Pumpkin Chocolate Chip Muffins
Hi friends! Happy Monday! How’s your morning going? I’ve got a yummy and healthy fall recipe for you below–pumpkin chocolate chip muffins! But first, I’m excited to share about last night.
Sasha and I had a crazyawesome Soli Beat event last night at lululemon La Encantada. We’re friends with their amazing staff, and they reached out to us to see if we wanted to host a dance party in the courtyard.
Of course we wanted to 😉
We hired three amazing drummers to play for the event, and got our Soli Beat on along with some fabulous ladies (and kiddos! They were so fun to watch). The courtyard at La Encantada is gorgeous, green and spacious– we had a lot of room to move and dance. It was fun to look above to the second story and see shoppers peeking over to see what the heck was going on, especially since the drums were so loud and energizing. We did a version of the dances from the DVD, with little changes here and there to change things up. We tend to go a little crazy when we hear the music.

My nana and mom came to watch, and the best part of all was that the Pilot brought Livi to join in the dance party. She loved it, and everyone loved watching her 😉
My heart can’t even take it.
It was pretty much the best start possible to the week.
Pumpkin Chocolate Chip Muffins
A lovely start to the morning? Pumpkin chocolate chip muffins.
Livi helped me make a batch of these this weekend, and we’ll finish them off this morning. I love how light they are -the eggs give them a fluffy texture- and the filling factor from the pumpkin.
Oh, and a little chocolate never hurt anyone, either 😉
They’re quick to put together, and while they take some time to bake, it would be smart to make a double batch and freeze. Especially if they disappear as quickly as they have in our house! Hope you enjoy them.
Pumpkin chocolate chip muffins
A grain-free treat, with a soft fluffy texture. Serve these for holiday brunch, or make a double batch to freeze for the week
- Prep Time: 15
- Total Time: 15 minutes
- Yield: 12 1x
Ingredients
- 1/3 cup pumpkin puree
- 2 tablespoons coconut oil
- 3–4 tablespoons of honey, depending on how sweet you’d like them
- 3 eggs
- 1 teaspoon vanilla
- 1/2 cup almond meal
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4–1/2 cup mini chocolate chips
- 1 teaspoon pumpkin pie spice
- pinch of sea salt
Instructions
- Preheat the oven to 350 and place liners in a standard muffin pan.
- In a large bowl, combine the pumpkin, coconut oil, honey, eggs and vanilla. Set aside.
- In a separate bowl, combine the remaining ingredients.
- Add the dry ingredients to the wet, and stir to combine.
- Gently scoop the batter into the prepared muffin pan.
- Bake 30-35 minutes, until golden brown and fluffy.

I absolutely love pumpkin chocolate chip muffins. I find that using the trader joes pumpkin bread mix can save a lot of time- just throw in some chocolate chips and you’re done. I could literally eat a whole batch in a day I think! So good!

I will always and forever love your breakfast cookies! I make them in batches on the weekend when I need a quick go-to breakfast that will give me enough protein to make me satisfied all day. I still make my cinnamon raisin variety (no banana) and top it with lemon stevia-sweetened Greek yogurt for a really yummy treat.
The dance party looks so fun! Any plans to do a dance party tour? We could use some of that spice and music up here in Vancouver! 🙂

I have never baked with almond flour, but I’d love to. I hear you can get it at a good price at Trader Joe’s. Can’t wait to try these 🙂

this morning I had MaltoMeal with coconut milk, pumpkin purree, cranberries/cherries, chia seeds and honey. very filling and very yummy.

I stumbled onto your blog a few years ago and one of the things that made me keep coming back is that you made fitness and healthy living feel attainable to EVERY person, not just a fitness “ideal” or a woman whose thighs don’t touch. It’s for this reason that I feel so conflicted about your support for Lululemon, in light of the recent (and seemingly ongoing) controversy. You have always been a person that seems not to be afraid to put your foot down when you believe in something (avoiding Chipotle and discontinuing your support for Larabar), so it’s particularly disappointing that not only have you not mentioned the issues with Lululemon, but you also seem to be moving ahead like it’s no big deal. It’s unfortunate.
I called the CEO out on twitter for being a d-bag the day the story broke. I was livid, and felt guilty wearing the shirt and hoodie I’d bought the day before. I havent shopped at lulu since, but am friends with many amazing people who work for the company and who are also disgusted by the ceo’s remarks. This event was planned long ago, so I followed through with it since it was local (not corporately) sponsored, we were not paid, and it was free for anyone who’d like to attend. I will still support my friends at lulu and the free events they work hard to plan. However, ill be buying my athletic apparel in other stores unless something dramatically changes.

well, now i’m wondering what in the heck I missed about chipotle and larabar??? I would also be clueless about lululemon, but I just looked it up.
Correct me if I’m wrong, Gina…but I think I saw a tweet that she was excited that she could start eating at Chipotle again as the company made a commitment to remove their GMO ingredients in 2014. Also, with Larabar she said she wasn’t purchasing due to General Mills funding to keep GMO ingredients a secret from consumers. That’s all from memory…so I might be off a bit!

Love it! I’m going to school and taking an aerobic dance class and choreographing a dance and teaching it to the class earns extra credit so a friend and I choreographed one and taught it to the class today. While we were dancing I thought of you and Sasha…except we looked about 10 times more silly and do not have the skills you do! 🙂

I think we had the max number of replies on the earlier thread so I’m starting a new one. 🙂 I actually wandered over to the larabars in Sprouts today and on all the boxes they had put stickers that said “does not contain GMOs”. Hmm.
They may not have gmos in larabars, but General Mills uses them and funds anti gmo labeling campaigns

In the oven now! Thanks for the recipe. I had bought almond meal a while ago but wasn’t sure what to do with it. A lot of grain free recipes call for multiple flours which I don’t have on hand or want to go out and buy. And anything with pumpkin is a ok in my book– my beloved Libby’s is on sale this week at Fred Meyer!!!!

I made these today, twice. The first time was totally my fault and they failed miserably. The second time they were made according to directions and while they taste delicious they look no where near as good as yours!! I don’t know what I did wrong but I will try again they taste incredible!
