Pineapple veggie chicken skewers with spicy peanut butter sauce

I’ve got the recipe for you below! They perfect for hot summer nights!
Iโm fully convinced that plants flourish out here. My succulent garden is growing like crazy, Iโve managed to keep all of our herbs โalive” for the first full summer (ok, so the cilantro is clinging the walls of death right now). Also the first time ever, we have a jalapeรฑo! He has a salsa destiny ahead of him.
Another thing: the kombucha! A few people have asked if I was still brewing kombucha, and itโs still going strong after the interesting bottle of scoby the farmerโs market kombucha lady gave me. My kombuchas batches did fairly well in Tucson, but I think Iโve really gotten the hang of it. Itโs by far the best โbuch weโve brewed at home.

Iโve had a lot of fun playing with flavor variations and have learned that dried ginger makes it even more fizzy. Please let me know if you have any awesome flavoring ideas!
Last night, I had some of the home-brew with an awesome and easy summer dinner: pineapple chicken and veggie kabobs with a spicy peanut butter sauce.
Pineapple Chicken and Veggie Kabobs with Spicy Peanut Butter Sauce
(Itโs kind of like the grilled version of this beloved salad.)
Hereโs the how-to if youโd like to give it a try!
First, we put 5 skewers in a roasting dish filled with water to soak. This helps to keep them from catching fire on the grillโฆ always a good thing. ๐ I cut up a pack of organic chicken breasts into cubes, and placed in a sealed container in the fridge to marinate with 1/4 cup Tamari, 2 cloves minced garlic, sea salt, pepper and the juice of 1/2 orange.
While the chicken was marinating, I made the rest of the skewer fillers: chopped fresh pineapple, bell peppers (2: 1 orange and 1 yellow), one large zucchini (sliced) and an onion.
Next, the assembly:
and the Pilot grilled them while we all played basketball outside. We played a little game of HORSE, which turned into HORACIO because I was not on my game last night haha.
The sauce was made with 1/4 cup peanut butter, a splash of tamari, a drizzle of honey, cayenne, garlic powder, salt and pepper.
We had some skewer filling left over, so Iโm excited to enjoy it on salads later this week.
Whatโs your favorite grilled meal? Iโm a huge fan of grilled pizza, but I think my all-time fave is quiche on the grill. Black thumb or green thumb? ๐

Mmmm this looks AMAZING! I would love to try these. I don’t have a grill, so I would have to figure out how to do these on the stove, or at least how to mimic the flavour combinations.
you could do them in a skillet like a stir fry! it would still be wonderful ๐

My thumb couldn’t be any blacker. I can’t keep any plant, indoors or out, alive. My peace lilly is still alive but hasn’t flowered in ages. ๐ Those kabobs look YUM!
The kabobs look fantastic! I’d love to try them. My husband is allergic to peanut butter, though, so I’d have to alter the sauce…any thoughts on a different sauce I could make that would go well with the kabobs?
My herb garden has been doing pretty well this year, too! Sadly most of the flowers I planted have been chomped by bunnies, but at least the herbs are still thriving. ๐

it’s really just like an oven- we cook it in the pan on the grill. for some reason it tastes better though ๐

Favourite thing to grill is veggies of any kind, especially corn. Total black thumb of doom….we have one plant and I just noticed this morning that it’s looking pretty good, left the room and came back to find half of it had been eaten by the cat…she doesn’t help

I just killed a bunch of flowers on my balcony – I don’t even know how they were called. Plus, I was amazed how long they lasted! I stay with the orchids – they are blooming like crazy, despite my black thumb.
