Midnight roons

Hiiiii 😀 Happy Saturday! Hope you’re having a lovely morning <3

Last night, I decided to make it legit that we really live here.

mix (2)

{Thanks for the tips on fixing the yellow! Per your suggestions, I set a custom white balance and it worked like a charm}

Midnight macaroons are dehydrating away!

dehydrator2

But depending on how many *disappear* over the weekend, I may have quite a few left over….

roon (2)

I wonder what I’ll do with the extras… 😉

Today’s lunch + snacks are packed up and ready to go:

TBLT 😀

lunch

{Tempeh bacon, avocado, lettuce and tomato on brown rice bread}

tblt

Goat’s milk yogurt, a peach, wasabi seaweed snacks (can’t wait to try these)

snacks

Bfast was a smoothie + toast. Definitely feasting on carbs today because it’s going to be a longie at work!

I’m also being trained by this one guy again all day, so it should be a LaBlasty 😉

See ya later!

xoxo

Gina

Something to talk about: What exciting fitness event do you have going on this weekend? A race? New fitness class? I love hearing what you’re up to 🙂

  11. J3nn (Jenn's Menu and Lifestyle Blog) on August 6, 2011 at 11:21 am

Love the dedicated counter space for your dehydrator! I need to do that. hehe

    That TBLT looks amazing. Yum!

  12. Angela on August 6, 2011 at 11:25 am

Wow you have some great ideas for meals. I just had a Greek quinoa salad. I want to try the seaweed snacks soon. Im following your OpenSky account and noticed some fun stuff on there too.
Check out this site about creating fun lunches… http://bentozen.wordpress.com/ . Unbelievable…now if only I had time to try that. Im a new Mom so my workouts right now are mostly walking the neighborhood or the mall with some ab exercises to get my stomach fit again. He runs the show right now so its hard to get to a gym but I really do miss working out.
And yes I agree with Andrea… a lucky reader should would like some Midnight Macaroons!! Woohoo!

I agree, that TBLT looks fabulous! 🙂 I have yet to try tempeh bacon but I’m definitely inspired now! A giveaway of macaroons would be lovely! 😀

  15. Megan on August 6, 2011 at 12:01 pm

Where do you buy tempeh bacon? I’ve been searching for it but my trader joes doesn’t carry it 🙁

Your ‘roons rock my world! I made (and devoured) my first batch the other day 🙂
Also, I just wanted to tell you how inspiring your blog has been for me!! 🙂 I’m working towards becoming a nurse and personal trainer, and you always have such great ideas that totally motivate me to keep working hard! I’m going to the beach this week and have been absolutely dreaming about running on the boardwalk in the morning (while the fiance sleeps till noon, of course). Time to get that bikini on! 😀

  20. Niki on August 6, 2011 at 12:27 pm

OMG where did you find the seaweed snacks?! I need them! (I buy that brand often).

This weekend, nothing new on the fitness front! Might go running in the rain, which I haven’t done in ages but LOVE to do!

      have an amazing run!

  22. Rachel @ Eat, Learn, Discover! on August 6, 2011 at 12:32 pm

The ‘rooms look delicious! I went to Zumba this morning… The ultimate killer of negativity. It’s sort of ridiculous how much I’m loving it lately. Later I’m headed to the beach to chill, then a long bike ride through northern Indiana tomorrow!

  23. Brittany on August 6, 2011 at 12:42 pm

Lunch looks yummy! I don’t even like tomatoes, but I often add them to my meals just because it makes them look prettier and more appetizing. Kinda weird? haha.

The highlight of this weekend’s fitness agenda was the half marathon I ran this morning. Not my best performance, what with the 90% humidity and having taken 4 months off running due to injuries, but it was fun to race again. 🙂

  24. Bonnie on August 6, 2011 at 12:59 pm

Totally unrelated to this post, but I was wondering what your fave Lululemon gear is? I’m heading over there for the first time this weekend, and would like to know your thoughts 🙂 Thanks!

    • Fitnessista on August 7, 2011 at 12:41 am

cool racerback, power y tank, flow y bra, wunder under crops, groovy run shorts, knock out shorts 🙂

      • Bonnie on August 7, 2011 at 11:31 am

        Thanks, Gina! So excited 🙂

  25. liz on August 6, 2011 at 1:21 pm

I’d love to hear what you think of the wasabi snacks! Also– since you recently posted about inspiring people to start thinking about spring races, I’d love to hear your thoughts on adjusting (read:increasing) your fuel intake as training ramps up. My track workout this week was an epic fail, probably due to the fact that I hadn’t eaten enough or the right stuff that day. 11 miles this morning went MUCH better because I made sure to eat enough yesterday/last night, and I had a little bit before heading out into the heat early this a.m.

    • Fitnessista on August 7, 2011 at 12:41 am

you definitely need to increase your fuel along with your activity level- do you wear a heart rate monitor?
and the wasabi snacks were AWESOME. my new fave 🙂

  26. Kate on August 6, 2011 at 1:36 pm

I love your special place for your dehydrator! It makes it seem so legit!!

I completed my first half marathon today! I cannot believe I did it but I needed to get back to my car somehow!! haha Everyone was so supportive of all the participants! It was very emotional!!

  27. Amanda on August 6, 2011 at 2:02 pm

Yoga today, BodyPure (taking a friend for her first class!!) and yoga tomorrow, and lots of walking in between. Errands become an adventure when I park at one store and walk to another, especially when it’s like Frogger to cross busy streets. Success = six stores and only three parking lots. (4 of the 6 stores were food-related <3)

This morning was my favorite spin class…favorite because it’s instructed by one of the best…he plays awesome music and it’s more like a spin party with an awesome amount of energy and the hour is over before you know it! 🙂

Hi Gina! (I’ve gone from being a lurker to commenting 3 times in a week!)

This weekend on the fitness front I’m going to try running 4 miles without stopping for the first time since I did a half-marathon back in May 2010! I’m nervous (I stopped running for a while and I’m not a naturally strong runner anyway) but I’m hoping I can push through! I’m rewarding myself with 2 luxurious hours of yoga and Zumba on Tuesday, regardless 🙂

    • Fitnessista on August 7, 2011 at 12:39 am

yay for stepping out of lurkdom, and for being a workout rockstar- enjoy your yoga and zumba day on tuesday!

The custom white balance setting…girl I can totally see a decease in yellow in just one post..awesome tweak!

The dehyd running all night..ok so I have this paranoia about it getting too hot and something bad happening and can never fully fall asleep when I try that. I wish I could, but I can’t. I know, I’m weird! I wish I could sleep thru it because I hardly ever use it.

And I need to make macaroons in it..not just in the oven but in the dehyd. Yours always look AMAZING!

I miss my dehydrator badly! We just PCS’d from Guam to Japan last week. We spent all day Saturday taking the train to Yokohama and wandering around ChinaTown and Yokosuka. This morning I did a short run in Yokosuka and after showers and breakfast, we’re headed to Kawasaki to Costco and more walking.

  40. Chelsea @ One Healthy Munchkin on August 6, 2011 at 7:48 pm

I love TLT’s! I call my version the STAT – sprouts, tempeh, avocado, and tomato. It’s my favourite combo! 😀

I got quinoa and tempah today! I’m so excited! I also found So Delicious coconut milk yogurt. 🙂 Time to experiment!

I have to tell you, I always ate my sandwiches open face, just like you. The fillings are the best part! I used to make pb and j sandwiches with so much pb and j that you could not have closed the sandwich and lifted it to your mouth even if you tried. I would just drag the bread to the edge of the plate and munch from there. Gross to think of now, but your super stuffed open faced sandwiches reminded me of that!

    • Fitnessista on August 7, 2011 at 12:37 am

that’s so funny! i eat the toppings off mine first with a fork, then the bread 🙂

Just got back from climbing Mt. Whitney. It was incredible. Took 10 hours to ascend (averaging 1.1 mph on the way up) and 8 to descend. Will need to wait 10 years until I forget how brutal it was. Haha. Definitely more of a Half Dome fan, but glad I tackled Whitney!

  49. Dominique on August 7, 2011 at 11:38 am

The TBLT looks amazing. I’ve had renown once before and wasn’t crazy about the texture but maybe I should give it another chance. My fitness plans were to go to the gym despite it being the BF’s birthday weekend but celebrating got in the way. Hoping to go tonight, I need to lose some weight for a wedding at the end of the month.

I am making TLTAs for my family birthday picnic today. 🙂
