Pumpkin Chocolate Chip Baked Breakfast Cookies
Hi! How about a cookie for breakfast? Better yet, there’s chocolate. And it’s pumpkin! Hello, pumpkin breakfast cookie!
Over the past couple of weeks, Iโve found myself back on the oats wagon. It might just be the season, but Iโve found myself enjoying oats more frequently in fave recipes like these beloved pancakes, breakfast cookie dough cereal, baked oatmeal and breakfast cookies. Weโre going through some kind of crazy heat wave right now in San Diego, so I did something that makes a lot of sense:
Broke out the pumpkin.
I couldnโt help myself when I thought of how amazing it would be in a baked breakfast cookie component.
Pumpkin, in addition to being nutrient-dense and holiday-centric veggie, is also extremely filling. When I include pumpkin puree into oats or a smoothie, the combo is so much more satisfying (and tastes like pie; always a good thing).
Pumpkin Chocolate Chip Breakfast Cookie
These little cookies contain a kick of cinnamon spice, whole grains, and protein.
Oh, and chocolate. Chocolate for breakfast is always a wise choice ๐

Pumpkin Chocolate Chip Breakfast Cookies
A sweet breakfast treat, perfect to make ahead and enjoy throughout the week. These are especially wonderful with a cup of coffee and plate of scrambled eggs and fruit, or crumbled onto yogurt.

- Total Time: 17 minutes
- Yield: 16 1x
Ingredients
- 2 cups old-fashioned oats (for gluten-free, be sure to use certified GF oats)
- 1 big scoop (42g) vanilla protein powder (I used Raw Fit)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- Pinch of sea salt
- 2 tablespoons melted grassfed butter (unsalted)
- 1 teaspoon vanilla
- 1/2 cup pumpkin puree
- 1 egg
- 1/4 cup brown sugar
- 1/4 cup chocolate chips
- 1/2 cup almond milk
Instructions
- 1. Preheat the oven to 350 degrees and spray two cookie sheets with nonstick spray or olive oi.
- 2. In a large bowl, combine the oats, protein, cinnamon, pumpkin pie spice, baking powder, baking soda and salt until well-combined.
- 3. Stir in the chocolate chips.
- 4. In another bowl, whisk together the butter, egg, almond milk, vanilla, pumpkin and brown sugar. Pour this mixture onto the dry mixture and stir well until a nice dough forms.
- 5. Using a tablespoon or melon ball scooper, scoop the dough onto the cookie sheets and lightly press down to make cookie shapes.
- 6. Place in the oven and bake for 12 minutes or until set. Allow to cool completely.
Notes
- Don’t have pumpkin? Mashed sweet potato would work nicely, too!

Out of curiosity, how does the Raw Fit protein powder compare to Sunwarrrior Classic in your opinion? I usually use Sunwarrior, but I am always curious about trying new products.
i like the taste of the sun warrior better, but bought the raw fit because it was on sale. i like it a lot in smoothies and snacks but don’t love it by itself

I made a mistake last week of posting a flourless pumpkin almond choc chip muffin recipe I was tinkering with and suddenly social media went crazy on me. Everyone wanted the recipe this second. I was surprised everyone wanted pumpkin so soon. It’s so hot here still. I still don’t want to bake much.
I love pumpkin, I love fall, but I can’t get into it yet. It’s just too hot! Now maybe if I find some pumpkin ice cream somewhere!
I can’t wait to try these out! I’ve been making pumpkin “brownies” with a handful of dark chocolate chips thrown in. It’s basically like a pumpkin pie in a brownie pan. Delicious!

Those will definitely be made this weekend for next weeks breakfast/snacks. My 4yr old loved the original baked bfast cookie and so do I. Who doesn’t love having a cookie for bfast. Actually, that original recipe is how I found you, so it one of my favs.

(side note, i have had pumpkin oats the past 3 days and have eaten pumpkin every day for almost the past 1-2 weeks. so YUM.! libbys is also at WF not and tastes so much different plain ๐ )

I just made a batch and they’re fresh out of the oven! They’re really good, I like that they’re not overly sweet. They’re a little crumbly but that’s probably because they’re still hot–I was hungry! ๐
Made these this afternoon with my kiddo’s and it is DEFINITELY a keeper! When I told them they could have one for breakfast before school they just could not believe it! ๐ I struggle to find things for my picky 6 year old, so this is just perfect for me to throw in her lunches instead of a store bought granola bar!

Just made these – they are amazing! I generally dislike the consistency of oatmeal as a warm or cold breakfast, but baked into cookie form is great! I may try a variation of cinnamon and apple next! Thank you ๐

I’m definitely going to make these and either eliminate or sub the sugar. I’ve gotten to where I don’t need stuff as sweet as I used to. I’m probably going to use coconut oil too, as someone else suggested.
Random, but I know that you love Trader Joe’s as much as I do and you’re a pumpkin-aholic soโฆ I was grocery shopping a few days ago and saw that they had TJ’s pumpkin bagels. Only one bag left. My rationale is that I will eat one after my 10 mile run on Saturday, and my husband will eat the rest. Ha! Then one of the guys working there said I HAD to pick up the pumpkin cream cheese to go with it. So, naturallyโฆ Needless to say, the hubs ate one this morning, and my-oh-my, the bite I had was deeeeelicious! Just saying. Maybe you’ve had them before??!

My son loves these these breakfast cookies. I make a batch of these and your other breakfast cookies at the same time and wraped them individually then freeze them. I pull them out the night before and he eats them with yogurt before school.
I made these for the first time this morning and am eating as I’m typing LOL! I made a few minor alterations but HOLY OMG they are perfectly yummy and healthy and delish!!!! I’m taking baby steps into the GF/AIP protocol – wish me luck! Hugs, Holly

Really great. I didn’t have any chocolate chips so I just added chia seeds instead!
