Like it a lox

Smoked salmon is back in my life in a big way….

lox2

So salty and glorious.

Before coming downstairs to make breakfast, I had to convince the lazy girls it was time to start the day.

This morning, we’re going to take a walk –Bell needs to get out of the house, she was doing sprints last night- and later today, I’m going into work for an hour Tabata training. I’m really excited to see my work friends again, and check out the new class format.

Have a great day and I’ll be back later with a Family post!

I just had TJ’s Super Spinach salad for the first time recently and absolutely LOVED it – such a great combo of flavors! I’ve never even thought to put nut butter on a sweet potato but that sounds absolutely delicious and I will definitely be trying it soon. Also, great quote! Very wise. Enjoy your walk!

Ooohhh…a sweet potato with almond butter….that looks delish! I had never had sweet potatoes before until you posted one a couple of weeks ago smothered in goat cheese and so I tried it and have to admit that I’m hooked now! Have you dehydrated any and made sweet potato chips before? That sounds so good!

Wow, every time I see something delectable from either Trader Joes or Whole Paycheck I get soooo envious we don’t have anything like that around here! That salad looks incredible!

Tell Liv to get her days and nights back on track so Mama can sleep! 😉

Sweet potato and peanut/almond butter is one of my favorite combos. I’m pretty sure I made it through the last year of college thanks to that goodness. Must bring it back into my diet.

Mmmm I love smoked salmon! Don’t buy it nearly as much as I should though. And oh my goodness, Olivia has so much hair! (It looks that way in the photo anyway.) Reminds me of me when I was a baby. Enjoy going in to see your work buddies! 🙂

  19. Alisha Parmerlee on February 7, 2012 at 1:08 pm

Where do you find good smoked Salmon? I’ve never had it before, is it usually super expensive?

Newborns are so nocturnal, aren’t they. Wish they would get that day-night message but that one doesn’t quite seem to register, does it. Ugh. Hope you’re hanging in there, mama!

  22. Lindsey on February 7, 2012 at 1:23 pm

What a sweet picture of your two girls! I remember when days seemed like nights and nights seemed like days. I thought I was living in some sort of crazy twilight zone that would never end. But, don’t worry… it does!! 🙂 So glad to hear you can workout again! I’m going to my first ever Zumba class on Thursday! I can’t wait!! 🙂

I must remind myself to add pumpkin seeds to my next salad. It’s such a simple add-in that I forget about. Interesting combo with the sweet potato…will have to try it out! Hope the rest of your day is lovely.

Mmmm this post is filled with my favorite things! Smoked salmon, sweet potatoes, almond butter, and TJ’s! I haven’t had smoked salmon in my life in quite a while – I think I may have to pick some up tomorrow!

  28. Sara on February 7, 2012 at 2:47 pm

At least she can’t move yet! I’ve got my girl coming for her ‘NZ time’ soon. Nothing quite like a jetlagged six year old. Last time she arrived at noon, fell asleep at 4pm, woke up at 12 and was awake ALL NIGHT. She ‘amused’ herself by decorating. My partner got to work next day, opened his laptop case and discovered his laptop was completely covered with ‘my little pony’ stickers and barbie plasters. Sweet. But, he had a meeting that morning, pulled out his laptop and …

  29. kerry on February 7, 2012 at 2:58 pm

stil yet to try sweet potato with almond butter!

Ah, the day/night confusion…she will turn around soon. My little guy still has a bit of it, maybe they can get together and party while we sleep? My hubby calls Jack his party animal too:)
    PRECIOUS pic of Livi:)
Good luck working out, it was the BEST feeling for me after not working out for a few weeks.

  34. bri @ In Love & Words on February 7, 2012 at 3:52 pm

    I wish there was a TJ’s by me! 🙁

Do you walk with Livi and Bell at the same time by yourself? I wonder if there is an easy way to do that – I have a pug and a shar-pei mix that will need to be walked once the baby comes. I would think that somewhere must sell a leash that attaches to a stroller!

    • Fitnessista on February 7, 2012 at 5:16 pm

i haven’t tried it yet! hopefully soon 🙂

Oh my gosh a sweet potato with almond butter?! THANK YOU! I have been trying to find a recipe to make with my lonely sweet potato sitting on the counter. I’m a poor college student with ZERO time sooooo this is PERFECT! Thanks Gina 🙂

  39. Gabby on February 7, 2012 at 5:12 pm

Which brand of almond butter is the best? I’ve only tried peanut butter and coconut butter on sweet potatoes but almond sounds amazing.

When I was in France this summer (before I became a vegan) I ate SO MUCH smoked salmon. It is so much more available and affordable over there than it is here! I remember looking for it when I got back and not being able to find it except in a few stores. And I have to say, it is one of the foods that I miss greatly. =(

LOVE the Super Spinach Salad. Sometimes a salad alone just doesn’t do it for me, but the quinoa packs a filling punch.

I really wish I had a Trader Joe’s near me (upstate NY = no TJs), I love it so much! My parents used to take me on trips to TJs when I was a little and we lived in Phoenix. Now I have to put effort into making TJs happen, but luckily I travel to California for work quite often and might be making a trip next week, I’ll have to swing by and try that salad! It looks amazing – and so does the sweet potato/nut butter combo!
