit me pretty ferociously and we both agreed that fish tacos sounded amazing. I hit up Trader Joeโs to pick up the goods, and 20 minutes later, it was time for this:
Guacamole, along with corn tortillas and shredded cabbage
Beans and Mexican rice
(Tip: Itโs easier for me to mash beans in a skillet than in a pot)
+ tilapia, seasoned with olive oil, lime zest, chili powder, garlic, sea salt and pepper, baked for 16 minutes at 350.
We also snacked on a ton of these while I cooked ๐
(Whole Paycheck hot salsa = amazeballz)
With desserts and pretty much any other sweet treat or salty delight, Iโm usually good with portioning things out and enjoying a serving before calling it good. Chips are a totally different story. I could have one or a thousand- itโs all the same ๐

Perfect Mexican Rice <— way easier than you think ๐
Serves 2
3 T minced sweet onion
1/2 C salsa (chunky salsa works best)
1/2 C jasmine rice
1 C vegetable broth
1. Heat the onion on medium in a little olive oil until soft (about 5 minutes). Add the salsa.
2. Add the rice, broth and bring up to a boil. Cover, reduce to simmer for 18-20 minutes.
Thatโs it! ๐

I’ve never heard of salsa in the rice! That makes so much sense!! Going to be trying that next time I make rice. Everything else you made looks spectacular too! You rock, as per usual.

Did you do anything to the beans beside mash them. They look good. I would love a homemade refried bean recipe.
I’ve always wanted to make healthy fish tacos, but salmon is my favorite fish so I might just forgo the tilapia and wing it

I have had a recent love of super spicy mixed nuts, i.e. the Chili Lime mixed nuts from TJ’s. omg. Girl. I took down an entire 10 oz bag!! in 24 hrs. So spicy they make me sweat and give me heartburn but I love every sweaty second. I am about those nuts like you are with the chips it sounds like. Haha! ๐

Looks amazing! I’m not sure how you make your beans, but we are a little lazy over here and the Trader Joe’s refried black beans with jalapenos are amazing and have no weird ingredients!

I have a pretty important question, so i realllly hope you see this post! I am looking into becoming a aerobics fitness instructor and I could really use some help/tips etc. I think i am going to go with afaa (aerobics and fitness association of america) and I was wondering who you are certified under, how much it cost you, who do you reccomend going with since i know you have went all over the country, i would like to have something that certifies me so i could teach if i move, what is your advice on this? any and ALL advice would be SO greatly appreciated, also if you have posted before about this could you link to it? Thank you SO much for whatever you can offer!!

i went with afaa and am so happy i did. it was about $200 and i have to renew every two years with continuing education credits, but it’s been 100% worth it.
definitely call gyms you’d be interested in teaching at and see which cert they recommend- pretty much everyone will take ace, afaa and acsm

Those chips are soo good- I’m not even a chips person! For some reason i think they taste like pronto pups, strangely enough.
