Homemade Sous Vide Egg Bites (without the sous vide machine)
Word to the world: we have a sous vide egg bites problem.
When I first heard about these things months ago, I got myself to a Starbucks ASAP. Eggs are my favorite food on the planet, and I was so pumped to get a protein-y egg bite with my morning latte. Until, I couldnโt find them in San Diego. Anywhere. Sometimes, I would just ask for them when weโd go to different locations, and every single time I was turned down by the barista.
Once I asked why they didnโt have them, and the girl told me that it was because they were too popular and they couldnโt keep up with demand.
Get rid of something because itโs too popular?? #thingsthatmakezerosense.
Wiping a silent tear off my cheek, I vowed to myself that I would find them.
The same thing happened in Tucson. The mysterious egg bites were nowhere to be found.
When we drove into Valdosta, I decided to casually ask at the Drive-Thru if they had sous vide egg bites even though I didnโt see them on the menu. It was more out of habit than anything at that point.
โYeah, what flavor would you like?โ
โWHAT FLAVOR WOULD I LIKE?! Do you know what this means?!?โ
I jumped out of the window and hugged the giant glass menu, then did a victory dance.
Ok, no I didnโt. I ordered roasted red pepper and went on my merry way, even though I was smiling like a creeper when I paid for my order.
They were everything I dreamed of. And since that dayโฆ Iโve had them a lot. Like, an embarrassing amount.
After Googling the ingredients online, I decided to try and make a slightly healthier version.
One major change: I donโt own a sous vide machine, and donโt really have a desire to purchase one. #notarealchef
Instead, I used egg poaching cups in boiling water, and they cooked beautifully.
(The cups are here on Amazon)
They were SO easy to make, and while they definitely wonโt totally replace my Drive-Thru habit (oops), theyโre an awesome substitute.
Hereโs the recipe if youโd like to give it a try!!
Homemade sous vide egg bites without the sous vide machine
A healthier version of the popular Starbucks protein-packed snack
- Prep Time: 10
- Total Time: 10 minutes
- Yield: 6 1x
Ingredients
- 9 tablespoons egg whites (from the carton; you could also use 3โ4 large fresh egg whites)
- 2 eggs
- 1 tablespoon brown rice flour
- 2 oz feta cheese
- 1 tablespoon almond milk
- 1/2 scallion, diced
- 2/3 roasted red bell pepper, chopped
- Salt and pepper
Instructions
- Start 1-2 inches of water to boil on the stovetop in a large pot.
- In a large bowl, whisk the eggs and egg whites together. Stir in the remaining ingredients, and season well with salt and pepper.
- Distribute the poaching cups into the water, and then carefully add your egg mixture into the cups. (I used an ice cream scoop to distribute the egg mixture.)
- Cover the pot, and poach for 8-10 minutes, until the middle is set.
- Remove the poaching cups and cool for 1 minute before gently removing each one with a spoon.
Notes
- Feel free to use any cheese you love, and add in fresh herbs!
- Store in the freezer or fridge to quickly reheat and eat.

- Serving Size: 3

Whatโs your favorite breakfast ever? Whatโs something that you get to-go on a regular basis?
I definitely miss my Tender Greens habit in San Diego.
Have an amazing morning!

These look delicious! Itโs always nice to have a healthy substitute for a drive-thru item ๐

please let me know if you give it a try!
I have been fixing egg cups in my cupcake tin. Just ordered the egg poaching cups. ๐
cute! i think youโll love these things. they made it so easy and the texture was awesome
Yum, those look great. Is your recipe for 4 โbitesโ? I have a 6-dish poaching pan, I think Iโll gross it up and keep the yolks. I canโt bring myself to throw them out. I still believe theyโre good for me. My diet is too low-fat as it is.
I bet you could add some cottage cheese and cheddar and theyโd be like your Nanaโs egg dish.
the recipe made 6 bites. ๐ if i use carton whites, i have no prob with adding whites for extra protein but otherwise iโll use the whole egg
youโre totally right. i think that needs to happen next.
I have to be honest, I didnโt know what sous vide was. Hahahah! And Iโve also never seen these at Starbucks. But I like everything about eggs, so Iโm intrigued! Nice job recreating! ๐
youโre not missing out lol. i guess you can use it to make sure flavorful meats and veggies, but iโm good with kitchen appliances for a while. ๐
you would love these things!
I am all about overnight oats for breakfast, but would totally make these for easy lunches/for the baby. Do you have a preferred brand of egg whites from the carton?
P has been going crazy for them. iโve been using the pete and gerryโs brand and really like them
Who woulda thought youโd have to go to Valdosta to find something you couldnโt find in SD?! ๐
right?! hilarious.
I am ADDICTED to the bacon gouda sandwich from Starbucks, but itโs stupid expensive and TINY so I started making my own. However that bad-boy packs some serious calories so itโs more of a treat than an every day thing. These are a great idea for an easy and healthy breakfast that I could prep ahead and freeze to grab on the go, as you mentioned in your recipe. Thank you!
thatโs so cute- thatโs livโs favorite too ๐
What an awesome idea! I will have to order some of those cups asap, I see this happening for breakfast/snack A LOT in the near future.
please let me know if you give it a try!
We are definitely not real chefs either, but bought an sous vide after having the most amazing steaks ever! We cook steaks and veggie stuffed chicken in it and then toss them on the grill for a minute. The meat is so tender and juicy every time! Itโs a guaranteed way to trick your friends into thinking youโre a gourmet chef with little effort!
I am excited to try these! I made my own version for similar reasons haha but it did not turn out well. Havenโt had any problems finding them in Alaska, though! So funny that the least likely places are well stocked.
Iโm always looking for a good protein packed snack that I can make at home! Yum! Also, your dishes are so elegant looking!
I think the fact that you poached anything makes you a real chefโฆ Iโm too scared! ha ha
The Starbucks in Bankers Hill at 5th & Laurel as youโre about to go over the bridge into Balboa Park almost always has them, not that youโre right around the corner or anything anymore ๐ Glad you came up with your own version!
Im curiousโฆwhatโs your typical latte at Starbucks? I typically just order coffee with a bit of cream and sugar free vanilla. Only because of calories and sugar though.
tall almond milk latte with one pump of vanilla ๐
Sounds yum! Iโll have to try this version. Iโve made the muffin tin ones but these look so fluffy!

I lurve the Starbucks egg bites, so I am eager to try these! Iโve been trying, and failing, to keep to a keto diet, so hopefully this will inspire me. I really enjoy cooking and eating and donโt like giving up on taste.
How do you reheat them?
i put them on a glass plate and microwave
Oh, donโt play with my emotions! The Starbucks egg white egg bites are my obsession! Is the taste and texture similar?
itโs THE SAME ๐
Yay!
Thank you!
So excited to try these!! Iโve gone through a dozen recipes looking for one that had a dairy free option and didnโt require buying a fancy sous vide machine. Canโt wait to try these!!
please let me know what you think!
Iโve tried making them twice. First time I didnโt cook them long enough. Just tried again and Iโm getting closer. They have a nice taste and the texture is close, but Iโm not sure what Iโm doing wrong. They still lack that velvety smooth texture that the Starbucks ones have. I followed your recipe exactly. Any ideas?
Thank you! ๐
I would like to make 24 of these and take to a brunch party. Do you know if I could make them in cupcake tins with cupcake paper cups, or would that change the end result? Thanks for the recipe!
yes you could probably bake them like that, but they might get soggy in the paper. i would make them in advance, freeze, then reheat and put on a serving tray ๐
Oh! The tricks of the trade! Great tip! Thanks Sista!
Curious if I could try these without the cheese? I donโt want to ruin the flavor but the cheese is a no no in my eating regiment. Or could you suggest any other option? I am so anxious to try this recipe, no matter what! Thank you for your sharing my favorite egg bites as a copy cat recipe!!
is there a dairy free cheese that works for you? like daiya crumbles?
I love these! ๐ I am addicted to Starbucks egg bites and this is a perfect way to make a healthier and less expensive substitute. Thank you!
Can you give me a little more detailed instructions on how to poach the eggs, for the cooking challenged? Do you leave the water boiling? Turn it down to simmer? Iโve never poached eggs before! Tried this recipe and 2/3 of them spilled into the water and made a mess, Iโm sure I was doing something wrong
es! just make sure you donโt fill the cups completely and that the water is at a slow boil (more like a simmer than bubbling like crazy)
Hi! I added the tablespoon of flour and it clumped into tiny flour balls. Do you gradually add it or how can I prevent this from happening? TIA!
did you whisk it in??
I am highly addicted to the Starbucks version so I was excited to give these a whirl. They turned out great! I used my poaching pan and they did take a bit longer to cook in the middle. I might try in the oven in muffin tins next time to get that crispy texture like Starbucks but I wouldnโt change the recipe- I would also chop the red peppers more finely next time. Thanks so much these were fantastic!
I just recently discovered the Starbucks Sous vide bite addiction (after a friend was talking about making them in her instapot so I had to find out what she was raving about)โฆ.
And then I found your recipe โฆ. used my silicone cupcake liners โฆ. bought a 6 pack of egg whites cartons at Costco โฆ.and now I can stop buying these at Starbucks . THANK YOU!
yay, iโm so happy to hear you liked them!! ๐ the addiction is real.. and expensive haha.. so itโs amazing to make them at home
Mine all bubbles over:( What did I do wrong?
thatโs so strange! what type of egg whites did you use? did you skip any ingredients?
I think maybe I filled them too much! Flavor was delicious!
iโm sure thereโs a way to do it!
Do you have to grease the cups before putting in the eggs? Sorry, Iโve never poached eggs before.
i donโt think i did with the silicone cups โ they slid right out
If these are egg WHITE sous bide why would I use two whole eggs?
you can absolutely just use whites!
I thought, there has to be an easier way! I headed over to amazon, quickly found this cute egg bites silicone pan and realized itโs perfect for my homemade egg bites.
Could you use regular muffin silicone cups instead of the poaching cups?
yes, i think so!
I excited to try out this recipe!
I have some silicone muffin cups, but no egg poaching cupsโฆ I might try using those.
Cam you tell me what is the purpose of the rice flour?
Can you recommend any substitutions for this? (This is not something thatโs in my pantry and donโt feel like itโs something I want to buy specifically for this recipe).
Thanks!
you could absolutely use all-purpose instead. i just included it so they would be gluten-free ๐ please let me know if you give them a try!
