Spicy Shrimp Noodle Bowls
Hey! Happy Indian Food Wednesday! Whoโs celebrating? ๐
The Pilot had a long day yesterday, so when I called him asking if he wanted pizza or noodle bowls for dinner, I was expecting kind of โwhateverโ it. โWhatever you want to make.โ Notsomuchโhe definitely said yes to the noodle bowls.
And they were GOOD.
The best part? They took less than 15 minutes to make.
I rinsed off some defrosted cooked shrimp and took the tails off
and while the brown rice noodles were boiling, I prepped the other ingredients.
+ lots of spicy almond butter sauce ๐
Sautรฉed the garlic, bell pepper and carrots with a little sea salt, pepper and cayenne.
(not too much- so they were still crispy)
and when the noodles were finished, added the shrimp, noodles, veg and sauce to the noodle pot and stirred to combine.
Boom.
Pretty amazeballz ๐
Iโm off to get ready for work- itโs gloomy today!
Itโs going to be a noodle-y dayโฆ Iโm scheduled to teach 2 stretch classes ๐

This looks great! Seems really similar to the Thai Red Curry Shrimp I made a few weeks ago. It was very quick and yummy!

i made a thai dish using brown rice noodles the other day! how do you get them to not be so clumpy and sticky when you drain them? i love noodle bowls and this looks SO good. cant wait to try it!

yep trader joes! they’re right by the rest of the spaghetti in a spaghetti bag type thing.

ahhh you’re probs gonna crave spicy food till the end of your pregnancy. I DID!! I actually used bread to sop up hot sauce on my plate.

I think I need to try the noodle bowl! I make pasta a lot when I want an easy dinner but always use regular red sauce. I need to change it up!
I loooooooove noodle bowls. So comforting and yummy, and brings me right back to dinners out with friends in high school at the neighborhood PF Chang’s where half our class worked as hostesses/busboys.

And those sugar snap peas from TJ’s? Girl. I eat TONS of those. I buy them by the bag load. I eat them daily! I even brought a bag of them with me on the airplane and a bag in my luggage while I am here in Colorado. That’s how much I love them ๐

LOVE your blog… I hop by a couple times a day and have really loved the recipes and getting to know you, Pilot, and bean :). When drooling over your yummy veggies this morning, an article I read once popped into my head. It was about the dangers of cooking with Teflon. That the PFOA chemical can cause reproductive issues and can be transferred to a fetus. I was curious if you had heard of this/researched it? I read some countries are trying to ban the chemical. Just curious of your thoughts… or anyone elses on the subject! And would love to be proven wrong here! I certainly don’t mean to alarm you! I just want to put the topic out there, not having too much knowledge on it.

A question to ponder. What do you think of calorie counting? Do you think it is good or bad?
Especially for people who have 50lbs to lose (post pregnancy for me). Haven’t a very difficult time losing it.

Noodle bowls are my favourite fast dinner! I love making a sunflower seed butter sauce, but I’ve never used AB. I’ve got to give that a try!

Your pics look waaay better, and I think I used more then a *touch of honey* in my sauce because it came out kinda sticky! Definitely gonna have to give it another try, but the flavor was amazing!
