Feelin’ feastly

Hey everyone! Happy Sunday 🙂 Hope you’re having a good morning afternoon. The pilot and I slept in quite a bit today, but last night’s dinner party was a success.

While I was prepping everything, I wore my POM apron.

Set out the appetizer plates:

Hummus, smashed up in the mortar and pestle (Opa style!) with garlic, cumin, cayenne, awesome extra virgin olive oil, sea salt and tahini

With bleu-cheese stuffed olives, carrots and snap peas

Tuscan White Bean Dip (using a little on the canned liquid to thin it out, instead of the plain yogurt)

(used millet bread instead of regular sandwich bread, to make them gluten-free)

The salad was mixed organic greens, with anjou pears, crumbled goat cheese, rawnola, and Organicville agave-sweetened balsamic dressing

The guys’ lasagna and the girls’ lasagna (using goat cheese instead of ricotta for the butternut squash lasagna)

And the best part:

(Vegan gluten-free almond butter chocolate chip cookies for the girls with coconut bliss vanilla ice cream, vegan chocolate chips, and alaska organic vegan chocolate syrup.. the boys had Pillsbury chocolate chunk cookies with Ben and Jerry ice cream)

So as you can see, it was a foodgasmic night with wonderful company 🙂

The pilot and I are going to make breakfast and then start cleaning the disaster that is our upstairs. We never caught up after our Gatlinburg vacay and then went to Tucson, so it’s time to make it spic and span 🙂

I’ll be finishing the Winter Shape Up workouts today (launches TOMORROW am!) and also filming a Zumba video.

    Wow Gina, the food you made for your dinner party looks wonderful. Is the girls lasagne easy to make? I may try to make it or the guy’s lasagne? Getting hungry just looking at the photos!

      they’re both very easy to make.. just a little tedious with all of the steps.
      WAY worth it though 🙂

        Great thanks Gina, I’ll try them out. It’s great but your blog has really motivated me to keep healthy and eat well. My only downfall is drinking diet coke, really have to give it up.

    Can’t wait to see the Zumba video. My boyfriend is a highly trained salsa dancer whereas I have two left feet, so it’s always fun to watch that stuff and wish I actually had some rhythm 😉

    It all looks so delicious and your table decorations are adorable too! This might be a silly question but did you bake the cookie part of the pizookie? I couldn’t tell! Thanks for the amazing healthy dinner ideas…I’m going to make your butternut squash lasagna for my family tomorrow night!

      yes, i baked it but under-baked it by about 2 minutes so the middle was still gooey 🙂

    Your dinner party looked amazing! I just discovered your blog and LOVE it. You are so inspiring….and also made me realize that I don’t eat enough veggies or lift enough weights! I just started blogging about my marathon training/attempt to eat more healthy. I will be using some your healthy recipes and adding the “The HTP Intro to Iron Pumping Workout” to my cross-training.

    Gina:

    You have to try my favorite salad.

    Kale, lemon juice, olive oil, pepper, cayenne, grated parm (or goat!), and toasted breadcrumbs (millet or sprouted)

    Mix & eat.

    Seriously. Easiest salad ever, but SO delicious and filling! I have a feeling you will LOVE it.

    OMGGgaahhh G u are amazing!! I would’ve fully been like, ummm let’s go out to dinner yay! 😀 LOVE your volcano idea ps, those are the freakinnnn best!!!! I went to the one in Planet hollywood in Veggy- and we secretly told the waitress it was my friend’s 21st bday (it was!) so we were all stoked when she brought out the flaming volcano…THEN proceeded to put it on our bill 🙁 hahahah ooo well it was tastay.
