Mixed berry crumble

Hi friends 😀 How has your Monday been? Hopefully it hasn’t been to Moan-day ish 🙂 Thank you so much for the sweet compliments on my baby belly. I definitely started showing early- Dr. Google said it may be because I have a short torso orrrrr the little nugget just wants to make his presence known. 🙂

This week’s flower bouquet is a lovely bunch of peonies:

I was at Trader Joe’s and knew that these were the ones. I love their fun bulb shape and they smell heavenly!

When I got back from grocery shopping, it was lunchtime and I was actually in the mood for a smoothie 🙂

The bummer is that I picked up this new protein powder to try since I’m waiting for my Sun Warrior to get here:

and read on the back to check with a doctor if you’re pregnant or nursing. Instead of calling my midwife, I just used the Nutribiotic (gag-tastic) protein powder I had in the pantry and made this little beauty:

-1.5 C almond milk

-1 C frozen mixed berries

-1 T raw cacao powder

-1 T nutribiotic protein (blechhhh)

-1 banana

-handful of spinach

-cinnamon

So delicious 🙂

After my smoothie, I put together a crumble to take over to our friends’ tonight since we were invited over for dinner.

It’s super easy and what takes it over the top is putting the crumble topping at the bottom and top of the berries. Bonus: a dose of healthy fats and protein from the almond meal 🙂

Mixed Berry Crumble

(gluten-free with vegan option)

Pre-heat oven to 350 and spray a 9×13 baking dish with nonstick spray or olive oil.

Berry mix:

-2 bags of frozen berries

-1/8 C white sugar (or you can use Stevia if you’d like)

-juice of half a lemon

In a large bowl, combine the berries, sugar and lemon juice. Toss to coat.

Crumble:

-2 C gluten-free oats (or regular)

-1 C almond meal (or flour of choice)

-1/2 C brown sugar

-1/2 C Sucanat (or more brown sugar)

-1 t cinnamon

-1/8 t nutmeg

-pinch of sea salt

-1 stick (8 T) organic butter (vegan friends: Earth Balance)

-1/4 C canola oil

In a mixing bowl, combine the dry ingredients, stir in the canola oil and cut in the butter using a pastry cutter or two knives. (Or if you’re not feeling like it, like me, let the stand mixer do the work for you)

Press half the crumble mixture at the bottom of the dish:

Top with the berries, then the rest of the crumble mixture.

Bake for 30-35 minutes until bubbly 🙂

I saved myself a little from each mix and heated it up in a coffee mug to enjoy…

I’m glad no one was here to hear my foodgasm. Hahah.

I’m off to do some strength work –already walked for an hour today- and then taking Bella on a field trip to PetSmart.

Something to talk about: How have your workouts changed now that summer is here? I’m definitely working out 100% indoors now and find that if I don’t go early, or late at night, it’s harder to go. Also, thank goodness for workout DVDs for when I don’t feel like venturing out into the blazing Tucson sun.     I went for a walk today, since i’m so out of shape i can’t run much, and tested out my garmin forerunner i got for my birthday. Technology is impressive!

    I love the TJ Very cherry blend, I’ve been adding it to my oatmeal in the morning!

    I’ve been getting up really early to get my outdoor workout in, but I kinda love the early morning Phoenix heat (so far!). I stick a dvd in when I sleep in! Or use an online workout like some of yours!

    I made a strawberry-rhubarb crisp for my husband’s birthday back in May…there’s just something of fruit crisps/crumbles that just make me so darn happy. Yours looks wonderful!

    Mmmm, crumbles are one of my favorite desserts. That one sounds like a winner — love the idea to put the crumble layer on both the bottom and top!

    As far as my summer workout changes, it just means I’m able to run outside more often! I live in London, so I don’t have to worry about overheating too often. 😛

    When I was in Massachusetts I would do an outdoor run mid-morning, but now that I’m in Orlando it’s too deathly hot to work out outside. Admittedly, I’ve barely worked out in a week unless you count walking around Disney for 14 hours ad working out. 😉

    Mmm, blueberry crumbles are the best! My mom makes a fantastic blueberry crumble where she only cooks half the blueberries in a saucepan with sugar, water, and cornstarch, then stirs in the rest of the berries fresh. She makes the crumble topping separately, or just pours it in a pie crust. So cool, fresh, and delicious!

    That crumble looks so yummy! Congrats on the pregnancy 🙂 My workouts are definitely done indoors, but I also think that it’s warmer inside of the gym because I’m sweating a lot more.

    My summer workouts are exactly the opposite of you — I’m almost 100% outdoors now, as I live in Alaska. The summer months are especially precious, and with the light — you can be outside in the sunshine early early in the AM or late late and night! 🙂

    My fiancee and I are training for our first 5k in August, so we’ve been doing a mix of indoors on the treadmill/strength training and outdoors just to change it up a bit! That crumble is on my “to make” list now…yum!

    I love crumbles too – especially heated up with iced cream……yummy!!!

    Since I teach year round my summer routine is pretty similar to the rest of the year except now I get to haul around a couple gigantic box fans to help keep my zumbies cool while dancin’! Sadly tonight there was no need for fans at it is COLD here in Nova Scotia. I’ve heard we are going to have a crazy hot summer so I should enjoy the cool while it lasts…

    Haha I’m the opposite! Now that the weather is nice, I’m trying to workout outdoors more. Lately, I’ve been doing my normal workout at the gym and then going for a quick 20-25 minute walk outside after dinner. It feels so GOOD to be in the fresh air while I can!

    Here in Illinois, I’m trying to get outside to exercise as much as possible! This morning’s run was in mid 60 temps and sunny skies. I was in running heaven!! 🙂

    Peonies are so beautiful! 🙂 Could you please send that crumble to my house..? lol. My workouts have changed this summer because I am working a night shift job. On my days off, I enjoy running outside in the mornings.The days that I work I have to take my workout inside because it is just way too hot to run outside at 3 in the afternoon!

    I attempted a crumble/cobbler thing once, and it was such a total fail. It was then that I realized re-tooling recipes is not my strong suit.. 😉 I want to try your recipe though- it looks yummy and perf for a brunch/breakfast even!

    I’ve got a row of about 8 peony bushes in my front yard – we get a lot of foot traffic in the neighborhood as it is very safe here – lots of dog walkers, joggers, walkers and kids in strollers. Everyone always stops to smell. Your “college puppy” is smiling. Glad she is so happy. Maybe if you’re early to show – you’ll be early to bounce back into shape too! I have a short torso, not much space between my ribs and my hips. Take care and enjoy your evening.

    Thanks for the crisp recipe, it looks great and I’m glad that it’s gluten-free 🙂 What type of almond meal do you use?? As for my summer workouts, mine are mainly outdoors aside from my bi-weekly group strength class. I am running, biking, and hiking around and enjoying the New England spring/summer weather 🙂

But is it any more of a threat than crossing the street, eating pickles which are fermented with bacteria or going outside in the sun? Highly doubtful 🙂 My .02 only, of course!

    But you were better safe than sorry 🙂

    And that crumble…omg girl you OUTDID yourself!! It looks amazing! I love love love crumbles + oats + berries + brown sugar. My mom used to make crumbles like that as a kid (with more sugar and lots of butter too..lol) with my dad’s fresh raspberries from his garden. I love your creation!

    My workouts change substantially in the summer. I live in a climate where it is almost 7 months of winter and/or cold. So it is a dream to be out walking, running, biking, etc. with the kids, dog, or alone. I have to be careful to not overdue in the summer because I could be out running every single day!

    Trader Joes has the BEST frozen fruit! I am really loving the mango lately. My workouts have changed only in that I now run outside most of the time. Chicago weather is so unpredictable, though – last week it was 100 degrees and sunny one day and 50 degrees and rainy the next. That kind of dictates whether I’m indoors or out.

    The crumble looks fabulous. I think that some SO-delicious coconut milk ice cream on top would make it even more “foodgasmic”! Or maybe on top of Greek yogurt for breakfast?

    Workouts have definitely changed for me since moving back to Charleston. Living in Denver for the past year, I was spoiled with living less than a mile from 24-Hour Fitness. Now, I’m back in a house and the nearest gym is 30 minutes away, so I have resorted to living room boot camp or exercising before 8 am or after 7pm. I don’t have as much motivation in the humid, sticky heat but my bikini is a great reminder. 🙂

    I find that summer always throws me off with workouts – I want to enjoy it more because it’s warmer but in actual fact it just makes me more worried about going out running in case I get too thirsty (I hate carrying a water bottle). Kinda annoying really!

    Your smoothies always look AMAZING. I also have an aversion to most protein powder and lately bananas :/ (not pregnant grouchy stomach!) Any ideas on how to make a green monster smoothie w/o bananas? Summertime means harder work outs for me. I seem to hate coming inside so I am out on the bike, running and horseback riding more then I EVER was in the winter 🙂 Although this heat is rough and you have to be really careful to take enough E caps and water with you on the long runs!
