Man n’ Cheese

The title for this post isnโ€™t a typoโ€ฆ I got it from an earlier comment (which I think was a typo?) when a reader said she was excited for man nโ€™ cheese. I thought it was funny, so Iโ€™m gonna use it Winking smile

This afternoon was spent making vegan chocolate chip cookies for the fam and my pregnant friend who saw them on the blog and requested a batch, and napping. Ever since inventory Monday night, Iโ€™ve been exhausted. Iโ€™m a grandmaโ€ฆ You mess with my 8 hours and my life turns upside down.

And then, there was mac nโ€™ cheeseโ€ฆ

Mac nโ€™ cheese is one of those things I havenโ€™t really enjoyed since I nixed the cowโ€™s dairy (for nutritional/digestion/skin reasons). Sometimes pasta just feels like a waste to meโ€ฆ I feel like I could eat a boat of it and not be full, and it can be gummy and kind of bland. I LOVE pasta with goat gouda and shrimp, but havenโ€™t had a cheddery mac nโ€™ cheese in forever.

ingredients

This is SUPER easy to make and the perfect portion for hangry Fitnessista.

First, measure out your pasta and then boil in salted water until al dente.

I used brown rice penne and always weigh my pasta to get a serving-ishโ€ฆ If I eye-ball it, Iโ€™m totally off.

Drain the pasta and in the same bowl you boiled it in, bring the heat to medium low and add the following:

-1/3 C almond milk

-1/2 t mustard powder

-1/2 t nutritional yeast

-sea salt and pepper

-cayenne (optional)

-Garlic Gold (or garlic powder)

-1/4 C Daiya

Whisk for about 2 minutes until you have a creamy, cheesy sauce:

Add the noodles back to the pot, toss well (taste and adjust seasonings) and serve:

    It’s dangerous to have pasta around me because I’m kind of a pasta monster. My favorites are anything spicy, like pasta with arrabiata pepper sauce and broccoli ๐Ÿ™‚

    My favorite pasta dish is ravioli — I just think it is such a fun food to eat.

    And I’m totally a grandma too, I need my sleep or I am cranky and dragging alllll day.

    Pasta IS my weakness. I can eat it until I can’t eat anymore. its dangerous. I like the idea of using brown rice noodles. I’m going to have to try this ๐Ÿ™‚

    How funny! I ate the Amys Mac n cheeze meal made with daiya. And had it overtop steamed broc! I usually prefer making things myself, so I’ll definitely try this recipe!

    Looks awesome! I was NOT a fan of mac n’ cheese when I was younger, but I grew to love it as an adult when I discovered versions of it with smoked gouda or gruyere!

    I also love skipping the pasta all together and making a goat-cheesy “pasta” using zucchini noodles! So good. ๐Ÿ˜€

    I’m not a huge pasta fan, but I do love homemade spaghetti and meatballs. Probably because it brings back such good memories of childhood!

    i’ve never tried daiya but i’m VERY VERY curious after seeing it on all of the food blogs… does it taste like cheese or does it just have the texture of cheese? i may suck it up and try it!

    Oh you make that noochey mac n cheese look so good! Of all the gluten containing foods, pasta was never a big one for me. Don’t miss it. Was just meh about it anyway…but the other word that looks like pasta, PASTRY, now that’s a gluten food i do miss ๐Ÿ™‚ I need to make your mac n cheeze over rice or something that’s naturally GF some time!

    I am a pasta fan, but not a pasta lover.
    I dig anything with a tomato sauce and tons of veg…
    Though I think my fav is pasta with a roasted squash puree as the sauce…so good!

    I definetly love pasta! One of my fav’s is pasta with tuna, artichokes and tomato. Oh you can also make a less healthy one by mixing pesto,smoked salmon, tuna, zuchinni and some crรจme fraiche. It’s absolutely delicious!

    I love this simple spagetti sauce, that i make with double cream, garlic, basil and tiny cherry tomatos. I’ve made it a million times, and it never gets boring on my taste buds ๐Ÿ™‚
    I guess it can be easily veganized with some soy cream instead of double cream …

    Hi Gina,

    Loved your pics in the last post – you are bella!

    I’d love to see some raw recipe creations of desserts but only using stevia as a sweetener. I make creations like this all the time for myself and for my clients (I’m a detox/raw foods/health and life coach) who have sugar and yeast challenges, but I love getting new inspiration.

    If you feel inclined to try out some recipes on the sweeter side with stevia I would totally love that!

    I’m not so much of a pasta person as I am a bread person. Warm, doughy bread doesn’t stand a chance against me lol But when I am in the mood for pasta nothing beats angel hair with olive oil, garlic, tomatoes and lots of veggies! ๐Ÿ™‚

    I’m not really a big pasta person. I don’t often make it for myself, but I do like eating it at authentic Italian restaurants. My favourite is pesto pasta with arugula, pine nuts and goat cheese! ๐Ÿ˜€

    Looks delish. It has been a hard sad road for this girl giving up dairy (we had to break up; we don’t get along anymore ๐Ÿ™ . I have been a vegetarian for almost 20 years but this is by far the hardest part. Daiya has made me happy again! Thanks for sharing.     I LOVE pasta, and for the same reason, I don’t have it too often- I can eat TONS of it! I love a good cheese sauce, but I also love pesto!

    I had mac and cheese yesterday! I made Rachael Ray’s Harvest Moon Macaroni, and it was pretty darn good! I also ate it with organic broccoli. ๐Ÿ™‚

    I’m the same way with sleep. And pasta. Since going gluten free, I haven’t really enjoyed any sort of pasta (the brown rice kind I tried hurt my stomach). BUT my mom just sent me a NEW type of gluten free pasta recommended by a Whole Foods staff member on the Gluten Free tour! I’m super excited to try it, and this might be a great way to do so!

    I wrote a post on my relationship with pasta last week –it was a fear food during my E.D. but i’m finally coming to terms with it! I love angel hair with a simple chunky tomato sauce and some basil:) The movie EatPrayLove gets me craving pasta like crazzyyy

    Oh but of course I love man n’ cheese AND mac n’ cheese. But I don’t make pasta very often, for the same reasons you mentioned. I’m certainly not above a nice box of Annie’s, though. I stir in frozen veggies towards the end of boiling and top with homemade vegan parm. Happy place. ๐Ÿ™‚

    I love homemade mac and cheese. Goat cheese makes it creamy, but it can get gritty if you’re a slow eater and your pasta cools a bit. This sounds great.

    I feel the same about pasta. BUT I have found that boy the hub and I lover whole wheat orzo (the only whole wheat pasta he will eat) with spinach pesto, sun dried tomatoes, and thinly cut spinach. The spinach adds a lot more volume and makes me feel like I am eating a large bowl of pasta. Yum.

    Want to know something embarrassing? Ready? I only like the blue box macaroni and cheese (and thus can’t remember the last time I had it). Some kind of nostalgia thing maybe? But sadly, it is the truth…
