Man n’ Cheese

The title for this post isn’t a typo… I got it from an earlier comment (which I think was a typo?) when a reader said she was excited for man n’ cheese. I thought it was funny, so I’m gonna use it
This afternoon was spent making vegan chocolate chip cookies for the fam and my pregnant friend who saw them on the blog and requested a batch, and napping. Ever since inventory Monday night, I’ve been exhausted. I’m a grandma… You mess with my 8 hours and my life turns upside down.
And then, there was mac n’ cheese…
Mac n’ cheese is one of those things I haven’t really enjoyed since I nixed the cow’s dairy (for nutritional/digestion/skin reasons). Sometimes pasta just feels like a waste to me… I feel like I could eat a boat of it and not be full, and it can be gummy and kind of bland. I LOVE pasta with goat gouda and shrimp, but haven’t had a cheddery mac n’ cheese in forever.

This is SUPER easy to make and the perfect portion for hangry Fitnessista.
First, measure out your pasta and then boil in salted water until al dente.
I used brown rice penne and always weigh my pasta to get a serving-ish… If I eye-ball it, I’m totally off.
Drain the pasta and in the same bowl you boiled it in, bring the heat to medium low and add the following:
-1/3 C almond milk
-1/2 t mustard powder
-1/2 t nutritional yeast
-sea salt and pepper
-cayenne (optional)
-Garlic Gold (or garlic powder)
-1/4 C Daiya
Whisk for about 2 minutes until you have a creamy, cheesy sauce:
Add the noodles back to the pot, toss well (taste and adjust seasonings) and serve:
I’m enjoying mine over a bed of organic broccoli… and moaning in foodgasmic ecstasy
