Thanks again to those of you who participated in the Sun Warrior promo– I stocked up, too 😀 The deal is good until tomorrow AM.

So, I didn’t end up making it back to the gym yesterday to finish my weights sesh.

But next time I do, I have a little extra motivation because of the sahweet gym back that the Livewell fairy sent me 😉

Dinner last night was one of my favorites:

SNOBBY JOES!

This meal is so flavorful, inexpensive and easy to make. The pilot likes it, too 🙂 If it’s your first brush with a vegan dish, or if you want to make a vegan dish for someone else, try snobby joes. I made these, along with some sweet potato fries, for my very carnivorous (but open-minded) Tucson family- they loved them 😀 What’s your favorite quick, easy, healthy dinner?

I saved a little room so I could have protein ice cream before bed 😉

The puppers and I polluted our minds watching Kourtney and Khloe and the Bachelorette, then called it a night 🙂

This morning’s bfast was a little.. interesting.

Lovely, right?? Hahaha.

I *tried* to make a breakfast cookie with the Vega Smoothie To-Go since I’m out of Sun Warrior, forgetting how strong the Vega is. I only used 1/2 a serving but ended up “watering” it down with almond milk and turning the breakfast cookie into an overnight oats/chia pudding hybrid. I think the Vega is best for a smoothie, but not really bfast cookie appropriate.

Today’s plan:

-Yoga

-Registering the new wheels

-Mall 😉

-Lunch + Blog

-Work

-Cardio

    I had protein ice cream last night for the first time. I was so proud of my little blender for crushing all it the ice. 🙂 I even made it chocolate in honor of your chocolate shakes. 😉

    I made protein ice cream last night, but I need to buy the gums to help it thicken and cream better. It was delish anyways!

    New reader here–love the blog, Gina. Great info and very entertaining.

    My favorite quick and healthy dinner is beans and brown rice. I freeze leftover rice so I don’t have to wait for it to cook. Then I saute some garlic, onion and olive oil, add a can of black or pinto beans and a can of fire-roasted diced tomatoes and let simmer for 15 mins or so. Delicious just like that, or you can add cheese and sour cream, or an avocado, or I put it in a tortilla for my kids.

    I always save a little room so I can have some banana soft serve after dinner(sometimes w/ protein, depending on if I’ve had enough for the day!) and it makes my night. 🙂

    Gina, your meals always look so yummy. I love that you feature Indian on Wednesdays. They get my mouth watering. These snobby joes look fantastic – I might give them a try tonight. Just a question – can you get Zumba videos? My gym doesn’t offer it and I really want to try it out.

    That bag is really cute! And I think I’m in the market for a new one since the zipper is busted on my favourite Lululemon bag.

    I wish I could try making those snobby joes for my family, but unfortunately they’re carnivorous and not at all open minded! 😛

    I LOVE snobby Joes!!! I was a big fan of regular sloppy Joe’s growing up, but since I don’t eat beef much anymore, I live these. Iv’e even gotten my parents who are total meat and potato eaters to eat them! I load them up with veggies to make them go even further too. It’s great on a bed of lettuce, or as a dip too. So versatile.

    Now I am craving them. Lentils in the pantry…I think I just figured out dinner! Thanks!

    Awwh Zumba!!! do you have any fun links to zumba work outs? The only zumba instructor in our town just had emergency surgery and is out until September. So sad for both reasons!! 🙂

    It’s so funny you should post a recipe about “Sloppy Joe’s”. I was planning on making them for the kids tonight and then making myself the usual second dinner as I am the only vegetarian in the house. Sometimes I go through the extra effort but I have never found a really good recipe- I will be making these along side and we will be dining side by side tonight with the “same” meals! Thanks. Also, after 4 back surgeries I went to my first Pilate’s class and it went great! I have been doing PT for what seems like forever (still am) but it’s nice to ease back into the regular workout scene. I am a regular reader and a sometimes poster! I love love your blog.     I have a quick spin question- what would you recommend eating beforehand? And should I eat anything after or just wait til my next meal? ( I usually spin in the morning at 9:30 and eat lunch around 12:30/1:00). Thanks!! 🙂
