Man n’ Cheese
Hey guys! Howโs your day treating ya? Thank you so much for the lovely compliments on the pics <3
The title for this post isnโt a typoโฆ I got it from an earlier comment (which I think was a typo?) when a reader said she was excited for man nโ cheese. I thought it was funny, so Iโm gonna use it
This afternoon was spent making vegan chocolate chip cookies for the fam and my pregnant friend who saw them on the blog and requested a batch, and napping. Ever since inventory Monday night, Iโve been exhausted. Iโm a grandmaโฆ You mess with my 8 hours and my life turns upside down.
And then, there was mac nโ cheeseโฆ
Mac nโ cheese is one of those things I havenโt really enjoyed since I nixed the cowโs dairy (for nutritional/digestion/skin reasons). Sometimes pasta just feels like a waste to meโฆ I feel like I could eat a boat of it and not be full, and it can be gummy and kind of bland. I LOVE pasta with goat gouda and shrimp, but havenโt had a cheddery mac nโ cheese in forever.
Thank you, Daiya for changing that
This is SUPER easy to make and the perfect portion for hangry Fitnessista.
First, measure out your pasta and then boil in salted water until al dente.
I used brown rice penne and always weigh my pasta to get a serving-ishโฆ If I eye-ball it, Iโm totally off.
Drain the pasta and in the same bowl you boiled it in, bring the heat to medium low and add the following:
-1/3 C almond milk
-1/2 t mustard powder
-1/2 t nutritional yeast
-sea salt and pepper
-cayenne (optional)
-Garlic Gold (or garlic powder)
-1/4 C Daiya
Whisk for about 2 minutes until you have a creamy, cheesy sauce:
Add the noodles back to the pot, toss well (taste and adjust seasonings) and serve:
Iโm enjoying mine over a bed of organic broccoliโฆ and moaning in foodgasmic ecstasy
Let me know if any of ya try it!
Have a great night and Iโll see ya on Fashion Friday <3
xoxo,
Gina
Something to talk about: Are you a pasta fan? What pasta dish do you love?
Hey Gina!
This dish looks so good! I’m going to make it for the kids lunch tomorrow. I’m so happy you didn’t use soy! Your page looks great. I totally just stumbled across it today. You look absolutey radiant and I can’t wait to look around more.
Thanks for being an inspiration!
