WIAW + a full day, from start to finish
Sharing a full day of eats.
Hi friends! Howโs the week treating you?? I hope everyone is hanging in there, especially since so many schools released their plans over the past week. I have no clue what weโre going to do – we have until next Friday to figure it out – but if youโre spending the week making pro/con lists and frantically pacing around, I feel ya.
Despite the major decisions weโre facing, itโs otherwise been a good week. The kiddos are still living their best summer life and Iโm finding more of a groove with juggling everything. (<โ I say that this week but it seems like the weeks alternate up and down.) We’ve been focused on making some changes around the house (we bought more paint for bathroom cabinets so here we go) and planning some things in the distant future to look forward to.
For todayโs post, I thought Iโd do a WIAW post and share a full day of eats. Iโm always looking for new ideas, especially during the โRona times when weโve been cooking at home a lot more often. I love simple, throw-together meals so if you have any new ones youโre loving, please send them my way!
6:30am: My alarm goes off. Iโve been trying to wake up earlier since I realized that weโre in this for the long haul and Iโve been sleeping until around 8am for months now. I donโt like the fact that I have to go to bed earlier (I love the quiet at night!!), but I feel like I accomplish more during the day, especially when I can catch a morning workout.
I chug a large glass of water, eat a couple squares of dark chocolate (I love a little sweet bite in the morning to wake me up) and make the girls breakfast. Liv has sourdough pancakes with berries and P has been into savory foods for breakfast lately (like pizza, turkey sandwich, or leftovers from the night before). She requests a grilled cheese with berries.
7:30am: The girls eat breakfast and watch a show while I head upstairs for a leg workout. Itโs a quick circuit with goblet squats, single-leg squats. walking lunges, jump squats, lateral lunges, and clamshells.
8:15am: I take a quick shower (just bun my hair so I donโt have to wash it), get dressed, and make some decaf collagen coffee with almond milk and monk fruit
The girls get dressed and make their beds while I make our bed, run a load of laundry, feed all of the animals, and clean the kitchen.
9:00am: My own breakfast: oatmeal with chia seeds, blueberries, raspberries, cinnamon, Nuttzo and a little maple syrup

9:30-10:30am: P does some art at the table with us while Liv and I work on her summer homework packet from school. (Yes. Summer homework packet.) When Liv finishes up her assignments for the day, I make them a quick snack plate (trail mix, cheese sticks, and sliced apples) let them have a little screen time while I do another 30-45 minute work blitz. I work on pure content creation: brainstorming post ideas and writing as much as possible.
12:30pm: lunch together. The girls have turkey and cheese sandwiches with hummus, carrots, and fruit, while I have leftovers from the night before: coconut chicken curry.
(Itโs cauliflower, sweet potato, zucchini, chicken, onion, garlic, ginger, crushed tomatoes, a splash of coconut aminos, sesame oil, and red curry paste with chicken broth. After it cooked in the Instant Pot for 20 minutes, I stirred in a can of coconut milk and topped each bowl with lime juice and chopped cilantro.)
I also eat a giant handful of the best chips ever while I wait for the curry to heat up.
The girls do Perler beads at the table – theyโre so into these right now!- and in between ironing the beads together for them, I prep some dinner since I know weโll be at the pool until dinnertime. Weโre having miso-glazed cod, so I make a quick marinade for the fish with chickpea miso, sesame oil, brown sugar, and chicken broth.
Half goes on the fish and into the fridge to marinate, and I save the other half in a jar to pour on the fish in the last few minutes of roasting.ย
I also boil the potatoes so that they can roast with the fish and be done at the same time!
We head upstairs and I play music for the girls to have a dance party while I clean out Pโs closet. I finally pack away the winter stuff and store the too-small clothes so we can give them to Everly when sheโs ready.
(P always has a crazy amount of clothes since she gets all of Livโs hand-me-downs and I inevitably add to the collectionโฆ)
3:00pm: the Pilot is home from work early, so he take the kiddos to the pool while I catch up on some work. I have a Beautycounter mentor call, write a blog post, upload a video to YouTube to publish later, and make a couple of graphics.
5:00pm: I meet up with the crew at the pool! This has been such a lifesaver for us this summer. Itโs a thousand degrees here in Tucson so Iโm thankful for an outdoor activity that enables the kiddos to get out their energy, interact with a couple of close friends, and be in the fresh air.
Also, floating on an inflatable donut with a White Claw isnโt a bad place to be. ๐
6:30pm: We head home and P falls asleep in the carโฆ the dreaded 6pm naptime. She snoozes on the couch while the Pilot, Liv and I eat dinner and play a few intense games of Old Maid.
Miso-glazed cod with garlic roasted potatoes and sautรฉed snap peas:
P wakes up to have a bit of dinner around 7:30 and somehow still manages to fall asleep at bedtime. Sheโs zonked from such a full day! While the Pilot does the bedtime routine, I clean the kitchen and fold the laundry.
9pm: The girls are both crashed. I have a Goodpop orange creamsicle while watching Hamiltonย for the 18th time and finishing up loose ends: scheduling social media posts, uploading my blog post for the following day, and answering comments.
10:15: Head upstairs to read (finishing up City of Girls) until around 10:30 or when I canโt keep my eyes open any longer.
10:45pm: Lights out and ready to do it all over again.
What I liked about this day of eats:ย I got a good amount of micronutrients and fresh produce and felt energized all day. There weren’t any points where I felt hangry.
What I didn’t like about this day of eats: So.much.cooking. lol. At least everything was simple and quick to put together. ๐

How do you do your snap peas? I never know how to coook that veg.
I love Pinch of Yum for throw together dishes with deep flavor. Plus there is always Taco Tuesday to fall back on.
i just sautรฉed them in a little avocado oil with salt and pepper for a few minutes – they cook fast and you don’t want them to turn brown. just a little heat and seasoning!
would you be able to post specific recipes for the miso glaze and the curry? both look delicious!
yes! i kind of wing everything but here’s the basic rundown:
curry:
in the instant pot on saute function, saute 2 chopped chicken breasts with 1/2 sweet onion, 1 large zucchini, 2 carrots, 1/2 bag cauliflower, and one sweet potato (peeled and diced) in olive oil and salt and pepper for about 6 minutes. Add 3 cloves minced garlic and one teaspoon minced ginger and cook until fragrant. Add a splash of coconut aminos or soy sauce, a splash of rice vinegar, and a heaping tablespoon of curry paste. Stir in enough broth to cover the chicken and veggies (i think it was around 1 1/2 cups)
cook on soup function for 20 minutes, quick release
stir in a can of coconut milk and serve with lime juice and cilantro
for the cod, i just mixed equal parts miso and brown sugar in a mason jar (prob 1/3 cup each?). about 2 teaspoons of sesame oil and enough broth to thin it out.
i patted the cod dry and seasoned with salt and pepper, then added 1/2 the marinade and kept in the fridge for a few hours.
to cook, i broiled the fish on a cookie sheet (lined with foil) for 6 minutes, then cooked at 400 for another 6 min or so until the temp reached 145. i added the rest of the marinade when there was 3 minutes or so of cook time left.

That cod looks delicious! We’ve been having sockeye salmon most weeks since it is peak season <3 so good. Most weekends we grill up a ton of meat (chicken thighs, some steak, and chicken sausage) that we use throughout the week. I'll make a stirfry, curry (with grilled chicken, drool), put some of the sausages on a pizza, wraps, just about anything! It makes it so much easier to not have to cook the meat, just toss it in at the end and let it soak up the flavors of whatever we are eating.

How do you handle sweaty hair on days you don’t wash it? (Or do you just leave it up all day?)
i only wash my hair like 2x a week ๐ after a workout, i just let it air dry and it looks ok! my hair doesn’t get super sweaty though

What is your school district doing this fall? Our schools haven’t announced their plans yet.
p’s school is doing remote or in person and liv’s school is starting with remote with the goal of a hybrid model or fully in-person when the gov gives the “ok”
i pulled p out of preschool for the fall on friday :/ i was so conflicted about it (she misses her friends so much) but there’s no way she’ll let me drop her off on the curb and wear a mask all day. and i don’t really want her to in the 100+ degree heat anyway. hard decisions all around
when are you going to hear from your district?
They’ve made some decisions (schools won’t start until after Labor Day instead of mid-August and only kids above 4th grade must wear masks) but I think it’s still evolving as they watch what happens to the rates of positives cases reported. Tough decisions for everyone! I’m worried about my daughter who will be student teaching 4th graders this fall :/
