Spicy Shrimp Noodle Bowls

Hey! Happy Indian Food Wednesday! Whoโ€™s celebrating? ๐Ÿ™‚

The Pilot had a long day yesterday, so when I called him asking if he wanted pizza or noodle bowls for dinner, I was expecting kind of โ€œwhateverโ€ it. โ€œWhatever you want to make.โ€ Notsomuchโ€”he definitely said yes to the noodle bowls.

And they were GOOD.

shrimp noodle bowl

The best part? They took less than 15 minutes to make.

I rinsed off some defrosted cooked shrimp and took the tails off

shrimp

and while the brown rice noodles were boiling, I prepped the other ingredients.

veg (2)

+ lots of spicy almond butter sauce ๐Ÿ˜€

Sautรฉed the garlic, bell pepper and carrots with a little sea salt, pepper and cayenne.

veg3

(not too much- so they were still crispy)

and when the noodles were finished, added the shrimp, noodles, veg and sauce to the noodle pot and stirred to combine.

noodle

Boom.

Pretty amazeballz ๐Ÿ˜‰

Iโ€™m off to get ready for work- itโ€™s gloomy today!

clouds

Itโ€™s going to be a noodle-y dayโ€ฆ Iโ€™m scheduled to teach 2 stretch classes ๐Ÿ™‚

See ya later this afternoon <3

xoxo

Todayโ€™s workout jam: โ€œFaintโ€ Linkin Park โ€“ itโ€™s one of the songs I used to play for spin classes, and is AWESOME for sprints ๐Ÿ™‚

    Hi Gina,
LOVE your blog… I hop by a couple times a day and have really loved the recipes and getting to know you, Pilot, and bean :). When drooling over your yummy veggies this morning, an article I read once popped into my head. It was about the dangers of cooking with Teflon. That the PFOA chemical can cause reproductive issues and can be transferred to a fetus. I was curious if you had heard of this/researched it? I read some countries are trying to ban the chemical. Just curious of your thoughts… or anyone elses on the subject! And would love to be proven wrong here! I certainly don’t mean to alarm you! I just want to put the topic out there, not having too much knowledge on it.
Here’s an article I came by just now when I googled the topic… http://www.eco-pregnancy.com/should-you-ban-your-teflon-pan/

I am so the opposite of you with pregnancy cravings – I crave fruit like no other! Spicy food gives me heartburn just thinking about it. Haha.

Looks delicious though – and nothing beats Tucson during monsoon season!

Have a relaxed and lovely day!

  44. Karin on August 3, 2011 at 6:38 pm

Noodles bowls look fantastic! I will give it a try.
A question to ponder. What do you think of calorie counting? Do you think it is good or bad?
Especially for people who have 50lbs to lose (post pregnancy for me). Haven’t a very difficult time losing it.

    • Fitnessista on August 3, 2011 at 9:23 pm

i think it can be a great tool if done correctly and doesn’t become to obsessive or extreme

Made this last night…you’re right it was pretty amazeballz! <—- loving that word!
I blogged about it, and the boyfriends stamp of approval.

Your pics look waaay better, and I think I used more then a *touch of honey* in my sauce because it came out kinda sticky! Definitely gonna have to give it another try, but the flavor was amazing!

    Thanks ๐Ÿ™‚ love your blog!
